BACON-WRAPPED TURKEY BREAST STUFFED WITH PEAR HASH

- Begin by making the brine:
- In a large container, combine all the ingredients and stir until the salt and sugar dissolve. Put the turkey breasts in the brine, making sure they are completely covered. Refrigerate at least 1 hour or overnight.
- To make the turkey:
- Melt the butter in a large skillet over medium heat. Add the shallot, sage, thyme, chili flakes, and a pinch of salt; saute for 5 minutes. Turn the heat to medium-high. Add the pears, spreading out in a single layer. Let sit untouched for 2 minutes to brown slightly. Toss, saute 1 minute more, then remove from heat. Transfer the pear mixture to a bowl and add the walnuts, bread crumbs and chicken stock. Stir to combine and season with salt and pepper, to taste. Set aside to cool.
- Remove the turkey breasts from brine and pat dry. Butterfly the turkey by slicing the breasts into even halves on the horizontal, leaving about 1/2-inch, uncut at 1 edge so the breasts can open like a book. Season all over with salt and pepper, to taste. Lay a large piece of plastic wrap on a clean cutting board. Put 3 slices of bacon parallel, about 1-inch apart on top of the plastic. Arrange 1 of the open turkey breasts, cut side up, lengthwise on top of the bacon. Scoop half of the stuffing onto 1 half of the turkey breast, fold over the other half, then roll the bacon around it tightly. Make sure the bacon strips lay flat against the turkey. Sprinkle the outside of the bacon with a little paprika. Wrap tightly in the plastic wrap twisting the ends to really seal in the breast to keep its shape. Repeat with remaining bacon, turkey, and stuffing. Transfer the breasts to a sheet tray and rest in the refrigerator for at least 1 hour.
- Preheat the oven to 375 degrees F.
- Remove the turkey breasts from refrigerator 1/2 hour before you plan to cook them. Discard the plastic wrap and using 3 pieces of butcher's twine, tie the twine over the center of the 3 bacon strips to secure the breasts when searing. Warm a large skillet over medium-high heat and add 1 tablespoon of the vegetable oil. Add 1 of the turkey breasts, seam side down, into the skillet and sear until the bacon is slightly crisp and the turkey is lightly browned, about 4 minutes on each side. Transfer the turkey breast to a baking sheet lined with a rack. Sear the remaining turkey breast, using 1 tablespoon of vegetable oil and add it to the baking sheet. Put the baking sheet into the oven and bake until the turkey is cooked through and the internal temperature registers 160 degrees F on an instant-read thermometer, about 60 minutes. Remove the turkey from the oven to a cutting board and let rest for 15 minutes before slicing. Cut away the butcher's twine, slice crosswise, arrange on a serving platter and serve.

- Grate 1 small sweet potato on the large holes of a box grater. Heat 2 tablespoons unsalted butter in a medium nonstick skillet over medium heat. Add sweet potato, season with salt and pepper, and cook, stirring occasionally, until tender, about 5 minutes. Add 2 cups leftover stuffing and cook, pressing down firmly, until brown and crisp on the bottom, 6-8 minutes. Turn, drain any excess liquid from pan, and continue to cook until other side is brown and crisp, 6-8 minutes.
- Drizzle hash with pure maple syrup, season with salt and pepper, and serve with 4 poached large eggs.
SHRIMP AND ROASTED SWEET POTATO HASH STUFFING

- Preheat oven to 425 degrees. In a large bowl toss potatoes with 4 tablespoons oil, 2 teaspoons salt and 1/2 teaspoon black pepper. Spread potatoes on two or three large baking sheets, leaving space between chunks so they can brown. Roast, tossing occasionally and changing position of baking pans so potatoes cook evenly, until potatoes are golden, crisp around edges, and tender, about 35 minutes.
- In a large skillet, heat remaining 3 tablespoons oil over medium-high heat. Add onions, bell peppers and 1/2 teaspoon salt. Cook, stirring, until softened, about 10 minutes. Add garlic, jalapeños and chili powder and cook 2 minutes more. Add shrimp and remaining teaspoon salt. Cook, tossing occasionally, until shrimp is just opaque, about 5 minutes.
- Pour in lime juice and scrape up any browned bits from bottom of skillet. Combine shrimp mixture with sweet potatoes in a large bowl and stir in the cilantro. Taste and add more lime juice and salt, if necessary.

- Spray skillet with cooking spray and add about 2 tbsp.
- butter and saute onion and celery till almost tender.
- In large bowl add the corn bread stuffing mix, the two cans of soup (undiluted), mushrooms with liquid, corn and the onion and celery mixture; mix thorougly.
- Spray a 13x9 casserole dish with cooking spray and put enough ham to cover the bottom.
- Sprinkle the cheese evenly over the ham.
- Spoon the stuffing mixture over the ham and cheese spreading the mixture evenly.
- Bake at 400 for approximately 30 minutes.

- In a large bowl, toss potatoes with onion, salt and pepper. In a small cast-iron or other heavy skillet, heat 2 teaspoons oil over medium heat. - Pre-heat oven to 350.
- Heat 15 inch cast iron skillet with 1/3 cup of olive oil.
- Once skillet is hot put 3 cups of Simply Potatoes Shredded Hash Browns in skillet. Once hash brown browns on one side turn over and brown other side.
- In another skillet cook bacon until crisp while hash brown is browning. Once bacon is cooked, drain on a napkin.
- Once hash browns are browned on both sides season with salt and pepper and turn heat down to low.
- In a small bowl combine onions, red peppers, spinach and cilantro. Once combined, add to one side of hash browns.
- Crack eggs directly on top of onions, red peppers, spinach and cilantro mixture. Add cheese on top of eggs, then fold other half of hash brown on the other side over onions, red peppers, spinach, cilantro, cheese and eggs.
- Place skillet in oven for 15 minutes. Once done season to taste with black pepper and salt. Place a serving on a plate or bowl and top with sliced avocado and a teaspoon of sour cream. .

Fry eggs over easy in same skillet. Top stuffing with eggs, then arugula. Season with salt and pepper; serve.

- In a cast iron skillet or other heavy bottomed skillet, heat the oil over medium high heat. When the oil is very hot and the oil slicks across the pan add the stuffing. Press down on the stuffing with a spatula so that the bottom starts to crisp and brown. Use the spatula to turn and flip the stuffing so that it can brown and crisp on the other side -- pressing down on stuffing with spatula to get full contact with the pan. Don't worry if the stuffing breaks up, it won't stay in a solid piece.
- Heat a frying pan over medium high heat. Spray with vegetable spray. When pan is hot, crack an egg into the pan and cook until the whites are mostly cooked. Sprinkle with salt and pepper. Serve as is for sunny-side up eggs or flip the egg and cook for another 30 seconds to a minute to completely cook the white for an over easy egg.
- Mound the stuffing onto plates and top each with a fried egg. Sprinkle with parsley (optional) for a little color and any of the optional garnishes. Enjoy with a Bloody Mary or Michelada.
