CHICKEN CASSEROLE AMANDINE

I found this in Kraft's What Cooking Magazine, and made it for our Thursday night potluck group. It was a big hit, and there are no leftovers (always a good sign).

1 1/2 lbs chicken breasts, cut into cubes
1 (120 g) package stovetop chicken flavor stuffing mix
1 cup water
1/2 teaspoon poultry seasoning
1 (10 ounce) can condensed cream of chicken soup
1/2 cup milk
2 cups frozen green beans
1/2 cup grated mozzarella cheese
1/4 cup toasted sliced almonds

Steps:

  • Preheat oven to 400.
  • Place chicken in a 9 by 13 baking dish and sprinkle with seasoning.
  • Combine stuffing mix with water and set aside.
  • Mix soup with milk.
  • Spread soup mixture and green beans on top of chicken.
  • Sprinkle with cheese and almonds.
  • Top with stuffing mixture.
  • Bake at 400 for 30 minutes or chicken is cooked through.

GREEN BEANS ALMONDINE

No matter how much I make, it's never enough and it couldn't be simpler to make. Even those who hate veggies love this green bean almondine!

1 pound fresh green beans
1 ½ ounces slivered almonds
2 tablespoons butter
2 cloves garlic, minced, or more to taste
salt and ground black pepper to taste

Steps:

  • Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes. Drain in a colander and refresh under cold running water to keep the nice green color.
  • Heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 5 minutes, watching closely so as to not burn. Take pan off of heat and add butter to melt. Return to heat and add garlic. Mix in green beans, season with salt and pepper, and continue to stir until heated through, 5 to 7 minutes.

2 eggs
1 3/4 cups chicken broth (13 3/4-oz can)
3 1/2 cups Kellogg's® seasoned stuffing mix
1/4 cup finely chopped almond
CHICKEN AND MUSHROOM SAUCE
1/3 cup margarine or butter
1/3 cup all-purpose flour
1 teaspoon salt
3 cups milk
2 cups cubed, cooked chicken
1 (4-ounce) can mushroom pieces and stems, drained
2 tablespoons chopped pimientos
2 tablespoons snipped, fresh parsley

Steps:

  • 1. In large mixing bowl, beat eggs slightly. Stir in chicken broth. Add KELLOGG'S Stuffing Mix and almonds. Tossing lightly until croutons are evenly and thoroughly moistened. Spoon into 8 x 8 x 2-inch baking pan coated with cooking spray, pressing lightly.2. Bake at 350°F about 30 minutes or until set. Cut into squares and serve with Chicken and Mushroom Sauce.3. While stuffing is baking, prepare Chicken and Mushroom Sauce. Melt margarine in medium saucepan over low heat. Stir in flour and salt. Add milk, stirring until smooth. Stir in remaining ingredients. Increase heat to medium and cook until mixture boils, stirring constantly. Continue cooking and stirring 1 minutes longer. Serve hot.
