Back when the Brady Bunch wasn't a rerun and families still gathered around a table around 6PM and Mom actually cooked, dishes like this were placed in the center of the table at least once a week. The ultimate 70's casserole, this is tried and true bell bottom food!

1 (9 inch) unbaked pie shells, thawed if frozen
1 egg
1 lb lean ground beef
1 (7 ounce) can mexicorn, drained
1/2 cup saltine crumbs
1/2 cup chili sauce (cocktail will work in a pinch)
2 tablespoons chili pepper flakes (some like it hot...)
1 tablespoon instant minced onion
1/2 teaspoon oregano
6 black olives, sliced (optional)
6 slices bacon, fried crisp and crumbled (optional)
1 egg, slightly beaten
2 tablespoons milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 425 degrees.
  • Beat the egg slightly in a mixing bowl. Add ground beef, corn, cracker crumbs, chili sauce, pepper flakes, onion, and oregano. Mix well. Press mixture firmly into the pastry-lined pie plate. Bake for 20-25 minutes.
  • Mix together in a bowl the topping ingredients. Spread on the filling. Top with olives and bacon.
  • Bake an additional 5 minutes or until the cheese melts.
  • Let stand 10 minutes before serving.

1 lb ground beef
3/4 cup finely chopped onion
1 1/2 teaspoons chili powder
1 teaspoon salt, divided
1/2 teaspoon ground cumin
1/8 teaspoon pepper
1/4 cup drained canned mild green pepper, cut into thin strips
1 cup flour
1 1/2 teaspoons baking powder
2 tablespoons oil
1 1/2 cups skim milk
3 eggs
4 ounces cheddar cheese or 4 ounces monterey jack cheese, shredded
diced tomato, and
shredded lettuce
chili powder
cumin
drained chili pepper, can be replaced with 1/3 c salsa, sauce for a juicier mixture

Steps:

  • Brown hamburger and onion until mixture is cooked through. Mix in chili powder, 1/2 tsp salt, pepper, green peppers OR the salsa. Mix well.
  • Spray a 9 x 9 square pan with nonstick cooking spread; spread mixture evenly in bottom of pan.
  • In medium mixing bowl, combine the remaining ingredients, mixing well. Beat until batter is smooth; pour over meat mixture.
  • Bake 35 - 40 minutes, 350°F Sprinkle with cheese, bake another 3-4 minutes.
  • Cut in squares, top with tomatoes, shredded lettuce, sour cream (if desired).

My mother found this recipe in a Pillsbury Bake-Off cookbook in the mid 1960's. It is sooooo good! Our family always liked it with more heat, so we sometimes added jalepeno peppers or served it with salsa on the side, but it's good as is.

6 slices bacon
1 lb lean ground beef
1 (8 ounce) can whole kernel corn, drained
1/2 cup finely chopped green bell peppers or 1/2 cup red bell pepper
1/2 cup finely chopped onion
1/4 cup cornmeal
1/2 teaspoon oregano
1/2 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
1 (8 ounce) can tomato sauce
1 egg
1/4 cup milk
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 1/2 cups shreadded cheddar cheese
8 stuffed green olives, sliced
1 cup flour
2 tablespoons cornmeal
1/2 cup firm bacon drippings or 1/2 cup shortening
3 -4 tablespoons ice water

Steps:

  • Preheat Oven to 425 degrees.
  • Fry the bacon until it is crisp and break it into pieces.
  • Put 1/2 cup of the bacon drippings in freezer and chill until firm.
  • Brown the ground beef in a large skillet until it is brown.
  • Drain off any grease.
  • Add corn, bell pepper, onion, corn meal, oregano, chili powder, 1/2 teaspoon salt, pepper and the tomato sauce.
  • Allow meat mixture to cool while you prepare the pie crust.
  • PIE CRUST:.
  • Combine the flour and cornmeal.
  • Cut in the bacon drippings or shortening until the mixture is the size of small peas.
  • Add the ice water a little at a time while stirring with a fork until the dough holds together.
  • Roll into a ball and flatten to 1/2 inch.
  • Roll out on a floured surface and place in a 9 inch pie plate.
  • Flute the edge.
  • Pour the meat mixture into the prepared pie crust.
  • Bake in a 425 degree oven for 25 minutes.
  • While pie is baking, prepare topping.
  • TOPPING:.
  • Combine egg, milk, 1/2 teaspoon salt, mustard, Worchestershire Sauce and cheese.
  • Spread on the pie.
  • Top with crumbled bacon and sliced olives.
  • Put back in oven for 5 minutes or until the cheese melts.
  • Remove from the oven and let it stand for 10 minutes before serving.

1 cup all purpose or self rising flour
2 tablespoons corn meal
1/3 cup bacon drippings or other shotrtening

  • 1.OVEN 425 F. 2. Fry bacon until crisp; break into large pieces. Chill 1/3 cup drippings until firm. Brown ground beef in large skillet; drain. Stir in corn, green pepper , onion ,corn meal, oregano, chili powder, 1/2 teaspoon salt, pepper and tomatoe sauce. Prepare Pie Crust. Place meat mixture in pastry-lined pan. 2/3 cup uncooked long grain rice
1/3 cup sliced ripe olives
1 teaspoon chili powder
1/2 teaspoon salt
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 375°. In a large skillet coated with cooking spray, cook turkey, onions and pepper over medium heat until meat is no longer pink and vegetables are tender, breaking up turkey into crumbles, 6-8 minutes. Add garlic; cook 1 minute longer. Drain. Stir in beans, tomatoes, water, rice, olives, chili powder and salt., Transfer to an 11x7-in. baking dish coated with cooking spray. Bake, covered, until rice is tender, 50-55 minutes. Sprinkle with cheese. Bake, uncovered, until cheese is melted, about 5 minutes longer.

15 ounces Rotel Tomatoes, extra hot preferred
12 corn tortillas
15 ounces ranch style beans
1 lb Velveeta cheese, sliced
15 ounces cream of chicken soup

Steps:

  • Brown meat with onions. Drain.
  • Put back in skillet.
  • Add tomatoes.
  • In a 9X13" pan layer 1/2 of tortillas (may cut to fit), meat, beans, and cheese. Repeat.
  • Top with soup.
  • Bake at 350 degrees for 45 minutes.

Steps:

  • Brown meat with onion and pepper.
  • Add tomatoes, salt and pepper.
  • Arrange in a 9x13 dish, one layer of tortillas, meat, beans, and cheese.
  • Repeat layers.
  • Top with soup.
