Time 22m

Number Of Ingredients 5

(1) 16.5 oz. package sugar cookie dough
8 oz package of cream cheese ((softened))
1/2 cup powdered sugar
2 tablespoons heavy whipping cream
Fruit toppings (fresh strawberries, fresh blueberries, kiwi and clementines)

Steps:

  • Preheat oven to 325.
  • Grease a pizza pan with nonstick cooking spray. Spread dough into prepared pan. I like to put my hand into a sandwich bag and spray the bag with cooking spray and press the dough into the pan. You may need to add additional cooking spray to the bag on your hand as you spread the dough.
  • Bake for 10-12 minutes or until golden brown and center is set. Cool completely.
  • Beat cream cheese, sugar and cream together until smooth with a hand mixer. Spread onto cookie. Top with sliced strawberries, blueberries, sliced kiwi and orange sections. Refrigerate until ready to serve. Cut into pizza size slices and serve.

Time 25m

Number Of Ingredients 14

2 3/4 cups (390g) all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cream of tartar
1 1/2 cups (310g) granulated sugar
1 cup (226g) unsalted butter, (softened)
1 large egg
1 large egg yolk
2 tsp vanilla extract
Fresh fruit of various colors*
5 Tbsp (70g) salted butter, (softened)
8 oz (226g) cream cheese, softened
2 cups (250g) powdered sugar
1/2 tsp vanilla extract

Steps:

  • For the cookies: Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking soda, salt and cream of tartar for 20 seconds, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, cream together sugar and butter until combined.
  • Mix in egg, then mix in egg yolk and vanilla extract. With mixer set on low speed slowly add in dry ingredients and mix just until combined (dough with will thick, stop mixer and mix by hand to get flour at bottom if needed).
  • Scoop dough out 1 1/2 Tbsp (about 33g) at a time and shape into balls. Transfer to a baking sheet lined with parchment paper or a silicone liner, spacing cookies 2-inches apart.
  • Bake in preheated oven 10 - 12 minutes (cookies should appear slightly under-baked). Remove from oven and allow to rest several minutes then transfer to a wire rack to cool completely.
  • Repeat until all of the dough has been used up. Once cookies are cool (and just before serving) frost cookies with cream cheese frosting and top with fresh fruit.
  • For the frosting: In the bowl of an electric stand mixer fitted with the paddle attachment cream butter then blend in cream cheese and mix until smooth. Add powdered sugar and vanilla and mix until light and fluffy.

FRUIT PIZZA

Fruit Pizza image

Fruit Pizza is a colorful, sweet treat made with a sugar cookie crust, cream cheese frosting, and fresh fruit toppings.

Provided by Diana

Categories     Dessert

Time 40m

Number Of Ingredients 11

¾ cup (170g) unsalted butter (at room temperature)
⅔ cups granulated sugar
1 egg
1 teaspoon pure vanilla extract
1¾ cups all purpose flour
1 teaspoon baking powder
½ teaspoon salt
fresh fruit (for topping)
1 8-oz package cream cheese (softened)
½ cup powdered sugar
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 390°F/200°C degrees.
  • In a bowl, using a hand mixer cream together the sugar and the butter until it's well combined and creamy (about 1 minute). Mix in the egg and the vanilla extract.
  • Add the flour along with the baking powder and salt, and beat with the mixer on slow speed until just combined.
  • Line a 12-inch pizza pan with parchment paper, grease your hands with cooking spray then spread the dough in the pan in an even layer. You will have to use your hands to press down the dough.
  • Bake in the oven for 13-15 minutes. The cookie base does not have to brown, it might look undercooked but that's totally fine as baking it for longer will dry it out. Remove from the oven, and cool completely on a cooling rack.
  • To make the cream cheese frosting, whip the cream cheese with the powdered sugar and vanilla extract. Add the powdered sugar in batches to avoid getting a sugar storm.
  • Once the cookie base has cooled completely, using a spatula spread the cream cheese frosting over the cookie dough base, and then decorate with fresh fruit creating a pattern. Drizzle/brush the fruit with honey if desired.

FRUIT PIZZA

Fruit Pizza image

Use any combination of ripe summer fruit you can find for this fresh fruit "pizza." The crust is one big sugar cookie that can be baked a day ahead and kept well wrapped until you're ready to spread it with the cream-cheese topping (which you can also make a day ahead). The dough could double as your go-to sugar cookie recipe too--just form it into balls and bake at 350 degrees F for a soft, chewy treat.

