CLASSIC OATMEAL-RAISIN COOKIES
Full of nubby oats and plenty of sweet raisins, these lightly spiced cookies are pleasingly chewy in the center and crisp around the edges, with a hint of butterscotch from the dark brown sugar. They keep really well, so you can make them up to a week in advance and store them in an airtight container at room temperature. They're also great for mailing when a package of cookies is in order.

Steps:
- Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners.
- Using an electric mixer, beat butter in a large bowl until creamy. Add brown and granulated sugars, then beat until fluffy, about 2 minutes. Beat in eggs, one at a time, until fully incorporated. Then, beat in vanilla extract.
- In a separate bowl, use a wooden spoon or spatula to mix together the flour, salt, baking soda, cinnamon, nutmeg and cardamom. Set mixer on low speed, and beat flour mixture into the butter mixture. Stir in oats and raisins.
- Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.
- Bake until cookie edges turn golden brown, about 9 to 13 minutes. Centers will still be quite soft, but they will firm up as the cookies cool. Cool completely on a wire rack. Store in an airtight container at room temperature.

SUE'S OATMEAL MACADAMIA NUT COOKIES
This is an old family recipe that I 'tweaked' by adding macadamia nuts. I bake about 1,000 of these every year for our St Joseph Garden Tour and I don't even have any crumbs left.

Steps:
- Sift flour, resift with salt and baking soda. Stir in oats and nuts and set aside.
- Cream together sugar and shortening. Add eggs and vanilla. Add dry ingredients and beat til thoroughly mixed.
- Roll dough in waxed paper like logs, shaping as you roll. Refrigerate overnight.
- Unroll cookie dough and slice 1/4 inch thick and place on an ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes.

- Preheat oven to 350°. In a large bowl, cream butter, 1/2 cup confectioners' sugar and salt until light and fluffy. Beat in vanilla. In another bowl, whisk flours; gradually beat into creamed mixture. Stir in cherries and nuts., Shape level tablespoons of dough into balls; place 1-in. apart on ungreased baking sheets. Bake 8-10 minutes or until bottoms just begin to brown. Cool on pans 10 minutes., Place remaining confectioners' sugar in a small bowl. Roll slightly cooled cookies in sugar; return cookies to wire racks to cool completely. Roll cookies in sugar again just before serving.

- In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat on medium speed for 2 minutes. Combine the flour, baking soda and salt; add to creamed mixture and beat for 2 minutes. Stir in nuts and chips. Cover and refrigerate several hours or overnight. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Cool on pans for 1 minute before removing to wire racks; cool completely.

- Heat oven to 375°.
- In large bowl, beat butter, granulated sugar, brown sugar, vanilla, and salt with electric mixer until creamy.
- Add eggs, beat well.
- Stir together flour, and the baking soda.
- Gradually add to butter mixture, beating until well blended.
- Stir in white chocolate chips and macadamia nuts.
- Drop by rounded teaspoons onto ungreased cookie sheet.
- Bake 8-10 minutes or until set.
- Cool slightly, remove frm cookie sheet to wire rack to cool completely.
