SUGAR COOKIE CUPS WITH CREAM CHEESE FILLING



Sugar Cookie Cups with Cream Cheese Filling image

If you can't decide between cookies or cheesecake now you don't have to. This would be good with chocolate chip or peanut butter cookie cups also.

½ cup butter
½ cup white sugar, or more as needed, divided
1 egg
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
2 tablespoons all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 (8 ounce) package cream cheese
¼ cup white sugar
2 tablespoons white sugar
1 egg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 cupcake cups with paper liners.
  • Beat butter, sugar, egg, and vanilla extract together using an electric mixer in a mixing bowl until smooth.
  • Sift 1 1/2 cups plus 2 tablespoons flour, baking powder, baking soda, and salt together in a separate bowl. Mix into butter mixture until combined.
  • Place 1 teaspoon of batter into each of the prepared cupcake cups. Sprinkle each cup with a little sugar.
  • Bake in the preheated oven until golden, about 10 minutes. Remove from the oven and indent each cup using a teaspoon-sized measuring spoon. Let cool 10 minutes.
  • While cookie cups cool, beat cream cheese, 1/4 cup plus 2 tablespoons sugar, and egg together using an electric mixer in a mixing bowl until smooth. Place a little more than 1 teaspoon of filling into each cookie cup. Sprinkle with sugar.
  • Bake in the preheated oven until filling sets, 10 to 15 minutes more. Let cool completely before serving.

1 pouch (17.5 oz) Betty Crocker™ Cookie Mix Sugar
Flour, butter and egg called for on cookie mix pouch for cutout cookies
36 Twix™ unwrapped bites (from two 7-oz bags)
10 caramels, unwrapped (from 11-oz bag)
1 tablespoon heavy whipping cream
Coarse sea salt, if desired

Steps:

  • Heat oven to 375°F. In large bowl, mix cookie mix, flour, butter and egg with spoon until soft dough forms. Shape into 36 (1 1/4-inch) balls. Place in 36 ungreased mini muffin cups. Press indentation in center of each with end of wooden spoon.
  • Bake 8 to 10 minutes or until light golden brown. Immediately repeat indentation into center of each cookie with end of clean wooden spoon to create 1-inch opening, cleaning off end with paper towel when needed. Press 1 Twix™ in center of each cookie cup. Cool in pans 10 minutes. Remove to cooling rack. Cool completely, at least 30 minutes.
  • In small microwavable bowl, heat caramels and whipping cream uncovered on High 30 to 60 seconds, stirring once, until caramels are melted. Drizzle over each cookie cup. Sprinkle with sea salt. Let stand about 2 hours or until set. Store in airtight container at room temperature.

Steps:

  • In a large mixing bowl, cream together butter and sugar until fluffy.
  • Beat in egg and vanilla, then gradually beat in dry ingredients until combined.

Steps:

  • Heat oven to 375°F. Spray 36 mini muffin cups with cooking spray.
  • In large bowl, mix cookie mix, softened butter and egg with spoon until soft dough forms. Stir in 1/4 cup candy sprinkles. Shape into 36 (1 1/4-inch) balls. Place in mini muffin cups. Press indentation in center of each with end of wooden spoon.

Insert tip into indentation in each cookie cup. Squeeze bag to fill opening, and pipe about 2 heaping teaspoons per cookie cup. Sprinkle with remaining 2 teaspoons sprinkles. Store loosely covered at room temperature.

24 tablespoons unsalted butter, softened
1 ½ cups granulated sugar
3 tablespoons cream cheese, softened
1 large egg
2 large egg yolks
1 teaspoon McCormick® vanilla extract
½ teaspoon McCormick® almond extract
1 teaspoon kosher salt
3 ½ cups all purpose flour, plus more for dusting
½ teaspoon baking powder
2 teaspoons cream of tartar
4 cups powdered sugar
½ teaspoon kosher salt
1 teaspoon vanilla extract
gel food coloring, of your choice
water, as needed
¼ cup pasteurized egg white

Steps:

  • Make the cookie dough: In a large bowl, cream together the butter, sugar, and cream cheese with an electric hand mixer on high speed for about 5 minutes, until fluffy and the sugar is mostly dissolved. Scrape down the bowl as needed to evenly beat the mixture.
  • Add the egg, egg yolks, vanilla, and almond extract and mix well, scraping down the sides of the bowl.
  • Add the salt, then sift the flour, baking powder, and cream of tartar into the bowl and fold to incorporate some of the flour. Then beat on low speed, just until incorporated and the dough comes together.
  • Shape the dough into a flat disc and wrap tightly in plastic wrap. Chill in the refrigerator for at least 2 hours, or up to 3-4 days.
  • When ready to bake the cookies, preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
  • Remove the dough from the fridge and let sit at room temperature for a few minutes to soften slightly.
  • On a lightly floured surface, roll out the cookie dough with a rolling pin to ¼-inch (6mm) thick.
  • Dip cookie cutters of your choice in some extra flour and cut out shapes from the dough. Gather any excess dough into a ball and chill in the fridge to firm, then re-roll and cut out more cookies. Place the cookies on the prepared baking sheet and chill for at least 20 minutes to ensure they hold their shapes.
  • Bake the cookies for 10-12 minutes, or until the edges just barely start to turn golden brown. Cool completely on a wire rack before decorating with royal icing or frosting.
  • To make the royal icing, sift the powdered sugar into a large bowl and add the salt. On one side of the bowl, add the vanilla and egg whites.
  • Where you added the liquids, begin whisking the powdered sugar into the liquids, gathering a bit more as you whisk to prevent lumps from forming, until all of the powdered sugar is incorporated. Add food coloring, if desired, and whisk to incorporate. You can divide the icing into smaller bowls to make more than one color. At this point, the icing should be a good consistency for piping borders. If you'd like the frosting to be looser to flood or dip your cookies, add a few tablespoons of water, 1 tablespoon at a time, until it reaches your desired consistency.
  • Decorate the cookies as desired.