Categories     dessert

Time 1h30m

Yield 8 servings

Number Of Ingredients 14

3/4 cup granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon freshly grated lemon zest
1 teaspoon pure vanilla extract
1 large egg
1 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
8 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
1 tablespoon honey
1 teaspoon pure vanilla extract
2 cups confectioners' sugar, sifted, plus more for dusting
4 to 5 cups mixed fresh summer fruit, such as whole raspberries, blackberries and blueberries, quartered strawberries and sliced stone fruit

Steps:

  • For the sugar cookie crust: Preheat the oven to 350 degrees F.
  • Beat the granulated sugar and butter in a large bowl with an electric mixer on high speed until light and fluffy, 1 to 2 minutes. Add the lemon zest, vanilla and egg and beat until incorporated. Add the flour, baking powder and salt and mix on low speed until just combined. Scrape the dough into a large (12-inch) nonstick skillet and press into an even layer to cover the entire bottom of the skillet. (If the dough becomes too soft to work with, pop the skillet in the refrigerator to chill for 10 minutes before proceeding.) Prick the dough all over with a fork, leaving a 1-inch border.
  • Bake the crust until golden and the edges are set, 22 to 24 minutes. Let cool in the skillet on a wire rack, then loosen the edges of the crust with a butter knife and invert onto a platter or cutting board to unmold. Invert again so the crust is right-side up. (To make ahead, let cool, then wrap well in plastic wrap and keep at room temperature.)
  • For the topping: Clean out the mixer bowl and add the cream cheese and butter. Beat on medium speed until light and smooth, about 1 minute. Add the honey and vanilla and beat to combine. Add the confectioner's sugar and beat on low speed until just combined. Increase the speed to high and beat until fluffy, 1 to 2 minutes. Refrigerate the topping, covered, until ready to use (stir again until smooth).
  • To assemble the fruit pizza, spread the cream cheese topping on the crust in an even layer, leaving a border for the crust. Top with the fruit in a random pattern. Dust with more confectioner's sugar if using just before serving, then cut into slices.

Time 37m

Yield 8 servings

Number Of Ingredients 21

Nonstick cooking spray
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 (8-ounce) package cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon lemon zest
Pinch salt
2 tablespoons orange marmalade
1/2 teaspoon herbs de Provence
1 cup blueberries
1 cup sliced kiwi
1 cup sliced nectarines
1 cup raspberries
1 cup strawberries, sliced

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
  • For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
  • For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
  • To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

  • Preheat oven to 350 Degrees. Spray a 15-17 inch pizza pan or 15X11 rectangular dish with baking spray.
  • Spread the sugar cookie dough evenly leaving one inch away from the pan so as the cookie dough bakes it won’t overflow into your oven ( that happened to me). NOTE: I would place aluminum foil on the rack where the pizza will be baked in case it overflows, just in case. Bake for 10 minutes. The cookie dough will be slightly browned. Allow cooling completely.
  • Using a handheld mixer or standing mixer, add the cream cheese and blend until creamy. Add the powdered sugar slowly and vanilla extract until well mixed and smooth. Spread across the sugar cookie crust. Begin to layer and spread the fruit across the crust as desired.

  • In a food processor, combine the dry cookie ingredients and pulse until combine. Add in the cold butter and pulse again until it looks like course cornmeal. Add in the vanilla and the egg and mix until the dough is smooth and cohesive.
  • Press the filling into a greased tart pan or pie plate using a rubber spatula. Make sue the dough is evenly spread and lightly goes up the sides. Bake in a preheat 350 degree oven for 12-15 minutes until lightly golden brown and set. Let cool completely before filling.
  • While the cookie crust is baking, combine the mascarpone (or softened cream cheese), sour cream, powdered low carb sweetener, and vanilla together into a bowl. Mix with a spatula until light and fluffy. Add to the cooled cookie crust and spread it evenly across the top.
  • Assemble the top with the fruit and place in the fridge to set. You can serve and slice this right away but I do like the filling to set back up slightly before slicing. Store in the fridge covered for up to a week.

  • Make the Sugar Cookie. I purchased some pre-made sugar cookie dough at my local grocery store. This cut the prep time in half. I spread apart the cookies on a cookie sheet and popped them in the oven.
  • Cut Fruit. While the cookies are baking in the oven I cut up the fruit I chose for the top of the cookie. For my cookies, I chose the fruit featured, but on your cookies, you can do any fruit that compliments the cookie and cream cheese!
  • Take Sugar Cookies out of the Oven. The pre-packaged cookies told me how long to let the cookies cook and cool. After I let them cool on the cookie sheet, I scooped them off put them on a plate to decorate.

Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.
