I have not tried this recipe. I got this recipe from Ossg Recipes. Orange Jello and Vanilla pudding is great. Strawberry jello and banana pudding is also good.

1/3 ounce sugar-free jello (1 package)
1/4 cup boiling water
1 3/4 cups cold milk
1 ounce sugar-free instant pudding mix (1 package)
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, dissolve jello in water.
  • In another mixing bowl beat milk and instant pudding for 2 minutes. Slowly.
  • add jello mixture and vanilla and mix well.
  • Pour into a bowl of individual dish and chill until firm and cold.

1 box sugar-free white chocolate pudding mix
1 (8 ounce) container fat-free cool whip

Steps:

  • Mix Jell-O with 1 cup boiling water.
  • Dissolve Jell-O completely and add 1 cup cold water and let it sit for 5 minutes.
  • Using electric beater, beat in pudding mix until well combined.
  • Fold in Cool Whip.
  • Chill and serve until set.
  • 4 servings (1 cup each).

Steps:

  • Preheat oven to 350 degrees.
  • In one bowl, mix together dry pudding mix, unsweetened cocoa, Splenda, and oat flour. Add the milk and whisk 2-3 minutes until pudding mixture thickens.
  • In another bowl, beat egg whites till they start to become foamy. Add the cream of tartar, continue beating until whites "peak.".
  • Fold together egg whites and puddig, pour mousse into 4 individual cups, and bake for 13 minutes.
  • 100 calories per serving! Garnish with fruit & sugar-free fat-free whipped topping if desired.

1/2 cup heavy whipping cream, whipped to stiff peaks with
1/4 cup confectioners' sugar (1 cup total volume)
1 (4 ounce) box fat-free instant vanilla pudding mix
1/2 cup orange sugar-free Kool-Aid mix, warmed (can also use OJ or Tang)
1 navel orange, cut in half and sliced (optional)
mint leaf (optional)

Steps:

  • Microwave the cream cheese for 20-30 seconds and stir (should be very soft and room temperature). Blend with whipped cream by gently folding or stirring. Set aside.
  • In a seperate bowl, thoroughly mix pudding with the warmed orange drink to dissolve. Let sit for a few minutes, then mix again. Gently fold or stir in the cream cheese mixture a little at a time (it's great to get a swirl like effect).
  • Cover top of mousse with plastic wrap and chill for at least 4 hours. Scoop into dessert or champagne glasses using a large melon baller and garnish with fresh orange slices on the side of the glasses and top with a mint leaf.

2 tablespoons water
2 teaspoons unflavored gelatin
1 cup fat-free half and half
4 tablespoons sugar
1 tablespoon finely grated lemon peel
2 large egg whites
1/8 teaspoon cream of tartar

Steps:

  • Pour 2 tablespoons water into small saucepan; sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes. Stir over very low heat just until gelatin dissolves, about 1 minute. Stir in fat-free half and half, 2 tablespoons sugar, and grated lemon peel. Stir over very low heat until sugar dissolves, about 2 minutes (do not boil). Transfer gelatin mixture to large bowl. Set bowl in another large bowl filled halfway with ice water; stir until mixture is cool, about 5 minutes.
  • Using electric mixer, beat egg whites with cream of tartar in medium bowl until soft peaks form. Gradually add 2 tablespoons sugar and beat until stiff but not dry. Fold egg whites into gelatin mixture. Divide mousse among 4 wineglasses. Chill until mousse is softly set, at least 4 hours and up to 1 day. Serve mousse cold.

  • Dissolve the gelatin in 1 C boiling water.
  • Add 1 C cold water and let set up for 5 minutes.
  • Using an electric mixer, beat dry pudding mix into the jello until well blended. May have to set up for 5 minutes in refrigerator.
  • Fold in mandarin oranges and cool whip.
  • Chill either in a bowl or in individual mousse dishes.
