MASHED POTATOES WITH CAULIFLOWER

Mashed Potatoes with Cauliflower image

Silky smooth, creamy mashed potatoes with cauliflower is an updated version of an old classic!

Provided by Deb Clark

Categories     Vegetables and Side Dishes

Time 30m

Number Of Ingredients 7

1 head cauliflower
6 cups Russet Potatoes (peeled & cubed about 3 large potatoes)
¼ cup sour cream
2-3 tablespoons cream or milk (optional)
½ cup freshly grated Parmesan cheese
2 tablespoons butter
salt & pepper to taste

Steps:

  • Remove the core from the cauliflower and cut it into large florets.
  • Peel and dice the potatoes. They are more dense than cauliflower, cutting them into a dice smaller in size than the cauliflower will ensure both cook evenly and be done at the same time.
  • Combine cauliflower & potatoes in a large pot & cover with cold water - add a heaping tablespoon of salt.
  • Bring water to a boil, reduce to simmer until the potatoes & cauliflower are fork tender, 12-15 minutes. Drain really well in a colander and return the potatoes and cauliflower to the hot pot that you cooked them in set on the stove (burner off). Setting them back on the stove, onto the hot burner will steam the remaining water off the vegetables.
  • In a small pan, warm the sour cream and butter. Add it to the potatoes along with the shredded cheese. With a potato masher, potato ricer or a hand mixer, mash/mix until they are well combined. If the potatoes need some extra moisture, add the milk.
  • Taste & adjust seasonings. Because the cheese is salty, you may not need any additional salt, but I always add a pinch of pepper.

POTATO AND CAULIFLOWER MASH (MAKE AHEAD)

Potato And Cauliflower Mash (Make Ahead) image

Mash made with delicious roasted cauliflower and potatoes and cheese. These are the best mashed potatoes I've ever tasted!

Provided by Helen

Categories     Side Dish

Time 45m

Number Of Ingredients 8

1 medium cauliflower (cut into florets)
2 tablespoons olive oil ((for roasting))
1 medium potato (peeled and chopped into small chunks.)
4 tablespoons grated cheese ((or 1 handful - any strong cheese e.g. strong cheddar))
2 tablespoons butter
⅓ cup milk
2 thyme sprigs ((or 1 teaspoon dried thyme))
salt & black pepper

Steps:

  • Preheat the oven to 220C/420F.
  • Spread the cauliflower out on a baking tray in one layer and drizzle with the olive oil. Roast for 15 to 20 minutes or until the cauliflower is golden and almost caramelised.
  • At the same time, boil the potato chunks until they are soft (about 15 minutes). Also warm the milk in a small saucepan with one of the thyme sprigs or the dried thyme.
  • Put aside a small handful of the roasted cauliflower florets. Then put the rest into the bowl of a food processor and blend with a bit of the warm milk (thyme sprig removed!).
  • Add the potato, butter, cheese and as much of the rest of the milk as you need to blend to a smooth puree.
  • Finally, grind in plenty of salt and pepper and blend for a couple more seconds.
  • Scrape the mash into a nice serving dish. Top with the reserved cauliflower florets, a sprinkle of fresh thyme leaves (if using fresh) and a drizzle of olive oil.

POTATO AND CAULIFLOWER MASH

Potato and Cauliflower Mash image

Onion-flavored cheese adds great flavor, but you can also use cream cheese with chives. For even more buttery flavor, use Yukon Gold potatoes - simply cut 1-1/2 lbs. into 1-inch chunks to keep the cooking time down. This is a great way to get the kids to eat cauliflower!

Provided by JackieOhNo

Yield Makes 8 servings

Number Of Ingredients 9

2 pounds russet (baking) potatoes, peeled and cut into 1-inch pieces
Salt
1 1/4 cups whole milk, divided
1 stick (8 tablespoons) unsalted butter, divided
4 ounces coarsely grated Italian Fontina or Gruyère (about 1 cup packed)
1/4 teaspoon freshly ground black pepper
1 (2- to 2 1/2-pound) head cauliflower, cut into 1 1/2-inch pieces, including stems and core
3 garlic cloves, peeled and smashed
3/4 to 1 cup grated Parmigiano-Reggiano, divided

Steps:

  • Put potatoes and 2 teaspoons salt in a large heavy saucepan and generously cover with cold water (about 2 1/2 quarts). Bring to a boil, then reduce heat, and simmer, partially covered, until potatoes are tender, 15 to 20 minutes.
  • While potatoes are boiling, heat 3/4 cup milk and 3 tablespoons butter in a small saucepan until butter is melted and milk is hot but not boiling. Keep warm off heat, covered.
  • Drain potatoes well in a sieve or colander and return to hot saucepan. Add milk mixture, Fontina, and pepper, and mash with a potato masher or fork to desired consistency. Season with salt and keep warm, covered.
  • Bring a pot of well-salted water to a boil, then add cauliflower and garlic and simmer until cauliflower is very tender, 13 to 15 minutes.
  • Drain cauliflower in a colander and pulse with remaining 1/2 cup milk, 1/2 cup Parmigiano-Reggiano, and 3 tablespoons butter in a food processor until it's a chunky purée.
  • Stir together mashed potatoes and cauliflower mixture in a large bowl and season with salt and pepper. Transfer to a buttered 3-quart flameproof shallow baking dish (not glass).
  • Heat oven to 425°F with rack in middle. Melt remaining 2 tablespoons butter and gently brush over potato-cauliflower mixture, then sprinkle evenly with remaining 1/4 to 1/2 cup Parmigiano-Reggiano (to taste). Bake until potato mixture bubbles around edges, about 20 minutes.
  • Turn on broiler and broil 6 to 8 inches from heat until topping is browned in spots, 1 to 2 minutes.

CAULIFLOWER MASH

Cauliflower Mash image

It might be tough to imagine that anything could taste better than mashed potatoes. But cauliflower mash captures all the flavors of beloved potatoes, and you won't be able to taste the difference. Not only is this mash cheesy, buttery and silky smooth, it also brings along a stellar lineup of vitamins and nutrients. Plus it's lower in carbohydrates and calories than its potato counterpart.

Provided by Food Network

Categories     side-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 8

6 cups (810 grams) cauliflower florets
8 garlic cloves
1 cup (120 grams) shredded Cheddar
1/4 cup (60 milliliters) heavy cream
2 tablespoons salted butter, plus more for serving
1/4 teaspoon sea salt, plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
1 tablespoon chopped fresh chives, for garnish

Steps:

  • Bring an inch of water to a boil in a large saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam for about 5 minutes, until the florets are fork tender. Transfer the florets to a high-powered blender or food processor.
  • Add the garlic, cheese, heavy cream, butter, salt and pepper to the cauliflower. Blend until smooth and creamy, 1 to 2 minutes. After 1 minute, if there are still chunks, use a rubber spatula to scrape down the sides, then process again until light, fluffy and completely smooth. Taste and adjust the seasoning if needed.
  • Let the mash sit for 2 minutes to settle. Top with chives and serve with extra butter.
