2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

This is a remake using less fat that I found on the Florida Herald Tribune website. Love to get the same taste using less fat! NOTE: finally got around to making this, and for my taste it is way too tart. I would either add more sugar to the cranberries or use dried to begin with. I'd forgotten just how tart fresh cranberries can be!

1 cup quick-cooking oatmeal
1/2 cup oat flour or 1/2 cup whole wheat flour
1/2 cup brown sugar
1 teaspoon cinnamon
3 tablespoons butter, melted
1 tablespoon water
1 (12 ounce) package fresh cranberries, chopped (3 cups)
5 cups apples, chopped (5 large)
1/2 cup sugar

Steps:

  • Spray a 9-by-9-inch pan with nonstick cooking spray and set aside. Preheat the oven to 350°F
  • Combine the oatmeal, flour, brown sugar and cinnamon. Pour the butter and water over the oatmeal mixture. Stir and work with hands until well combined and crumbly. Set aside.
  • Combine the cranberries, apples and sugar. Pour into the prepared pan. Sprinkle crumbs evenly over the top.
  • Bake for 50 to 60 minutes, or until the apples in the center are done. The top should be browned and the edges bubbling. Makes 9 servings.

1 1/2 pounds tart green apples, peeled, cored, cut into 3/4-inch pieces
3 cups fresh or frozen cranberries
2/3 cup sugar
4 tablespoons all purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cup old-fashioned rolled oats
2 tablespoons firmly packed golden brown sugar
3 tablespoons butter, cut into pieces, room temperature
Vanilla frozen yogurt

Steps:

  • Preheat oven to 375 °F. Toss apples, cranberries, 2/3 cup sugar, 2 tablespoons flour, cinnamon and nutmeg to blend in large bowl. Transfer to 8x8x2-inch glass baking dish. Let stand 15 minutes.
  • Combine oats, brown sugar and remaining 2 tablespoons flour in medium. Add butter and stir until moist clumps form. Sprinkle topping over filling. Bake until topping is golden brown and filling bubbles, about 1 hour. Cool slightly. Serve warm or at room temperature with frozen yogurt.

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 8-inch square (2-quart) glass baking dish with cooking spray (without flour).
  • In large microwavable bowl, microwave apples uncovered on High 5 minutes. Stir in dried cranberries, 1/4 cup brown sugar, the cinnamon, nutmeg, lemon peel and vanilla.
  • In small bowl, stir water, cornstarch and 1/4 teaspoon salt until dissolved. Stir into apple mixture. Spoon mixture into baking dish.

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square glass baking dish and set aside.
  • Drain apple slices and place in the baking dish. Randomly scatter cranberries among the apples.
  • Combine flour, sugar, and butter in a food processor. Process until pea-sized crumbs are formed, stopping just short of it being cookie dough. Cover the apples with the crumb mixture.
