CHICKEN WINGS WITH SUICIDE SAUCE
Chicken wings are a classic favorite, and when crispy-baked wings are paired with a sweet-spicy suicide sauce, they make for an unforgettable dish.

Steps:
- Preheat the oven to 425 degrees F. Trim the tips from the wings and separate the wings into drummies and flappers. Place the wings on a broiler pan. Place the pan in the oven and bake the wings at 425 degrees F for 45 minutes or until crispy, turning once during the cooking time. Meanwhile, combine the ketchup, water, brown sugar, hot sauce, Worcestershire sauce, garlic powder, and chili powder in a saucepan over medium heat. Cook, stirring frequently, until the brown sugar dissolves. When the wings are crispy, transfer them to a baking dish or crock pot. Pour the sauce over the wings. If baking in the oven, reduce the oven temperature to 350 degrees F and bake the wings for 1 hour. If cooking in the crock pot, cover the crock pot and cook on low heat for 2-4 hours. Serve the wings with ranch or blue cheese dressing, for dipping.

- NOT FINISHED - WORK IN PROGRESS The Wings: Chop off the tip of each chicken wings, and discard it. Chop the wing in half (cutting at the joint) to make 2 pieces. Season lightly. Heat the oil over high heat in a deep skillet, Dutch oven, or deep-fat fryer until it starts to pop and sizzle (around 400 degrees F). Add the chicken wings and cook until they're golden and crisp, stirring or shaking occasionally. Season again half way through frying. When done, remove them to drain on paper towels. Sauce: Blend togeter.... Melt the butter or margarine over medium heat in a heavy saucepan, add the blended mixture and the 1 tablespoon of wine vinegar. Stir well and remove from the flame immediately. Place the chicken on a warm serving platter, pour the sauce on top, and serve.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
- For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
- Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

This blazing hot wing recipe is an alternative to deep-fried wings. They are baked instead of fried and stay juicy rather than crisp. I started making these about 5 years ago and they were an instant hit. I am always asked to bring the wings for all the parties we are invited to now.

- Preheat oven to 400 degrees F (200 degrees C). Arrange frozen chicken wings in a single layer in a shallow baking dish.
- Bake in the preheated oven for 25 minutes, then flip wings. Continue baking until the skin is crispy and meat is no longer pink at the bone, about 20 minutes more.

- Preheat the oven to 375 degrees. Place the chicken wings in a large bowl. Add the eggs and toss to coat. Line a large rimmed baking sheet with baking parchment or coat the pan with oil.

- Combine all sauce ingredients in a saucepan set over high heat, bring to a boil, reduce heat and simmer 20 minutes stirring frequently.
- Rinse wings and pat dry and place wings in a sealable plastic bag. Reserve 1 cup of sauce, and pour the rest of sauce into the bag. Toss to ensure chicken is evenly coated.
- Marinate in the refrigerator for 4 hours.
- Once chicken is almost done marinating, preheat barbeque to medium heat 350°F (176°C). Oil grill to prevent sticking.
- Place wings on the grill and cook 10-15 minutes per side or until crispy and cooked all the way through.
- Remove and serve with extra sauce.
