4 large ripe pears, halved and de-seeded (I used a spoon, use a melon baller if you have one)
1/3 cup Bob's Red Mill oat flour (can sub flour of choice, use certified gluten-free if necessary)
1/4 cup coconut sugar (or brown sugar)
1/4 cup coconut oil (not melted)
1/2 tsp vanilla extract
1/2 cup Bob's Red Mill Old Fashioned Oats (use certified gluten-free if necessary)
1/4 cup walnuts
1 tsp cinnamon
1/2 tsp pumpkin pie spice
pinch of salt

Steps:

  • Preheat oven to 350F. Form a cavity in each pear for the filling. Arrange prepared pears in a baking dish sprayed with cooking spray. Set aside.
  • Place oat flour and coconut sugar in the bowl of a food processor. Add coconut oil and vanilla and pulse until the mixture resembles small crumbs. (Alternatively, you can do this step in a bowl using a pastry cutter).
  • Add the oats, walnuts, cinnamon, pumpkin pie spice and salt. Process for about 20 seconds longer, or until well-combined.
  • Fill each pear half with a couple spoonfuls of the topping. Place evenly in baking dish. Bake for 32-35 minutes or until pears are tender (use a fork to test if you're not sure).

Steps:

  • Preheat the oven to 350°F.
  • In a small bowl, combine the flour and sugar. Using a pastry cutter, fork, two knifes, or your fingers, cut the butter into the flour mixture until you have coarse crumbs. This can also be completed in the bowl of a food processor. Add the oats, pecans, and cinnamon, and stir. Pinch the crumbs together so you have large chunks.
  • Scoop the topping into the pears, and arrange in a baking dish. Bake for about 35 minutes or until the crisp topping is golden, and the pears are tender when pierced with a toothpick.
  • Serve while warm with ice cream and a drizzle of caramel, if desired.

2 tablespoons fresh lime juice
2 tablespoons granulated sugar
1 1/2 teaspoons freshly grated ginger

Steps:

  • Preheat oven to 400 degrees with rack in center.
  • Crisp topping:Stir together oats, sugar, almonds, flour, and salt. Add butter and mix with hands until small clumps form and dry mixture is coated in butter. Cover with plastic and refrigerate.
  • Filling:Peel, halve, and core pears, then slice into 1/2-inch-thick pieces. Add to a large bowl and toss with lime juice as you work to prevent pears from browning. Toss with sugar, ginger, flour, and salt. Transfer to a 2-quart baking dish. Remove crisp topping from refrigerator and break into small pieces. Scatter evenly over the top. Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
  • In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.

1/4 teaspoon pepper
1/2 teaspoon dried thyme

Steps:

  • Preheat oven to 375°F.
  • Slice pears in half lengthwise and scoop out a little of the flesh to make bowls.
