Sugar Free Kaju Katli (ready in under 15 min) image

This is an easy kaju katli recipe that is sugar free. Raw honey is added to freshly made cashew butter and molded into rhombus shaped katlis. Even though this sweet will be ready within 15 minutes, this dessert is sure to dazzle your guests.

2 cups Broken Cashews
2 tbsp Raw Honey
1/8 tsp oil/ghee ((to butter the plate))

Steps:

  • Place 2 cups of broken cashews on a tray and roast in a 350F (180C) for 5-6 minutes. You could also dry roast in a pan instead till you get a nice aroma and slight browning of the nuts.The time listed above is for broken cashews. If you have bigger cashews, you may need to put in the oven for a few more minutes + stirring at the half way mark. Use your judgement. You want to get a nice browning without any burning.
  • Let the cashews cool for a few minutes. Otherwise they will sweat in the food processor. When they are cool enough to handle, add them to the food processor and let it run.You run it past the powder point, past the crumbles point, past the doughy stage and until the butter stage. Open the processor every few minutes to keep scraping the sides and mixing it together. Run it till you get a pasty butter stage.
  • Add 2 tbsps of raw honey to the cashew butter and let the food processor run. The batter will now come together like a ball.
  • Add the ball to a buttered plate and flatten the dough out into a square. Flatten until you reach the desired thickness.
  • Cut the squares into the traditional rhomboid shaped katlis. Serve!!Store in refrigerator to avoid oils from releasing or in the freezer for a firmer bite. Enjoy!!
