LEMON CAKE MIX COOKIES

Steps:

• In a large bowl, mix well to combine cake mix, eggs, and vegetable oil.
• Place dough in the refrigerator for 30 minutes to chill.
• Preheat oven to 350 degrees. Line cookie sheets with silicone liners or parchment paper.
• Form dough into 1-inch balls. Roll in powdered sugar, if desired. Place dough balls on baking sheets at least 2 inches apart.
• Bake 10 to 12 minutes. Cool on cookie sheet for 3 minutes before transferring from cookie sheet to cooling rack to cool completely.

LEMON CAKE MIX COOKIES

Steps:

• Preheat the oven to 375 degrees Fahrenheit.
• In a large bowl, stir together cake mix, eggs, oil, and lemon extract until well-combined.
• In a separate bowl, pour powdered sugar.
• Drop a teaspoonful of cookie dough into the powdered sugar. Roll the dough around until completely covered.
• Place cookies on a cookie sheet.

LEMON CRINKLE CAKE MIX COOKIES RECIPE BY TASTY

Steps:

• Combine cake mix, oil, and eggs in a mixing bowl.
• Using an ice cream scoop or your hand, form golf ball-sized balls of cookie dough and transfer to a bowl of powdered sugar.
• Cover dough ball in powdered sugar and transfer to a parchment paper-lined baking sheet.

LEMONY SUNSHINE CUPCAKES

Steps:

• Preheat oven to 350 degrees F. Line 2 standard muffin tins with 16 foil cupcake liners; set aside.
• Place shortbread cookie crumbs, sugar, and melted butter in a medium bowl; stir until well combined; set aside.
• In the mixing bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and sour cream until smooth. Add eggs 1 at a time and mix just until combined. Scrape down sides of the bowl. Add vegetable oil, water, and the box of lemon pudding. Mix until combined. Add cake mix and beat on medium speed for 2 to 3 minutes. Batter will be on the thick side.
• Place a slightly heaping tablespoon of shortbread cookie crumb mixture into the bottom of each prepared muffin cup. Use your fingers or the bottom of a small glass to firmly pack crumbs into the bottom of each cupcake liner. Reserve remaining shortbread cookie crumb mixture for topping.
• Use a 1/4 cup spring loaded ice cream scoop and place a level scoop full of batter into each muffin cup.
• Load the lemon curd into a small sandwich size resealable bag, removing the air from the bag before sealing. Squeeze the curd to 1 corner of the bag and use scissors to snip a 1/4- inch piece from corner of bag; set aside.
• With a damp finger or the end of a wooden spoon dipped in water, make a shallow indentation into the center of each cupcake. Pipe 3/4 to 1 teaspoon lemon curd into each indentation. Sprinkle tops of cupcakes evenly with remaining shortbread cookie crumbs.
• Bake for 21 to 23 minutes, rotating pans halfway through baking, until edges of cupcakes are lightly golden brown.
• Serve cupcakes warm from the oven or at room temperature.

EASY CAKE MIX COOKIES- PERFECT LEMON COOKIE

Steps:

• Preheat oven to 350 degrees.
• Stir ingredients in medium mixing bowl until blended (best to do right before you are ready to bake them- they flatten out more if you let the batter set).
• Spoon onto 2 un-greased cookie sheets (allow some space in between, they spread...a melon baller works great for this step).
• Bake for 8-10 minutes (depends on which cake mix you use & the oven -- I start looking at them through the glass around 6.5 minutes -- they will get a dull/cracked appearance on top when done).
• Allow the cookies to cool on the pan, or wait 1-2 minutes before moving to cooling racks. Cookies will be soft/chewy.
• While lemon cookies are cooling, mix together the powdered sugar & lemon juice in a small bowl, add more powdered sugar for a stiffer glaze. Lightly brush or drizzle glaze onto warm cookies on the cooling rack.

MEMAW'S LEMON SUNSHINE CAKE

Steps:

• Preheat oven to 350 degrees F (175 degrees C).
• Grease and flour a 10-inch fluted tube pan (such as a Bundt®).
• Beat lemon cake mix, lemon pudding mix, white sugar, eggs, 1 cup peach nectar, and vegetable oil in a bowl with electric mixer on medium speed for 2 minutes.
• Pour batter into prepared cake pan.
• Bake in preheated oven until top of cake springs back when lightly pressed and a toothpick inserted into the middle of the cake comes out clean, about 50 minutes.
• Cool cake in the pan for 15 minutes before removing cake to finish cooling on rack.
• Mix confectioners' sugar, 1/4 cup peach nectar, lemon juice, and lemon peel in a bowl to make a smooth frosting.
• Place cake on a serving platter; poke holes in top of the cake with a fork. Pour frosting slowly over the cake, allowing frosting to soak into the holes and drizzle down the sides of the cake.

SUNSHINE LEMON POUND CAKE

Steps:

• Preheat oven to 325; generously spray a 12-cup bundt pan with cooking spray/baking spray; set aside.
• Mix all ingredients in large bowl.
• Beat with electric mixer on medium speed for 3 minutes.
• Pour into prepared pan.
• Bake 40-50 minutes or until toothpick inserted in center comes out clean.
• Remove from oven and let sit at least 30 minutes.
• Invert onto serving plate.
• Can be sliced warm but also cools very quickly.
