Steps:
- In a medium bowl, mix all the filling ingredients together until well combined. Set aside.
- Have grill preheated over high heat and oven preheated to 350 degrees F.
- Slit each veal chop on its side to create a pocket. Stuff each chop with filling. Use toothpicks to keep closed. Season chops with salt and pepper and brush with oil on both sides.
- Place chops on smoking hot grill and mark for 2 minutes on each side. Remove from grill and place in a baking dish. Finish cooking in oven for 4 to 6 minutes.

- In a large skillet, brown chops in oil on both sides. Transfer to a greased 11x7-in. baking dish; add enough broth to reach top of chops. In a large bowl, combine stuffing ingredients. Spoon over chops. , Cover an bake at 350° for 30 minutes. Uncover; bake 20-30 minutes longer or until a thermometer reads 160°.

- Heat oven to 180C/160C fan/gas 4. To make the stuffing, melt the butter in a shallow pan, then fry the onion, garlic, prunes and bacon until the onion is translucent and the bacon is slightly coloured. Add the brioche and cook until combined and broken down, then add the sage, season and remove from heat.
- Put a sheet of baking parchment on a sheet of foil (both should be larger than your venison). Arrange four pieces of string across the kitchen counter and put the foil and parchment on top - this will help the venison to keep its shape. Lay another four pieces of string across the parchment. Lay the pancetta on top of the paper and string, slightly overlapping the slices so that they cover an area roughly the size of your opened-out venison.
- Lay the venison on top of the pancetta, skin-side down, then spoon the stuffing down the centre, patting it with your hands to make it into a sausage shape.
- Fold in the sides of the venison, along with the pancetta, so they touch or slightly overlap - use the foil and baking parchment to help you. Tie the strings around the venison, making sure that the foil and parchment enclose the meat but stay outside it. Fold in the ends and tie the other pieces of string tightly around the outside of the parcel to hold it in shape.
- Put the venison on a baking sheet or in a roasting tin. Roast for 40-50 mins or until a meat thermometer pushed into the joint reaches 60C, for medium rare meat. Rest for 10 mins, then remove and discard the foil and parchment. Brush the venison all over with butter and return to the oven for a final 10 mins. Leave to rest for 10-15 mins before removing the string and slicing.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
- Tear the buns into pieces, and combine with onion, celery, sage, salt, and pepper in a bowl. Lightly stir in the egg and 1/2 cup of chicken broth, and mix gently until thoroughly combined but not mushy.
- Slice each pork chop through the side to make a pocket. Stuff the pocket of the pork chop with stuffing mixture, and place into the prepared baking dish. Pour 1 cup of chicken broth between the pork chops into the dish without pouring it on top of the chops.
- Bake in the preheated oven until the chops are tender and no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

VENISON ROAST WITH MEDITERRANEAN STUFFING
One of the many delicacies our family enjoy when the bounty of the annual hunt becomes available. A recipe developed in our house over a number of seasons and now a firm family favourite. I usually cut a roast from the eye muscle in the loin of impala or kudu but any cut of meat suitable for roasting can be used. Preparation time does not include marinating.

- With sharp knife, make deep slits in roast and place garlic strips into slits.
- Mix marinade ingredients and marinate roast for 3 days in refrigerator, turning frequently.
- Soak sundried tomatoes in balsamic vinegar until soft and all vinegar has been absorbed. (Can be prepared beforehand and kept in refrigerator).
- Mix stuffing ingredients.
- Remove roast from marinade and stuff envelope with mediterranean stuffing. Save marinade.
- Wrap bacon strips around stuffed roast and tie with string to keep everything together.
- Preheat oven to 180c.
- Heat oil in large heavy-bottomed skillet and quickly brown roast on all sides.
- Remove roast to ovenproof dish with lid. Pour reserved marinade and beef stock over roast, replace lid and cook in oven at 180c for 1h. Turn and baste at 15min. intervals.
- Remove lid and roast for further 1/2 hour, basting, until sauce is thickened and meat is tender.

STUFFED VENISON CHOPS OR STEAKS
This is an updated version of my old recipe using ziplock bag and precooked bacon bits or pieces. The tenderness of the meat is because milk is used.This can be used with beef or buffalo also.

Steps:
- Place milk in a gallon ziplock bag.
- Place All seasoning in the bag.
- Shake until seasoning starts to mix.
- Add the chops or steaks.You may use boneless back strap steaks also, ingredient reader didn't like the words.
- Refrigerate at least 4 hours or overnight.
- Drain in colander. Reserve the milk marinate.
- Add olive oil if using Hormel cooked bacon pieces and bits.
- Do not use olive oil if using bacon slices.
- In large deep frying pan add the bacon of your choice with or without oil.
- Add the diced green pepper. Sauté until tender crisp and the bacon is browned and slightly crisp.
- With slotted spoon, take out the cooked green peppers and bacon. If whole slices, cut in small pieces.
- Place in a bowl.
- Take a sharp knife and cut a pocket on the entire one side of the chop or steak.
- Stuff each chop or steak with bacon and green pepper.
- Close with one or two toothpicks stabbed at an angle.
- Brown in the olive oil or the bacon drippings. Do not overcook. Flip only once.
- Place on a platter in the oven on warm.
- Add the cold water and whisk in the flour to the oil or bacon drippings, add the reserved milk. Cook on low and whisking or stirring. Add a little more flour if you want the gravy a little thicker. Whisk to get rid of any lumps.
- Add salt and pepper if desired.
- Serve the gravy over the chops or steaks with hot buttered biscuits.

- Heat butter in a skillet over medium heat. Add onion and cook until softened, 3 to 5 minutes.
- Combine venison, 1/2 the Cheddar cheese, stuffing mix, garlic powder, black pepper, and salt in a bowl. Mix until well blended. Add enough cream to create a thick, doughy texture. Add cooked onions and mix to blend.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a glass baking dish.
- Arrange bell pepper halves in the prepared baking dish, cut-sides up. Form meat mixture into 8 meatballs using your hands. Stuff meatballs into bell pepper halves in the baking dish.
- Bake in the preheated oven for 60 minutes. Top with remaining Cheddar cheese and continue baking until melted and starting to brown, about 15 minutes more.
