Categories     Dessert

Number Of Ingredients 6

3 3/4 cups sugar
1 1/4 cup light corn syrup
1 cup water
1 teaspoon red food coloring
1 teaspoon cinnamon oil (add another 1/2 teaspoon of cinnamon oil for extra spicy)
2/3 cup powdered sugar

Steps:

  • In a 3.5 quart sauce pan fitted with a candy thermometer, heat sugar, corn syrup and water together over medium heat, stirring occasionally until sugar is dissolved, about 5 minutes. While sugar mixture is heating, prepare a baking sheet by lining it with heavy-duty foil and spraying with non stick cooking spray.
  • Increase heat to high and let candy mixture come to a boil until it reaches 300 degrees F (hard crack stage) on a candy thermometer. Remove from heat and stir in food coloring and cinnamon oil. Keep face away from steam and handle cinnamon oil carefully, it can irritate skin with direct contact.
  • Immediately pour candy mixture onto foil lined baking sheet and let cool completely. Once cooled, use kitchen mallet or heavy bottomed measuring cup to break up pieces. Sprinkle with powdered sugar.

HARD CANDY WITHOUT CORN SYRUP OR ARTIFICIAL DYES

Hard Candy Without Corn Syrup or Artificial Dyes image

A friend of mine has a son with dye sensitivities and food allergies that loves hard candy. This candy recipe can be flavored with any combination of natural flavors without any fear of harming your loved ones.

Provided by Jackson

Categories     Dessert

Time 55m

Number Of Ingredients 3

1 1/2 cups (300g) sugar
1/2 cup (120mL) water
1 tsp (5mL) peppermint oil or extract

Steps:

  • Line and grease a 8-9" (20-23cm) heat proof container with aluminum foil or use parchment paper. I don't recommend using glass as it can crack with thermal shock.
  • Place sugar and water in a heavy 3 qt sauce pan. Stir until dissolved.
  • If at any time sugar gets on the sides of the pan above the sugar, carefully wash it down the sides with a pastry brush dipped in water.
  • Continue to cook on medium high heat until hard-crack stage is reached 310F (154C.)
  • Remove from heat. Let it stop boiling and add in the peppermint oil. Stir carefully with a clean heat proof spoon or spatula to mix in the oil.
  • Pour on baking sheet. Allow to cool 5-10 minutes and score the candy with a knife for more uniform pieces.
  • Let cool completely before breaking apart at score lines and store in an airtight container.

Red Hot Cinnamon Gummies image

These spicy cinnamon gummies are the best healthy snack. They are sweet and spicy despite being very low in carbs, calories, and fat!

Provided by Taryn

Categories     Dessert     Soup

Time 5m

Number Of Ingredients 6

1 cups water
2 tbsp Joy Filled Eats Sweetener (or see alternatives in recipe notes) ()
5-10 or more drops of cinnamon oil (to taste)
1-2 scoops stevia extract (or your favorite stevia, optional)
3 tbsp gelatin (4 packets)
red food coloring (optional, I used a few drops)

Steps:

  • Combine first 3 ingredients in a small pot and heat over low to medium heat until very warm. TASTE IT. You can add more cinnamon oil or more sweetener (add stevia if you'd like). Tailor it to your taste buds.
  • Slowly whisk in the gelatin until dissolved. At this point I pour it through a mesh sieve to strain out any pieces of gelatin that didn't dissolve. Pour into silicone molds and refrigerate until firm.

CINNAMON HARD CANDY

Cinnamon Hard Candy image

Make and share this Cinnamon Hard Candy recipe from Food.com.

Provided by Karrie Massotti

Categories     Candy

Time 35m

Yield 2 lbs

Number Of Ingredients 6

1 cup water
3 3/4 cups sugar
1 1/4 cups light corn syrup
1 teaspoon red food coloring (optional)
1 teaspoon cinnamon oil (not extract, must be real oil available at some craft stores and online. Extract has no flavor at al)
1/3 cup confectioners' sugar (to top candy with)

Steps:

