BRAISED STUFFED HEARTS

Braised Stuffed Hearts image

My darling Nanna used to make this and the smell was just wonderful, I ate it with relish as a child but seem to have forgotten it these days. Found this recipe from Delia Smith and am posting it for Zurie's African Forum PLUS think I will give it a try myself!! N.B. For sheep please read lamb!

Time 3h20m

Yield 6 serving(s)

Number Of Ingredients 17

6 sheep heart
3 tablespoons plain flour, seasoned with
salt and pepper
1 tablespoon butter
1 tablespoon oil
1 large onion, peeled and chopped
150 ml stock or 150 ml water
150 ml dry cider
1 teaspoon red currant jelly
3 tablespoons butter
1 small onion, peeled and finely chopped
50 g fresh white breadcrumbs
1 apple, peeled and chopped
1 orange, juice and zest of
1/2 teaspoon mixed herbs
3 tablespoons chopped parsley
1 teaspoon chopped sage

Steps:

  • Preheat the oven to 180C or 350°F.
  • Wash the hearts thoroughly and with a pair of scissors cut out all the tubes and the dividing wall in the centre of each heart to make a neat pocket.
  • Prepare the stuffing by melting the butter in a small pan and gently frying onion until softened. Mix in rest of stuffing ingredients and stuff into the hearts securing them at the top with small skewers.
  • Roll the hearts in seasoned flour and brown in a casserole dish in the remaining butter and oil.
  • Stir in the chopped onion and cook till softened, then add stock and cider.
  • Bring to simmering cover and cook in oven for 21/2 to 3 hours or until very tender. Drain and arrange in a warm serving dish.
  • Bring remaining pan juices to a boil add redcurrant jelly and taste and season. You may prefere to thicken the juices slightly with a roux if you wish.
  • Pour sauce over the hearts and serve with lots of buttery mashed potatoes and something green!

BAKED, STUFFED BEEF HEART WITH PARSLEY STUFFING

Baked, Stuffed Beef Heart with Parsley Stuffing image

Ths recipe was requestd by Sandi Moorhead. My British mother-in-law taught me this recipe, but she never measured anything so I guessed at amounts and it always tastes wonderful. You can adjust it to your own taste. This works equaly well with pig heart and venison heart.

Provided by Elsie Perrett

Categories     Beef

Time 1h30m

Number Of Ingredients 8

1 beef heart
1 c bread crumbs, fresh or dry
1 egg, slightly beaten
1/4 c parsley, chopped fresh or dry
1/4 c butter, melted
1/2 c onion, finely choped
salt to taste
you will also need a big needle and heavy thread to close the heart bfore baking.

Steps:

  • 1. Preheat oven to 350 degrees. Have a small roaster with lid ready.
  • 2. Clean heart of any excess fat and veins.
  • 3. In bowl, mix bread crumbs, egg, parsley, and onion. Add salt to taste. Add more moisture if too dry.
  • 4. Lay heart open and place stuffing in center. Wrap heart around stuffing and sew together with needle and heavy thread. You could probably wrap heavy thread around heart to close if you prefer.
  • 5. Place heart in roaster with a little beef stock or fat for moisture. Bake covered for 1 to 1 1/2 hour or until tender. Check during cooking and baste if necessary.
  • 6. Cut into crosswise slices to serve.

PENNSYLVANIA DUTCH STUFFED BEEF HEART

Pennsylvania Dutch Stuffed Beef Heart image

Thrifty farmers used everything at butchering time. Nowadays, you can order heart from your butcher or meat man. Long slow simmering yields a tender, delicious meat. From the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

STUFFED ROAST HEART

Stuffed Roast Heart image

Roasted beef heart stuffed with portobello mushrooms, breadcrumbs and herbs. As seen on NBC series Hannibal. *You will need butcher's string.*

Provided by dannyqnn74

Categories     Beef Organ Meats

Time 2h

Yield 3-4 serving(s)

Number Of Ingredients 16

1 beef heart
2 portabella mushrooms
2 shallots
1 handful fresh parsley
1 handful fresh sage
1 handful fresh rosemary
1 handful fresh thyme
2 cups breadcrumbs
2 sausages
1 cup red wine
2 tablespoons butter
1/4 cup olive oil
2 tablespoons salt and pepper
1 onion
2 carrots
2 celery

Steps:

  • Start with the heart. Open it up and trim away any blood vessels or connective tissue and any large lumps of fat. Rinse the whole thing out, washing away any clotted blood. Fill a large bowl with salted water and leave the heart in that for about half an hour.
  • Stuffing: Make bread crumbs from a decent sized chunk of quality bread that is a bit stale. Crumble it by hand or in a blender or with a knife. Cut up the portobello mushrooms and the 2 shallots fairly small. Fry them in butter over a medium-low heat for a few minutes, then throw in the parsley, sage, rosemary, and thyme (Simon & Garfunkel herbs). Once the shallots are softened, dump in the breadcrumbs. Stir everything well to get all the flavours mixed up in the bread and fry for another 3-4 minutes.
  • Transfer the stuffing mixture into a bowl and allow it to cool for a few minutes. Take the sausages and slice down their length with a knife and remove the insides and discard the casings. Add the sausage meat to the warm stuffing and mix it together with a fork.
  • Heart: Take the heart out of the salt water and rinse it once more. Pat the whole thing dry and grind salt and pepper over it. Rub it in with olive oil, getting both the inside and outside of the heart. Pack in the stuffing filling all cavities of the heart. When it is full, force it closed and tie it up with butcher's string. Use plenty and make sure it's good and tight to prevent stuffing erupting out of any available opening.
  • Preheat the oven to 300º F. Get a frying pan nice and hot and then put the heart into it. Turn the heart every minute or so, browning each side as well as the top and bottom.
  • While the heart is cooking, chunk up some vegetables (whatever you like, but onion, carrot, and celery are good) and scatter them in a baking tray. Lift the heart out of the pan and onto the vegetables. While the pan is still hot, add a little red wine to deglaze. Pour that over the heart, and add some more wine to the base of the tray to keep the vegetables from getting too dry.
  • Put the tray into the oven and cook for 30 minutes per half kilo of heart (most hearts are about a kilo, so about an hour cook time). Every 20-30 minutes, scoop the juices from the bottom of the tray and pour them back over the meat to keep it from drying. When it is done cooking, take it all out and pour the juices into a saucepan. Cover the meat in foil and leave it somewhere warm for at least 10 minutes. Simmer the juices and add whatever is left of your glass of wine. Reduce until it thickens, giving you a fittingly rich sauce to serve with the heart.
  • To serve, you can cut the heart into slices and top with the sauce.
