150 g rice noodles
250 g chicken breasts, cut into strips
2 tablespoons oil
2 garlic cloves, chopped
30 g courgettes, cut into strips
2 spring onions, cut into strips
1 green capsicum, cut into strips
20 g baby corn
30 g mange-touts peas
20 g carrots, cut into strips
1 tablespoon oyster sauce
2 tablespoons light soy sauce
salt
2 tablespoons chili sauce

Steps:

  • add noddles to pan of boiling water and leave to stand for 3 minutes.
  • heat in oil in a heavy pan or work.stirfry strips of chicken breast until golden.add the all vegetables and stirfry 4-5 minutes.
  • Add the oyster sauce, soy sauce ,chilli sauce ,salt and noddles.
  • Keep tossing in the wok.
  • serve hot.

Sliced zucchini, sweet onion, and diced tomatoes are stir-fried with garlic for a quick and easy Italian-tasting vegetable side dish. Goes great with grilled chicken breast, fish, or pasta. Ever since I have been making it, my husband can eat almost all of it in one sitting!

1 tablespoon olive oil
1 tablespoon minced garlic
1 large sweet onion, thinly sliced
2 medium zucchini, halved and sliced
1 (14.5 ounce) can diced tomatoes
1 pinch Italian seasoning, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Heat oil and garlic in a large skillet or wok over medium heat. Add onion and cook until almost translucent, about 5 minutes. Add zucchini and cook until zucchini is slightly crisp, but not mushy, stirring constantly, about 10 minutes. Add diced tomatoes and cook for 5 minutes more. Add Italian seasoning, salt, and pepper. Serve immediately.
