I found this recipe on another site when I was looking to use up some leftover smoked gouda. It's very flavorful, easy enough for weekenights yet perfect for a dinner party too.

4 boneless chicken breasts
4 slices bacon
3 -4 ounces smoked gouda cheese
1/4 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon pepper

Steps:

  • Combine, cayenne, garlic powder, paprika and pepper.
  • Flatten chicken breasts to approx 1/4" thickness.
  • Season both sides of chicken with the cayenne mixture.
  • Place small piece (s) of cheese on chicken and roll up, pressing firmly.
  • Wrap each stuffed breast with a bacon slice and then brown over medium heat until bacon just begins to crisp.
  • Bake in a 350 oven for 20 minutes.

2 yellow onions, sliced
4 skinless, boneless chicken breast halves
4 Borden® Gouda Cheese Slices, or more as needed
1 (4.75 ounce) package seasoned coating mix for chicken

Steps:

  • Melt butter in a skillet over medium-low heat. Add onions and saute until golden brown, stirring frequently. Continue cooking over medium-low heat until onions turn deeper brown, 35 to 45 minutes. If they start to burn, reduce heat. When completely caramelized, remove skillet from heat.
  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Cut a pocket into the side of each chicken breast. Evenly stuff pockets with 1 or 2 slices of Gouda cheese (depending on size of breast) and 1 tablespoon caramelized onions.
  • Place seasoned coating mix in a shallow dish. Evenly dip each chicken breast in coating mix and place on prepared baking sheet.
  • Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 boneless skinless chicken breast halves (6 ounces each)
2 ounces smoked Gouda cheese, cut into thin pieces
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons canola oil, divided
1 garlic clove, minced
1 cup reduced-sodium chicken broth
1 cup apple cider or unsweetened apple juice
2 large tart apples, thinly sliced
1 tablespoon honey

Steps:

  • Cut a slit lengthwise through the thickest part of each chicken breast; fill with cheese. In a shallow bowl, combine the flour, salt and pepper. Dip chicken in flour mixture on both sides; shake off excess., In a large nonstick skillet coated with cooking spray, cook chicken in 1-1/2 teaspoons oil over medium heat for 8-10 minutes on each side or until juices run clear. Remove and keep warm. , In the same skillet, saute garlic in remaining oil for 30 seconds. Add broth and cider, stirring to loosen browned bits. Bring to a boil. Reduce heat; simmer, uncovered, for 12-14 minutes or until mixture is reduced to about 1 cup., Stir in apples and honey; return to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until apples are crisp-tender. Serve with chicken.

2 (16 ounce) packages bacon
3 (24 ounce) bags small red new potatoes, scrubbed
1 ½ (8 ounce) packages cream cheese, softened
1 ½ cups shredded smoked Gouda cheese
¾ cup milk
½ cup butter, softened and cut into pieces
½ cup minced fresh chives
¾ teaspoon salt
¼ teaspoon ground white pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lay bacon strips on the foil in an even layer.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and allow to cool slightly.
  • Place bacon in the preheated oven and bake until browned and crisp, about 15 minutes. Drain bacon slices on paper towels and chop into tiny pieces when cool enough to handle. Leave oven on.
  • Mix cream cheese, Gouda cheese, milk, butter, chives, salt, and pepper together in a bowl. Mix in chopped bacon.
  • Cut each potato lengthwise. Use a small spoon or melon baller to carefully scoop out some (but not all) of the flesh from the centers. Add potato flesh to the cream cheese mixture and mix until creamy.
  • Fill each potato half with 1 rounded tablespoon cream cheese mixture and place on a baking sheet.
  • Bake until filling is hot and looks melted, 20 to 25 minutes.

3 tablespoons dry bread crumbs
2 tablespoons grated Parmesan cheese
2 pork sirloin cutlets (3 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
2 slices smoked Gouda cheese (about 2 ounces)
2 cups fresh baby spinach
2 tablespoons horseradish mustard

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix bread crumbs and Parmesan cheese. , Sprinkle tops of cutlets with salt and pepper. Layer end of each with Gouda cheese and spinach. Fold cutlets in half, enclosing filling; secure with toothpicks. Brush mustard over outsides of pork; dip in bread crumb mixture, patting to help coating adhere. , Place on a greased foil-lined baking sheet. A twist on twice-baked potatoes using Gouda. Can make early in the day and refrigerate prepared potatoes until ready to bake.

4 russet potatoes
vegetable oil or vegetable shortening
1 1/2 cups gouda cheese, shredded and divided
2 -3 tablespoons heavy cream
1/2 cup sour cream
2 tablespoons butter
2 tablespoons green onions, thinly sliced
1 tablespoon fresh parsley, minced
4 slices bacon, cooked crisp and crumbled
salt and pepper
minced fresh parsley (to garnish)

Steps:

  • Preheat oven to 400 degrees. Scrub and dry potatoes. Rub surface with a little vegetable oil or vegetable shortening. Prick in several places with fork.
  • Bake in preheated oven for approximately 1 hour or test for doneness by gently squeezing the middle of the potato, using a pot holder. If it gives in easily to your touch, it is done. Remove potatoes to a work surface.
  • Reduce oven temperature to 350 degrees. Cut potatoes in half lengthwise and allow to cool long enough to handle. Scoop out flesh with a spoon, being careful to leave shells intact (about 1/4-inch thick) and place in a bowl. Add 1 cup of the cheese, plus the sour cream, heavy cream, butter, green onion, parsley, salt and pepper to the potato flesh. Mash with potato masher or beat until just smooth with an electric mixer.
  • Fill potato shells with potato mixture; sprinkle with bacon and remaining cheese. Bake at 350 degrees for 20 minutes or until golden. Garnish with minced fresh parsley.

1 gouda cheese at room temperature
1 (3-ounce) package cream cheese softened
1/2 cup milk or half-and-half
1 teaspoon sage ground
1 teaspoon onion salt
chives Chopped
Rye or whole wheat crackers

Steps:

  • Slice off a thin piece from top of Gouda. Carefully scoop out cheese, leaving a thin shell. Make a decorative design around top of shell set shell aside.Place pieces of Gouda cheese in a food processor bowl fitted with the shredding disc. Cover and process until shredded. Transfer Gouda cheese to a bowl. Remove shredding disc and insert metal blade.Place cream cheese, milk or half-and-half, sage and onion salt in foodprocessor bowl. Cover and process until well blended, about 30 seconds. Add shredded Gouda cheese. Cover and process with on-off bursts just until blended, (Mixture will not be smooth.) Pack into Gouda shell. Cover and let stand for 30 minutes. Serve or chill up to 24 hours.If chilled, remove Gouda shell from refrigerator and let stand to soften before serving. Serve with crackers.Note: Look for a large Gouda in a deli or cheese shop. If you prefer, use Edam cheese in place of the Gouda.
