2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
2 tablespoons butter, melted
1 ½ teaspoons ground cinnamon, or as desired
1 teaspoon vanilla extract
cooking spray

Steps:

  • Stir milk and vinegar together in a bowl; set aside to 'sour' for about 5 minutes.
  • Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl. Whisk egg and butter into sour milk. Pour flour mixture into milk mixture and whisk until batter is smooth. Add cinnamon and vanilla extract to batter; mix well.
  • Heat a large skillet over medium heat and coat with cooking spray. Drop batter, 1/4 cup per pancake, onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

2 ½ tablespoons white sugar

  • Mix flour, sugar, baking powder, baking soda, and cinnamon together in a bowl.

1/4 cup skim cottage cheese
1 teaspoon vanilla
1/2 teaspoon nutmeg

  • Put all ingredients into a blender and blend.
  • Get your favorite griddle hot 400 deg.
  • I use pam to coat griddle. Pour batter onto griddle like normal pancakes.
  • Once cooked top them with sugar free maple syrup. mmmmm goood.

I got the recipe from my "Joy Of Cooking" Cookbook. They are so easy and are amazing. You can add fruit, cinnamon, chocolate chips, or whatever else you want to jazz them up. ENJOY!!! Cooking time is for each set of pancakes. You can freeze any leftover pancakes to re-heat later.

2 1/4 cups all-purpose flour
4 1/2 tablespoons sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt
2 1/4 cups milk
4 1/2 tablespoons melted butter
2 large eggs
3/4 teaspoon vanilla

Steps:

  • Prepare and preheat your griddle. I typically heat mine to 375 degrees.
  • You can also use a skillet on the stove.
  • Whisk the flour, sugar, baking powder and salt in a large bowl.
  • In another bowl, whisk together the milk, melted butter, eggs and vanilla.
  • Pour the wet ingredients over the dry ingredients and gently whisk them together, mixing just until combined. Batter should be lumpy.
  • Spoon 1/3 cup batter onto the griddle for each pancake, nudging the batter into rounds.
  • Cook until the top of each pancake is speckled with bubbles and some of the bubbles have popped open.
  • Once the bubbles start to pop, turn the pancakes over and cook until the underside is lightly browned.
  • Serve immediately or keep warm in a 200 degree oven while you finish cooking the rest of the pancakes.

My daughter's teacher called me at 5:00 on a Sunday, and asked if I could make these for their party Tuesday morning. *eyeroll* Of course I said yes. This is the recipe she gave me. It made approximately 35 cakes. The batter did not smell delicious, but the cakes are surprisingly tasty with butter and syrup. They would also be good with jam, or wrapped around a piece of sausage. The kids at school are supposed to eat these plain. I have a feeling they would rather have had Laura Bush's Cowboy Cookies! (they are wonderful!)

2 cups buttermilk
2 cups cornmeal, plus
4 tablespoons cornmeal
1 cup flour
2 eggs
4 tablespoons oil
6 teaspoons sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
milk (as needed for consistency of batter.)

Steps:

  • Mix all ingredients except for the regular milk in a bowl. Heat cakes, (about three tablespoon per cake) on griddle. Cakes are ready to turn when they bubble in the middle and puff out a bit. Cook both sides until golden.

I like to experiment with my food so I got a little creative with this one. Made it in my culinary arts class.

2 cups Bisquick
1 tablespoon cinnamon (or to taste)
2 tablespoons sugar (or to taste)
1/4 cup semi-sweet chocolate chips
2 teaspoons vanilla extract
1/4 cup unsalted macadamia nuts
egg
1/2 cup milk
butter

Steps:

  • Use the required amount of mix and eggs as shown on Bisquick box. Add all ingredients in a bowl and mix (adding milk slowly until batter is gooey).
  • Spread desired amount of butter on bottom of pan and let melt.
  • Pour a little bit of batter at a time and wait till the air bubbles rise to the top of the pancake and then flip.
  • Repeat till both sides are golden brown with little blackish cinnamon bits in them. Repeat till all batter is gone.
  • Enjoy.
