Imagine the most delicious strawberry ice cream made from just 4 basic ingredients: Greek yogurt, strawberries, sugar, and a squeeze of lemon. This recipe may be made from yogurt, but it is as creamy as ice cream (and better for you so you can eat as much as you want!)

- Blend strawberries and lemon juice together in a blender until smooth; refrigerate until cold, about 1 hour.

- Place strawberries, sugar, vanilla extract, and half-and-half in a blender; puree until smooth. Add yogurt (see Cook's Note) and pulse until combined.

- Roughly chop half the strawberries and whizz the rest in a food processor or with a stick blender to a purée.
- In a big bowl, stir the condensed milk into the puréed strawberries then gently stir in the yogurt until well mixed. Fold through the chopped strawberries.
- Scrape the mixture into a loaf tin or container, pop on the lid or wrap well in cling film and freeze overnight, until solid. Remove from the freezer about 10-15 mins before you want to serve the frozen yogurt. Can be frozen for up to 1 month.

- Place all the ingredients in the bowl of a food processor and puree. (A blender can also be used, but make the puree in two batches.)
- Correct the sweetness of the ice cream mixture and place it in an ice-cream maker. Follow the manufacturer's directions. (If you do not have an ice-cream maker, place the mixture in freezer trays, cover with foil and freeze in the refrigerator at its coldest setting. Stir every so often to prevent ice crystals from forming.)

Eat this half frozen and tell me you did not enjoy it!!!! Any soft fruit can be used for this dessert, but then the quantity of sugar may change. It has a lovely texture. Takes a little effort but worth it. Freezing will take around 9 hours in all and then 1 hour before serving for it to be soft and textured.

Steps:
- Heat the sugar, lemon rind and water in a heavy pan over low heat till the sugar dissolves Now increase the heat and bring to a boil.
- Boil for 2 mins then take off the stove and cool.
- Wash and clean the strawberries and puree them in the mixer.
- Strain the sugar syrup on top of this and blend some more.
- Put this mix in a bowl and combine the yogurt well into it.
- Put this is a plastic container and freeze for 2 hours.
- Blend again and freeze for 2-3 hours more.
- Then blend again.
- Now freeze till firm (around 4 hours) Leave it to soften for an hour in the refrigerator for an hour before you serve it.
- Spoon it into 4-6 bowls and garnish with the fanned strawberry slices (1 in each bowl) Do think of me when you enjoy this one.
