CRUNCHY GARDEN SALAD



Crunchy Garden Salad image

8 ounces radishes, thinly sliced
1 large cucumber, thinly sliced
1/4 cup fresh mint leaves, chopped
1/4 cup fresh cilantro leaves, chopped
1/4 cup lime juice (from about 2 limes)
1/4 cup olive oil
Salt and freshly ground black pepper
2 cups arugula

Steps:

  • Combine the sliced radishes, sliced cucumber, mint and cilantro in a medium bowl. Whisk together the lime juice, olive oil, and salt and pepper, to taste, until well combined. Pour the dressing on top of the salad and toss to combine. Place arugula on a serving dish and top with tossed salad. Serve immediately.

4 cups torn romaine
1 medium red onion, thinly sliced, optional
1 large cucumber, halved and sliced
3 medium tomatoes, chopped
2 medium ripe avocados, sliced or cut into 1/2-in. chunks
1 each large green and sweet red pepper, chopped or sliced
1-1/2 cups mayonnaise
1/4 cup canned chopped green chiles
2 teaspoons chili powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese

Steps:

  • In a 2-qt. trifle bowl or glass serving bowl, layer fresh vegetables and avocado. In a small bowl, mix mayonnaise, chiles and seasonings; spread over top. Sprinkle with chips and cheese.

2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon salsa
1-1/2 teaspoons taco seasoning
3/4 teaspoon white wine vinegar
1/2 teaspoon minced fresh cilantro
1/8 to 1/4 teaspoon dried minced onion
3 cups torn romaine
1/2 cup chopped fresh tomato
1/4 cup shredded cheddar cheese
1/4 cup cubed avocado
1/4 cup crushed tortilla chips

Steps:

  • In a large bowl, whisk the mayonnaise, sour cream, salsa, taco seasoning, vinegar, cilantro and onion. Add romaine and toss to coat. Divide between two salad plates. Top with tomato, cheese, avocado and tortilla chips.

3 cups romaine lettuce, cut into bite size pieces
2 cucumbers, diced (preferably European long cucumber)
1 red onion, quartered and sliced thin
2 tomatoes, cut into bite sized pieces
1 bell pepper, chopped (any color, your preference)
2 stalks celery, chopped
1/4 cup Italian parsley, chopped
1 tablespoon of fresh mint, chopped
1 teaspoon fresh basil, chopped
salt
cracked black pepper
1/2 cup extra virgin olive oil
1 garlic clove, crushed
1/4 cup white wine vinegar
2 tablespoons lemon juice
1/2 teaspoon tarragon
1/4 cup feta cheese, crumbled (optional)
1/4 cup black olives (optional)

Steps:

  • In a large bowl, mix together the romaine, vegetables, herbs and season with salt and pepper to taste.
  • Add the olive oil, garlic, wine vinegar, lemon juice and tarragon and whisk briskly to incorporate the ingredients.
  • Add to the salad and toss lightly to coat.
  • If desired, top with feta cheese and black olives and serve.

1 (16-ounce) jar thick and chunky salsa, divided
1/4 cup water
1 envelope taco seasoning mix
1-1/2 heads iceberg lettuce, torn
3 cups broccoli florets (about 1/2 pound)
1 small red onion, thinly sliced into rings
1 medium carrot, shredded
1 large tomato, chopped
1 (4-ounce) can chopped green chili, drained
1/2 to 1 cup shredded Cheddar cheese
1 cup (8 ounces) sour cream
tortilla chip, , optional

Steps:

  • In a skillet, brown ground beef drain. Add 1 cup salsa, water and taco seasoning bring to a boil. Reduce heat and simmer for 20 minutes cool. In a 3- or 4-qt. glass bowl, layer vegetables in order given. Top with chilies, beef mixture and cheese. 2 avocados, cut into cubes
20 cherry tomatoes, halved
1 mango, cubed
2 cups mixed salad greens
2 cups bite-size pieces of romaine lettuce
½ red onion, chopped
3 green onions, chopped
4 limes, juiced
2 tablespoons olive oil
1 tablespoon white sugar
¼ teaspoon ground red pepper
¼ teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Combine avocados, tomatoes, mango, mixed greens, romaine lettuce, red onion, and green onions in a bowl. Toss salad until evenly mixed.
  • Combine lime juice, olive oil, sugar, red pepper, cumin, salt, and black pepper in a separate bowl. Whisk dressing until blended. Pour into the salad; toss briefly and serve.

So simple, yet different. We just got back from Jamaica, and this was a salad we ate quite often. Most restaurants we went to served this as their "garden salad" and it was always served with thousand island dressing. We loved it so much, we made it as soon as we got back.

4 cups cabbage (shredded or thinly sliced)
4 carrots (shredded)
1 green pepper (sliced into rings)
1 tomatoes (cut into 8 wedges)
1/2 English cucumber (peel on, round slices)
thousand island dressing

Steps:

  • Place cabbage into bottom of serving bowl.
  • Top with carrot.
  • Next, the green pepper.
  • Slide the cucumber slices down the side of the bowl, so that they are"standing" on the inside of the bowl, surrounding your salad, and you can see half of each slice sticking out.
  • Put the tomato wedges on the top of the salad.
  • Serve with thousand island dressing.

In a cast iron skillet, over medium high heat, cook chicken until it reaches an internal temperature of 165 degrees F. Remove and set aside. In same skillet, lower heat to medium, and add 1 tbsp of butter. Once melted add in the corn and sauté until the kernels are charred, about 5 minutes. Remove from heat and set aside.
  • Vinaigrette: Using an immersion blender or regular blender, add all the ingredients for the vinaigrette and blend until smooth. You can also hand whisk until all ingredients have been combined. Taste and adjust seasoning if necessary. Store in refrigerator.
  • In a large bowl, assemble all the ingredients together. If not eating right away, wait to dress the salad with the vinaigrette or else the greens will wilt.
