SUNSHINE BAKED EGGS
My son-in-law loves to cook, and he experimented with my old standby recipe for eggs by adding cottage cheese and crushed pineapple. It turned out to be so delicious we make eggs like this all the time! -Jane Zielinski, Rotterdam Junction, New York

- In a large skillet, cook bacon over medium heat until crisp. With a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. Crumble bacon. , In a large bowl, lightly beat eggs; add bacon and drippings, cottage cheese, pineapple and vanilla. Pour into greased 11x7-in. baking dish. , Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes. If desired, sprinkle with parsley.

SUNSHINE CASSEROLE
I have used this recipe for years, mostly for big dinners or potlucks. I often get requests for the recipe; it's easy to make as well as delicious. Even people who don't like vegetables discover that this dish is pretty tasty! I love finding new recipes to try in cookbooks - this one's a real winner.

GOOD MORNING SUNSHINE EGGS
Quick and easy breakfast dish that I've used for a long time. A friend who owns a B & B gave it to me. FOOTNOTE: Revised 1/22/07 to include size of bread cubes and oven temp--sorry about that Bergy! :)

Steps:
- In a 13 X 9 lightly greased baking dish, place your bread cubes evenly on the bottom.
- In a medium bowl, whip the eggs together with the milk until well beaten.
- Stir in the sausage and cheese and pour over the bread crumbs.
- Cover with foil and bake at 325 degrees for 20 minutes.
- Remove foil and bake an additional 15 minutes.
- I lightly sprinkle more shredded cheese on top when this comes out of the oven.

SUNSHINE TOAST IN THE OVEN
From a kids' cookbook and the house specialty of our 9 yr old daughter, this is an oven-baked variation on eggs cooked in the middle of toast. We like it because it's easy enough that the girls can do it on their own (no spattering grease in a frying pan) and because we can do up to a dozen at a time for sleep-overs and such (6 slices fit on an average cookie sheet). The girls have fun picking out which cookie cutters to use for their toast, especially when they can match them to a holiday/season (trees, stars, & angels in the winter, bunnies and flowers in the spring, etc). Bake the cutouts alongside for fun little munchie toast shapes. Don't use very large eggs, though, or they will overrun the toast!

Steps:
- Grease a cookie sheet with margarine or veg spray (we use sheets with raised edges, just in case the egg runs under the toast).
- Butter the top of the slice of bread and place butter-side up on the cookie sheet.
- Choose a large cookie cutter in desired shape and press down hard in the center of the bread.
- Remove shape from center of bread, place alongside on cookie sheet, butter-side up.
- Crack egg into a small bowl or saucer and gently slide into the hole in the center of the bread.
- Bake approx 7 minutes on the top rack of 400F oven (or longer to desired doneness).
- Carefully remove to plate with spatula and serve with cutout shapes alongside.

- Preheat the oven to 350°F. Remove the stems from the chard leaves and tear the leaves into bite-sized pieces. Chop the remaining stems into 1/2-inch pieces.
- Heat 1 tablespoon of the olive oil in a sauté pan over medium heat. Add the scallions, chard stems, and salt, and sauté until the scallions are translucent, about four minutes. Stir in the garlic, red pepper flakes, and a pinch of salt and sauté for an additional 30 seconds, then stir in the chard leaves and another pinch of salt; cook until tender, another minute or two. Remove from the heat and stir in the nutmeg. Set aside.
- Lightly grease four 1-cup ramekins with the remaining olive oil. For each ramekin, spoon in one-fourth of the chard mixture (don’t pack it in too tightly), then sprinkle on one-fourth of the cheese, if using. Gently crack one egg on top of the cheese, then sprinkle with the tomatoes, olives, and a pinch of salt evenly into the four ramekins.
- Put the ramekins on a baking sheet, place in the oven, and bake for 20 to 25 minutes, until the egg whites are set and opaque but the yolk is still runny. Remove from the oven and let cool for three minutes. Sprinkle with the herbs to garnish. Serve in the ramekins or loosen with a knife and transfer to a plate.
