3-1/4 cups uncooked mini penne pasta
1 package (12 ounces) fully cooked roasted garlic chicken sausage links or flavor of your choice
4 medium tomatoes, chopped (about 3 cups)
1 round (8 ounces) Brie cheese, cubed
1 cup shredded Parmesan cheese
1 cup loosely packed basil leaves, thinly sliced
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil

Steps:

  • Cook pasta according to package directions. Meanwhile, grill sausages, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 7-9 minutes, turning occasionally. Remove sausages from grill; cut into slices., Drain pasta; transfer to a large bowl. Stir in sausage, tomatoes, cheeses, basil, garlic, salt and pepper. Drizzle with oil; toss to coat.

This is a perfect summer dish when the vegetables are in season and you have leftover grilled chicken and some bacon in the fridge.

¾ pound penne pasta
4 strips bacon, diced into bite-sized pieces
½ cup diced onion
1 (10 ounce) package sliced fresh mushrooms
2 cloves minced garlic
1 pound grilled chicken, cut into bite-sized pieces
3 small zucchini, halved lengthwise and cut into 1/2-inch-thick slices
1 pint grape tomatoes, halved
½ cup grated Parmesan cheese
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes. Drain bacon slices on paper towels. Reserve 2 tablespoons bacon grease in the skillet.
  • Add onion to the skillet over medium heat. Cook until golden, 5 to 10 minutes. Add mushrooms and garlic and cook until browned, about 10 minutes more. Add grilled chicken and zucchini to the skillet and cook until zucchini are cooked through, yet still firm, 5 to 10 minutes more.
  • Remove skillet from heat, add tomatoes, and let sit until tomatoes are warm, about 5 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and transfer to a large serving bowl.
  • Combine vegetable mixture with drained pasta. Stir in Parmesan cheese and season with black pepper.

1 lb penne pasta
1 1/2 lbs broccoli, stems peeled and cut into 1/2 inch thick rounds and cut into bite size florets
2 teaspoons olive oil
12 ounces fully cooked smoked chicken sausage, with garlic and sun-dried tomatoes,thawed if frozen,and cut into 1/2 inch thick rounds
1 tablespoon minced garlic
14 1/2 ounces canned diced tomatoes, with balsamic vinegar,basil and olive oil
grated parmesan cheese

Steps:

  • Bring a large salted pot of water to a boil.
  • Add penne pasta and cook for 7 minutes, stirring often.
  • Stir in broccoli and cook for 5 minutes until pasta is al dente.
  • In a large skillet, heat oil over medium heat.
  • Add sausage and garlic and cook, stirring often, 3 to 4 minute until sausage is lightly browned.
  • Stir tomatoes into skillet and cook 1 to 2 minutes until heated through.
  • Remove 1/2 cup cooking water from pasta pot and add to skillet.
  • Drain pasta and add to skillet, mixing to coat.
  • Pour into serving dish and sprinkle with parmesan cheese.
