1/2 cup margarine
1/4 cup unsweetened cocoa powder
2 eggs
1 cup Splenda granular (sucralose artificial sweetener)
3/4 cup all-purpose flour
1/8 teaspoon salt
1/4 cup skim milk
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350°.
  • Spray Pam and flour an 8x8-inch pan.
  • In a small saucepan, over medium heat, melt margarine and cocoa together, stirring occasionally until smooth.
  • Remove from heat and set aside to cool.
  • In a large bowl, beat eggs until frothy.
  • Stir in sucrolose sugar.
  • Combine the flour and salt; stir into the egg mixture then mix in the cocoa and margarine.
  • Finally stir in the 1/4 cup of milk and if desired, the walnuts.
  • Pour into the prepared pan bake for 25-30 minutes in the preheated oven.
  • Stick in a toothpick--when it comes out clean its done.
  • Let cool and then cut into squares.

1/3 cup chopped walnuts
3 tablespoons unsweetened apple juice concentrate
1 teaspoon baking powder
1/3 cup cocoa
2 cups whole wheat flour
1 1/3 cups unsweetened apple juice concentrate
1/2 cup oil
1 egg white
1 medium banana, mashed

Steps:

  • Soak walnuts in 3 tablespoons apple juice concentrate. Sift baking powder and cocoa into bowl with flour and make a well. Measure 1 1/3 cups apple juice concentrate, oil, egg white and banana into measuring cup and add all at once to dry ingredients and mix.
  • Spread in 13 x 9 inch pan sprayed with nonstick spray. Sprinkle with walnuts on batter evenly and smooth nuts into batter with back of spoon. Bake at 350 degrees for 30 minutes. Cover when slightly warm. Cut in 24 servings and store in freezer to keep fresh. Yield 24 brownies.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Mix melted butter spread, sweetener, cocoa powder, vanilla extract, eggs, flour, baking powder, and salt together in a large bowl. Pour into the prepared pan.

2 eggs
1 cup granular sucrolose sweetener (such as Splenda®)
¾ cup all-purpose flour
⅛ teaspoon salt
¼ cup skim milk
½ cup chopped walnuts
1 (1.4 ounce) package sugar free, chocolate fudge flavored instant pudding
1 cup skim milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
  • In a small saucepan over medium heat, melt margarine and cocoa together, stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, beat eggs until frothy. Stir in the sucrolose sweetener. Combine the flour and salt; stir into the egg mixture then mix in the cocoa and margarine. Finally stir in the 1/4 cup of milk and if desired, the walnuts. Pour into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center, comes out clean. To make frosting, Mix together the sugar free chocolate pudding mix and 1 cup skim milk using an electric mixer. Mix for about two minutes or until thick. Spread over cooled brownies before cutting into squares.
