Sunbutter® Cookies (Top 8 Allergen-Free) image

My son has multiple food allergies, so making healthier snacks that are both good and safe is always tricky. I hope you will love this sweet, chewy cookie. It is nutritious, kid tested, and has the wonderful consistency of a no-bake cookie. These cookies are gluten free, nut free, dairy free, and egg free.

1 teaspoon vegetable oil, or as needed
1 cup sunflower seed spread (such as SunButter®)
¾ cup white sugar
⅔ cup flaxseed meal
6 tablespoons applesauce, or as needed
½ cup dairy-free chocolate chips

Steps:

Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
Combine sunflower seed butter, sugar, and flax meal in a bowl to form a crumbly mixture. Stir in applesauce, 1 tablespoon at a time, until dough is soft and moist but stiff enough to hold some shape. Fold in chocolate chips. Drop spoonfuls of the dough onto the cookie sheet.
Bake in the preheated oven until cookies are golden brown on the bottoms, 10 to 12 minutes. Allow to cool in the pan for 2 minutes before removing to a cooling rack.

Mix in the vanilla and flax/water mixture. In a separate bowl, combine the baking soda, baking powder, and flour. Add to the sunflower butter mixture and mix well. Refrigerate dough for 30 minutes.
Put sugar in a bowl. Roll chilled dough into balls (about 1" in diameter) and roll in sugar. Place balls on an ungreased cookie sheet. Using a fork, flatten the balls making a criss-cross pattern. Bake in 350° oven for 10-12 minutes. Let cool slightly on the cookie sheet, then transfer to a cooling rack.
