Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir oats, bananas, applesauce, raisins, almond milk, vanilla extract, and cinnamon together in a bowl until evenly mixed; drop by the spoonful onto a baking sheet.
- Bake in the preheated oven until the edges are golden, 15 to 20 minutes.

I adapted these from a King Arthur recipe. We enjoyed these healthy wheat free cookies. If you double the recipe and use 2 cookie sheets reverse them halfway through baking (top to bottom, bottom to top). Watch for over baking.

Steps:
- Preheat oven to 375°F; lightly grease a baking sheet.
- If using old fashioned oats pulse them in a food processor a few times.
- Combine the oats, nuts, cinnamon, baking powder, salt and orange zest (if using) in a food processor, blender or a medium bowl (if using an immersion blender). Pulse until the nuts are finely chopped and evenly distributed. **You should end up with a fine meal. This is taking the place of flour**.
- Beat the butter and sugars in a large bowl until smooth.
- Add the egg, scraping the bowl and beating until smooth.
- Stir in the vinegar and vanilla, then the oat mixture.
- Drop the dough by 1/2 tablespoonfuls onto prepared baking sheet. (They don't spread much).
- Bake cookies for 10-14 minutes until the edges are barely browned.
- Remove them from the oven and let them cool on baking sheet for about 5 minutes.
- Transfer to rack or paper bag to cool completely.
- **Mine turned out as small round puffy soft and slightly chewy cookies**.

- In a bowl cream 1/4 cup dark agave nectar, 1/2 cup Swerve sugar substitute, 1/2 cup coconut oil. After a few minutes add 1 egg, 1 teaspoon vanilla extract, and 1/2 teaspoon almond extract. In another bowl, sift 1 cup gluten free all purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda and 1/2 teaspoon sea salt. Combine creamed mixture with dry, with a wooden spoon add 1 1/2 cups gluten free whole oats, 2 tablespoons flaxseed, 2 tablespoons unsweetened shredded coconut, 1/2 cup chocolate chips, and 1/2 cup dried cherries. These bake a little faster than usual cookies I baked them on convection at 325. The base browns quick so it's ok to take them out a little early even if they look a tad underdone. Enjoy!

- Grease cookie sheet.
- Combine butter spread, eggs, sweetner, vanilla, salt and baking powder in mixer. Add milk to ingredients and mix well. Then add oats and flour. Once your dough is complete add cherries and pecans and mix well.
- Drop by spoonfuls onto a cookie sheet 1-2 inches apart. The dough is a little stiff, so you may want to flatten the cookies slightly. Bake 10.
