STUFFED ACORN SQUASH

Stuffed Acorn Squash image

This Quinoa Stuffed Acorn Squash is an all-in-one meal that's bursting with fall flavors. The savory goodness comes from sautéed onions, celery, mushrooms, and warm spices. Then it's balanced out with subtly sweet and tarts flavors from apples and cranberries. The quinoa gives it a nice texture and lots of added protein. It's heavenly!

Categories     Main Course

Time 55m

Number Of Ingredients 16

3/4 cup dry quinoa
1 1/2 cups vegetable broth (, low sodium)
3 acorn squash ((medium-sized))
2 tablespoons olive oil (+ more for brushing acorn flesh)
1 small onion (, finely diced)
1 stalk celery (, finely diced)
1 large apple (, diced)
8 ounces cremini mushrooms (, diced)
1/2 cup cranberries ((fresh or frozen))
3 cloves garlic (, minced)
1 teaspoon sage
1 teaspoon thyme
1/2 teaspoon cinnamon
1 teaspoon Himalayan salt ((or preferred salt), more to taste)
Fresh cracked pepper (, to taste)
2 tablespoons pure maple syrup (*Optional)

Steps:

  • Preheat oven to 425 degrees F
  • Cut a thin slice off the bottom of each squash to create a flat edge, so the squash can stand up (don't cut too much or it will leave a hole). Cut stems off the tops if they protrude. Now cut each squash horizontally in half. Scoop out the membranes and seeds inside of the squash & discard. (*photos are in post above)
  • Place the squash on a rimmed baking sheet, cut-side up. Brush the inside with olive oil and sprinkle with salt & pepper. (*Optional: lightly brush with maple syrup to add a subtle sweetness) Roast the squash for about 35-45 minutes, or until tender (test with a fork).
  • Add the quinoa and broth to a medium pot. Bring to a boil and then turn heat down to maintain a low simmer. Cover with lid and cook until liquid is gone and quinoa is fluffy. This usually takes about 15-20 minutes to cook. Remove from heat and fluff with fork. Set aside.
  • In a large pan, heat 2 tablespoons of oil over medium heat. Sauté the onion, celery, apples until softened. About 5-6 minutes
  • Add the mushrooms, cranberries, garlic, sage, thyme, cinnamon, salt, and pepper. Sauté about 7-9 minutes, or until mushrooms and cranberries are tender (if food sticks to the pan, you can splash a little vegetable broth or white wine to deglaze).
  • Remove from heat and add the cooked quinoa. Combine well and taste for seasoning, add more as needed.
  • When the squash is ready, fill with the stuffing mixture. (*optional: drizzle/spritz top of stuffing with oil for a crispier top). Place in oven and bake 10-15 minutes, until the quinoa is lightly browned & crispy.

QUINOA STUFFED ACORN SQUASH

Quinoa Stuffed Acorn Squash image

Quinoa Stuffed Acorn Squash is an amazing fall entree or side dish. Chicken sausage, cranberries, pepitas, and feta cheese make this recipe a winner.

Provided by Jessica Formicola

Categories     Main Course     Side Dish

Time 1h10m

Number Of Ingredients 15

2 acorn squash (halved, seeds and pulp removed (reserve if you wish to roast) *see note)
1 tablespoon olive oil
2 cups quinoa (prepared according to package directions)
2 shallots (minced)
2 leaves sprigs rosemary (only, chopped)
1 green bell pepper (chopped)
1 cup mushrooms (sliced)
1/4 cup white wine
1 cup fresh spinach
3 links mild chicken sausage (casings removed, crumbled and cooked)
1/2 cup pine nuts (toasted (optional))
1 cup dried cranberries
1/2 cup feta cheese (crumbled)
1/4 cup squash or pumpkin seeds
Cooking Spray

Steps:

  • Preheat the oven to 375 degrees.
  • Cut the bottoms of each squash to prevent rolling when served. Line a rimmed baking sheet with aluminum foil and lightly coat with cooking spray. Bake squash, flesh side down for 30-40 minutes or until they are easily pierced with a fork.
  • Meanwhile, make the filling by heating olive oil in a medium skillet. Add shallot, saute for 2-3 minutes and then add green bell pepper until soft. Lastly, add mushrooms, white wine, and rosemary. Continue to cook until liquid has reduced significantly. Take off the stove and add spinach, toss until wilted. Transfer all to cooked quinoa, also adding cooked chicken sausage, pine nuts, and dried cranberries.
  • When the acorn squash is done, flip over and spoon quinoa mixture evenly into each. Top with crumbled feta cheese and pumpkin/squash seeds. Serve hot and enjoy!

STUFFED ACORN SQUASH WITH SPANISH QUINOA

Stuffed Acorn Squash with Spanish Quinoa image

Stuffed Acorn Squash paired with Spanish style quinoa and protein rich black beans, this is the epitome of fall flavor and is naturally gluten free!

