SUNSHINE COAST HOMEMADE GRANOLA
My girlfriend Stephanie from British Columbia's Sunshine Coast gave this recipe to me. I'm posting it here so I can get the carb count for my diabetic son. Enjoy!

Steps:
- Preheat oven to 300*.
- In a large bowl mix all dry ingredients.
- Warm honey in microwave, mix in oil and vanilla.
- Pour over dry ingredients and stir well.
- Spread evenly on 2 or 3 baking sheets.
- Bake at 300* for 30 minutes, stir every 10 minutes.
- Spread on trays and cool.
- Mix in 1 cup raisins and 1 cup craisins if desired.
- Store in airtight container.

This is a great recipe for homemade granola. I make it weekly! Any dried fruit can be substituted for the raisins. I use dried cranberries in mine and it's fantastic!

- Preheat oven to 325 degrees F (165 degrees C).
- Mix oats, brown sugar, coconut, wheat germ, cinnamon, and nutmeg together in a large bowl. Stir water, oil, and vanilla extract into the oat mixture; spread onto a baking sheet.
- Bake in preheated oven, stirring every 15 minutes, until golden brown and crunchy, about 1 hour; transfer to a bowl. Stir raisins and almonds through the granola.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, stir together the oats, almonds, walnuts, pecans, sesame seeds, wheat germ, coconut and sunflower seeds. In a small pan over medium heat, stir together the oil and honey. Cook and stir until blended. You could also do this in a large measuring cup in the microwave, heating for about 2 minutes and 30 seconds. Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two cookie sheets.
- Bake for 20 minutes in the preheated oven, until the oats and nuts are toasted. Immediately after it comes out of the oven, stir in the raisins and dried cranberries. Let stand until cooled, and stir again to break up any large clusters. Store in an airtight container at room temperature for up to two weeks, but I guarantee it won't be around that long!

- Heat oven to 300°F (150°C). Line a half sheet pan (18 x 13 inches) with parchment paper and set aside.
- Combine the maple syrup, coconut oil, sea salt, cinnamon and vanilla extract in a small saucepan. Heat the mixture for 4-5 minutes over medium heat until warm (the coconut oil should be completely melted) but not simmering, whisking until evenly combined. Remove from heat.

- Spread the granola out evenly on the sheet pan and then gently press it down with a spatula. Bake for 25 minutes, then without stirring, remove the pan and rotate it 180° (so that it will cook evenly from front to back). Bake for 15-20 more minutes until the granola is lightly golden on top. Transfer the pan to a wire baking rack and let it cool completely. If the granola seems a bit loose when it comes out of the oven, don’t worry, it will dry and harden as it cools.
