6 boneless skinless chicken breast halves (8 ounces each)
6 slices fully cooked ham
6 slices Swiss cheese
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/2 teaspoon rubbed sage
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 cup canola oil
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup chicken broth
Chopped fresh parsley, optional

Steps:

  • Flatten each chicken breast half to 1/4-in. thickness; top with ham and cheese. Roll up and tuck in ends; secure with toothpicks. , In a shallow bowl, combine the flour, cheese, sage, paprika and pepper; coat chicken on all sides. In a large skillet, brown chicken in oil over medium-high heat. , Transfer to a 5-qt. slow cooker. Combine soup and broth; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender. Remove toothpicks. Garnish with parsley if desired. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet, stirring occasionally, until a thermometer inserted in chicken reads 165°.

Italian Stuffed Chicken Roll-Ups image

These Italian stuffed chicken roll ups are so easy to make and are incredibly delicious. Made with provolone cheese and slices of prosciutto these are sure to please the whole family!

1.5 - 2 lbs. thinly-sliced chicken breasts
3 ounces thinly-sliced deli ham or prosciutto
4 slices or about 3 ounces provolone cheese
2/3 cup Italian seasoned breadcrumbs
½ cup grated Parmesan cheese
¼ cup minced fresh parsley (or 1-2 tablespoons of dried parsley flakes)
½ cup milk

Steps:

  • Preheat oven to 425F (220C). Spray a large baking sheet with cooking spray and set aside.
  • In a shallow bowl, combine breadcrumbs, Parmesan cheese, and parsley. Pour milk into a separate bowl.
  • Place a slice of ham and a slice of provolone cheese on each chicken breast. Depending on the size of your ham and cheese slices, you may need to trim them or cut them in half so that they are not hanging too far out of the roll-up.
  • Roll up chicken and secure with toothpicks.
  • Dip chicken rolls in milk, then coat with a light coating of the crumb mixture.
  • Place chicken seam-side down on prepared baking sheet.
  • Lightly spray chicken with cooking spray (this will help it turn golden brown!).
  • Bake, uncovered, for about 25 minutes or until chicken is cooked through. Remove toothpicks and serve!

These Spinach Stuffed Chicken Roll Ups are filled with yummy ricotta, sundried tomatoes and fresh mozzarella then topped with marinara sauce.

3 egg whites
1 cup breadcrumbs
6 chicken cutlets
1 tbsp olive oil
Salt & pepper to taste
1/2 cup ricotta cheese
1 cup mozzarella cheese, divided
1 cup finely chopped fresh mushrooms
1/2 cup sundried tomatoes
1 cup finely chopped spinach
1/2 tsp each Salt and pepper
1 cup jarred marinara sauce
1 tbsp fresh chopped basil (optional)

Steps:

  • Preheat oven to 400 F. Grease an 8x11 baking dish with 1 tbsp of olive oil and set aside. Add egg whites to a large bowl and breadcrumbs to another large bowl and set aside.
  • In a large mixing bowl, mix together ricotta, 1/2 cup mozzarella cheese, mushrooms, sundried tomatoes, spinach and 1/2 tsp salt and pepper.
  • Season chicken cutlets with salt and pepper. Lay each cutlet flat and fill with a thin layer of ricotta-spinach stuffing mix. Roll up chicken cutlets, then dip in bowl of egg whites, then bowl of breadcrumbs.
  • Add each chicken roll up to the greased baking dish and bake in the oven for 25 minutes. Remove from oven, top with marinara sauce and cheese and bake another 5-10 min until cheese is melted.
  • Garnish with basil (optional) and serve with your choice of green (I roasted a bunch of broccoli rabe with 1 tbsp of olive oil, a pinch of salt and two cloves of garlic at 400F for 10 min). Enjoy!

4 skinless, boneless chicken breasts
1 cup dried bread crumbs, seasoned
½ cup grated Parmesan cheese
¼ cup butter, melted
1 (7 ounce) package garlic cheese spread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts until thinned out. In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.

6 large boneless, skinless chicken breast cutlets, pounded to 1/4 inch thickness
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp chicken seasoning powder
1/2 c fresh mushrooms, thinly sliced
4 oz cream cheese, softened
1/4 c prepared pesto sauce
1/2 c chopped roasted sweet red peppers
1 c panko bread crumbs
3 Tbsp grated parmesan cheese
1/2 tsp paprika
2 c cheese sauce of choice

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Coat a 9- x 13-inch baking dish with cooking spray. Sprinkle chicken evenly with salt, pepper and chicken seasoning.
  • 3. In a medium bowl, combine cream cheese, pesto, mushrooms and red peppers. Mix well. Spread cheese mixture over chicken, roll up jelly-roll style, and secure with wooden toothpicks.
  • 4. In a shallow dish, combine Panko, Parmesan cheese and paprika. Place chicken rolls in Panko mixture, coating completely.
  • 5. Place chicken in prepared baking dish and bake un-covered for 25 to 30 minutes, or until no pink remains and juices run clear. Remove toothpicks, Serve with warmed cheese sauce on the side.

Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. 1 log (4 ounces) fresh goat cheese
2 tablespoons chopped fresh basil
2 tablespoons butter
2 tablespoons olive oil
Fresh basil leaves, julienned

Steps:

  • Preheat oven to 350°. Place the first 7 ingredients in a small heavy saucepan. Add liquid smoke, if desired. Bring to a boil; reduce heat. Simmer, uncovered, until thickened to consistency of jam, about 25 minutes. Stir in 1/4 teaspoon salt and 1/8 teaspoon pepper. Three recipes were combined to make these chicken roll-ups. I've made this twice for the Bunco ladies and they always rave about how wonderful it is. I'm not 100% sure about the quantities and cooking time since I'm usually making a much larger batch. I used the flat side of a metal meat pounder and was able to flatten out a piece of chicken in less than 10 whacks. If needed, I trim some of the edges to make it look a little neater.

4 boneless chicken breasts, skin removed
4 slices muenster cheese
4 slices cooked bacon
2 cups French-fried onions
1 egg, beaten
meat seasoning (preferably Gordon's Grub Rub)

Steps:

  • Preheat oven to 350.
  • Lightly grease a baking sheet.
  • Place French Fried Onions in a plastic bag and crush into small pieces.
  • Place chicken breasts between sheets of waxed paper and pound to ¼ inch thickness.