Provided by Jennifer Fugo

Categories     Main Dish

Yield 2 large servings, or 4 smaller servings

Number Of Ingredients 15

1 medium uncooked acorn squash
1 cup uncooked quinoa
1 & 1/2 cup water (to cook quinoa)
1 can (15 oz) diced tomatoes in juice
1 cup cooked black beans
1/2 cup chopped red onion
1/4 cup finely chopped fresh cilantro (for garnish)
2 tsp sea salt
1/2 tsp ground black pepper
Dash ground white pepper
1 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp paprika
Optional: crumbled goat cheese for topping (vegetarian, not vegan)

Steps:

  • Preheat the oven to 375 degrees.
  • Slice one medium acorn squash in half and scoop out the seeds. Place the two halves of cleaned acorn squash upside down in a large baking dish and add about 1/2 inch of hot water to create a water bath. This helps the squash to cook evenly.
  • Cover the dish with aluminum foil and roast the squash in the oven for 35-45 minutes or until insides are soft to the prick of a fork. Remove from the oven and let rest.
  • While the acorn squash roasts, prepare the Spanish Quinoa stuffing. Be sure to rinse the quinoa thoroughly before cooking it. Using a fine mesh kitchen bag to rinse it makes this very easy. Add the rinsed quinoa, water, diced tomatoes and juice from the can, all spices and salt/pepper to a saucepan (or cook it in a rice cooker).
  • Bring contents of the pan to a boil, then cover and simmer for 15-20 minutes or until quinoa is fluffy and all liquid has been absorbed. Add the black beans and red onion and mix well.
  • Add the Spanish quinoa by the spoonful into the cooked acorn squash "bowl" for a yummy presentation. Top with finely chopped spinach and crumbled goat cheese (optional) to taste. Enjoy warm!

Provided by Food Network Kitchen

Categories     main-dish

Time 1h45m

Yield 4 servings

Number Of Ingredients 13

2 medium acorn squash (2 to 2 1/4 pounds each)
3 tablespoons apple cider vinegar
3 tablespoons olive oil
2 tablespoons pure maple syrup
Kosher salt and freshly ground black pepper
1 small onion, chopped
1 cup red quinoa, rinsed well
1 teaspoon mild curry powder
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/4 cup dried cranberries
1 cup loosely packed fresh parsley leaves, chopped
1/4 cup roasted, salted and shelled pistachios, coarsely chopped

Steps:

  • Position an oven rack in the middle of the oven; preheat the oven to 400 degrees F.
  • Cut each squash in half lengthwise and scoop out and discard the seeds. Arrange the halves in a large baking dish, flesh-side up.
  • Whisk together the vinegar, 2 tablespoons of the oil and the maple syrup in a cup. Brush the flesh side of the squash halves with some of the maple mixture and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Put the squash flesh-side down in the baking dish, then brush the skin side with maple mixture and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Roast until the squash is fork-tender, 50 to 60 minutes. Poke the inside of the squash halves with a fork and brush generously with more of the maple mixture.
  • Meanwhile, heat the remaining 1 tablespoon oil in a medium saucepan over medium-high heat. Add the onions and cook, stirring occasionally, until soft and golden brown, about 6 minutes. Add the quinoa, curry powder, cinnamon, and 1 teaspoon salt and stir until the spices are toasted, about 1 minute. Add 2 cups water and bring to a simmer. Lower the heat, cover the pan and simmer, stirring occasionally, until the quinoa is tender and most of the liquid is absorbed, 20 to 24 minutes. Remove from the heat and let sit, covered, for 5 minutes. Uncover and stir in the cranberries, remaining maple mixture, half of the parsley and half of the pistachios.
  • Stuff the squash halves with the quinoa and sprinkle with the remaining parsley and pistachios. Serve warm or at room temperature.

  • Prepare the acorn squash by cutting off the bottom “point” to create a flat surface (don't take too much off), and also cut the stem part off to create another flat surface, again taking care to not cut too much off; next, cut the squash in half width-wise, in the center, creating 4 halves; scoop the seeds and stringy bits out, drizzle a little bit of olive oil into each of the 4 halves, and add a couple of pinches of salt and pepper to each half.
  • Place each squash half onto the baking sheet with the cavity facing down, and roast for roughly 35 minutes, or until the flesh is fork tender; remove from the oven, and allow the squash to cool slightly until they can be handled; leave the oven on.
  • While the squash roasts, cook the ground beef by placing a medium-size non-stick pan over medium-high heat, and drizzling in about 1 tablespoon of olive oil; once the oil is hot, add in the onion, and saute for about 2 minutes; next, add in the ground beef and break it up with a spoon/spatula into small crumble; once the beef has slightly browned, add in a couple of pinches of salt and pepper, the garlic, the cumin, the cayenne and the cinnamon, and stir to combine.
