Homemade Raspberry Apricot Jam image

Tart apricots temper raspberry's richness, enhancing the flavor of each. This jam is sure to become a family favorite.

7 cups raspberries
2 cups chopped apricots
6 cups sugar

Steps:

  • Add the apricots, raspberries, and sugar to a large Dutch oven.
  • TIP: At this point rub some butter around the top of the Dutch oven. The fat (butter) keeps the jam from boiling over. Boiled over jam is a real mess!
  • Slowly bring the mixture to a boil over medium heat (it took me about 30 minutes to get to this point), stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly (stirring often to prevent sticking) until the jam reaches the gelling point. For me this took about 17 more minutes.
  • TIP: Watch out for spitting. The closer the jam gets to the gelling point, the further it will spit - and it's hot!
  • Use the plate method to check for gelling or use a digital thermometer. Gelling is reached at 220 degrees or 8 degrees above the boiling point of water.
  • Spoon the hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel, top the jars with a lid and a lid ring.
  • Process the jars in a water bath canner for 15 minutes. Remove and let cool completely.

6 cups prepared fruit (buy about 2 1/2 lb. fully ripe apricots and 1-1/2 fully ripe medium pineapples)
1 tsp. produce protector
4 cups sugar, measured into separate bowl, divided
1 box SURE-JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
1/2 tsp. butter or margarine

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Pit unpeeled apricots; finely chop or grind fruit. Measure exactly 4 cups prepared apricots into 6- or 8-qt. stockpot. Peel and core pineapples; finely chop or grind fruit. Measure exactly 2 cups prepared pineapple into stockpot with apricots; stir until well blended. Add fruit protector; mix well.
  • Mix 1/4 cup of the sugar and the pectin in small bowl. Add to fruit mixture in stockpot; mix well. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in remaining 3-3/4 cups sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.) Jam sets slowly and may take up to 1 week to set completely.

I developed this recipe for a friend who has diabetes. She complained that most diabetic jams had sweeteners added leaving a strange aftertaste. Fresh fruit, when in season, is naturally sweet. To make jam, you don't need to add sugar. A little agar-agar and lemon will help the cooked fruit thicken to make a spreadable fruit for toast, sandwiches, or cheeses. It will last up to 2 weeks in the refrigerator. This recipe will work with all forest fruits.

2 tablespoons lemon juice
½ teaspoon agar-agar powder
4 cups fresh raspberries

Steps:

  • Combine lemon juice and agar-agar powder in a small bowl. Set aside to thicken for 5 minutes.
  • Heat raspberries in a saucepan over medium heat until raspberries start to break up, 5 to 10 minutes. Use a masher to crush raspberries into a smooth consistency, but do not liquefy. Turn off the heat.
  • Stir thickened lemon-agar-agar paste into the saucepan with the raspberries and mix well. Allow to cool to room temperature, about 30 minutes. Pour into an airtight container and refrigerate until set, about 2 hours.

12 ounces fresh red raspberries
6 ounces dried apricots finely chopped

Steps:

  • To make jam: In deep, heavy, nonreactive 4-quart saucepan, combine juice, half of raspberries and all apricot pieces. Simmer over medium-low heat for 10 minutes, or until almost all liquid has evaporated. Add remaining raspberries. Reduce heat. Cover pan. Stew gently for 5 minutes. Gently shake pan to determine moisture level, but do not stir. Mixture is ready when, again, almost all moisture is evaporated, in about 5 minutes. To process jam: Fill hot, sterilized jars to within 1/8-inch of rim, taking care to keep soft, whole raspberries intact. Wipe rims clean. Attach new lids. Screw caps on tightly. Process in boiling-water bath, submerged by 1 inch, for 10 minutes. This recipe yields 3 cups.
