STRING BEANS WITH GARLIC
Steps:
- Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.

- Heat oil in a wok over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season with garlic salt, garlic powder, pepper, and minced onion. When beans are almost tender, mix in cocktail onions with liquid. Continue cooking 5 minutes, until heated through.

- Preheat oven to 350°. Cook spaghetti according to package directions for al dente; drain., In a large skillet, cook beef, onion and green pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Stir in tomatoes, tomato paste, seasonings and sugar., In a large bowl, whisk egg whites, melted butter and Parmesan cheese until blended. Add spaghetti and toss to coat. Press spaghetti mixture onto bottom and up sides of a greased 9-in. deep-dish pie plate, forming a crust. Spread cottage cheese onto bottom; top with beef mixture. , Bake, uncovered, 20 minutes. Sprinkle with mozzarella cheese. Bake until heated through and cheese is melted, 5-10 minutes longer. Let stand 5 minutes before serving.

STRING PIE
You'll like this fun and easy way to serve spaghetti.

- Heat oven to 375°. Grease pie plate, 10x1 1/2 inches. Cook and drain spaghetti as directed on package. Place spaghetti in pie plate, pressing down gently.
- Melt margarine in 10-inch skillet over medium-high heat. Cook turkey, bell pepper and onion in margarine, stirring occasionally, until turkey is no longer pink. Stir in spaghetti sauce, chili powder, salt and pepper; reduce heat to medium. Cook 5 to 6 minutes, stirring occasionally, until sauce is thickened.
- Mix eggs and cottage cheese; spread evenly over spaghetti. Spoon turkey mixture over cottage cheese mixture. Sprinkle with mozzarella cheese. Bake 35 to 45 minutes or until center is set. Let stand 5 minutes before cutting.

A fast and easy pasta dish that makes a great dinner with a loaf of garlic bread and a green salad. Sometimes I do use some italian sausage along with the ground beef for more flavor.

- Cook beef, onion, green pepper and garlic in a large skillet until browned.
- Drain; stir in red pepper flakes (op.) and spaghetti sauce and set aside.
- In a large bow, mix spaghetti, Parmesan cheese, eggs and butter. Spread in a greased casserole dish; spread cottage cheese over the top. Pour sauce mixture over cottage cheese; and sprinkle with mozzarella cheese.
- Bake at 350 degrees for about 30 minutes.
SHOE STRING FRIES

- Heat about 2-inches of oil in a large, heavy bottomed pot over medium heat until a deep-fry thermometer reads 365 degrees F. Line a pan with paper towels.
- While the oil heats slice the potatoes into shoestring fries with the thin julienne attachment of a hand-held mandolin or vegetable slicer. Swish the cut potatoes in a bowl of tepid water, and then spin them as dry as possible in a salad spinner. Spread them on towels, and blot with more towels-you want the potatoes bone dry so that they don't spatter in the hot oil.
- Increase the heat to medium-high, and working in batches, carefully add the potatoes to the oil and fry until brown and crispy, about 4 minutes. Scoop the fries from the oil with a slotted spoon, and drain on the prepared pan. Repeat with the rest of the potatoes, making sure the oil returns to 365 degrees F. before adding each batch. Season with salt and serve.

STRING SPAGHETTI PIE
I bought the cookbook that this recipe was in because of this recipe. It is a cross between spaghetti and lasagna and you don't have the mountain of left overs, like with lasagna. It's fast and easy and wonderful with garlic bread and a salad.

- Preheat oven to 350°F.
- Cook beef, onion and green pepper in large skillet over medium heat until the meat is browned.
- Drain fat.
- Stir in spaghetti sauce.
- Combine spaghetti, Parmesan cheese, eggs, and butter in large bowl; mix well.
- Place in bottom of 13x9 inch baking pan.
- Spread cottage cheese over top; cover with sauce mixture.
- Sprinkle with mozzarella cheese.
- Bake until mixture is thoroughly heated and cheese is melted, about 20 minutes.
- *Chef'snote: I layered everything, so it looks nice.