  • Line a large cookie sheet with a 1 inch lip with foil.
  • Butter the foil and set pan aside.
  • Add water, sugar, corn syrup and food coloring to large heavy pan and stir until well mixed.
  • Bring to a boil over medium heat stirring occasionally.
  • Cover pan with lid and cook for 3 minutes (very important, this will dissolve the sugar crystals that may form on the sides of the pan)
  • Take lid off pan and cook on medium-high heat, without stirring until a candy thermometer reaches 300°F (hard crack stage), about 25 minutes. (Be patient, don't turn up heat to speed this up as it can go from cooking to burning in a second and the whole batch would be ruined).
  • Remove candy from heat stir in cinnamon oil (house will spell like cinnamon for days unless you open windows before you do this step, also be careful not to have your face right over the the pot).
  • Quickly pour into prepared pan.
  • Cool completely (about 45 minutes).
  • Cover with a piece of plastic wrap and use a hammer to get pieces small enough to get into a large zip top bag, then smash inside the bag until they are bite sized.
  • Add powdered sugar to bag and shake to coat all sides (note, check for holes in bag first, sometimes the candy punctures the bag).
  • Enjoy.

HARD CANDY RECIPE

Hard Candy Recipe image

This is LorAnn's Traditional recipe for Hard Candy.

Provided by LorAnn

Categories     Dessert

Yield 40

Number Of Ingredients 8

2 cups granulated sugar
2/3 cup light corn syrup
3/4 Cup water
1 dram (1 teaspoon) LorAnn super-strength flavoring, any flavor
LorAnn liquid food coloring or gel food coloring (as desired)
Hard candy molds (optional)
Powdered sugar (optional)
Sucker bags & twist ties (optional)

Steps:

  • 1. In a heavy (good quality) 2-quart saucepan, mix together sugar, corn syrup and water. Stir over medium heat until sugar dissolves.
  • 2. Insert candy thermometer if using, making certain it does not touch the bottom of the pan. Bring mixture to a boil without stirring.
  • 3. Early in the cooking process, 'wash down' any sugar crystals that form on the sides of the pan with a wet pastry brush.
  • 4. Continue to cook the syrup, without stirring, until the temperature reaches 260F; add drops of coloring until desired hue is achieved. Do not stir; boiling action will incorporate color into syrup.
  • 5. Remove from heat precisely at 300F (temperature will continue rising), or until drops of syrup form hard, brittle threads in cold water (hard crack stage). After boiling action has ceased, add flavor and stir. USE CAUTION WHEN ADDING FLAVORING TO AVOID RISING STEAM.
  • 6. Carefully pour syrup into prepared molds or onto the prepared greased and foil lined cookie sheet. (As the sugar mixture begins to set up, you may want to score with a large knife to mark squares.) Do not refrigerate.
  • 7. Cool completely. Break sheet candy into small pieces and dust with powdered sugar, if desired. Store in airtight containers between waxed paper. If making lollipops, do not dust with powdered sugar, but place in sucker bags and secure with twist ties. Store hard candy in a cool, dry place. Do not refrigerate.

CANDY APPLES RECIPE

Candy Apples Recipe image

Candy Apples are also easy to make at home in your own kitchen! These Homemade Cinnamon Candy Apples are tart apples with a crunchy cinnamon coating.

Provided by Elizabeth LaBau

Categories     Dessert

Time 1h

Yield 8

Number Of Ingredients 6

8 apples (preferably tart, like Granny Smith)
8 wooden skewers
2 cups granulated sugar
1 cup light corn syrup
1/2 cup hot water
1/2 cup red cinnamon candies (like Red Hots)

Steps:

  • Gather the ingredients.
  • Prepare a baking sheet by lining it with aluminum foil or parchment paper and lightly spraying with nonstick cooking spray.
  • Wash and dry apples carefully. Make sure that no water remains on the apples.
  • Remove stems and firmly stick skewers in stem ends.
  • Combine sugar, corn syrup, and hot water in a medium saucepan over medium-high heat.
  • Stir until sugar dissolves, then continue to cook, without stirring, until mixture reaches 250 F on a candy thermometer .
  • Wipe down the sides of the pan with a wet pastry brush occasionally to prevent crystallization.
  • Once candy reaches 250 F, add cinnamon candies and stir briefly until candies melt and incorporate into sugar syrup.
  • Continue to cook candy coating, occasionally washing down sides with wet pastry brush, until mixture reaches 285 F.
  • Remove pan from heat and stir mixture so that it is smooth and even.
  • Immediately start to dip apples. Hold an apple by skewer and dip in candy coating, tilting pan at an angle and rotating apple to cover it completely with a smooth, even layer of red candy.
  • Pull apple out of pan and twirl it to remove any excess. Set it stick-side up on prepared baking sheet.
  • Repeat with remaining apples.
  • Allow apples to cool at room temperature before serving. Candy apples are best enjoyed within 24 hours.
