Super Easy Make Ahead Appetizer: Fig Compote and Cheese image

Found this Appetizer at an end of Year function what we went to in 2006 and it's so ridiculously EASY, but sophisticated and yummy to boot... Only two ingredients and they go sooo well together ! We had it served in individual glasses, so pop them in the fridge and forget about it until it's time to mingle with our guests. We had a variety of cheese 'sticks" : cumin, clove infused, old cheese, but any firm cheese will do perfectly. Serving size depends on how big your cheese sticks are and how much compote you like to put into your glasses. Since Figs are typically a very southern European fruit I will put this into ZWT Region: Spain.

215 g fig compote
200 g cheese (in a block)

Steps:

  • Spoon about a tablespoon of the Fig Compote neatly into the bottom of each small drinking glass.
  • Take the block of cheese and cut it into sticks about 10 cm (4 inches) long by 2.5cm (1 inch) wide and at least 1.5 cm (1/2 inch) so that the sticks don't break in half too easily.
  • Stand 3 cheese sticks in the glass in the compote so that each guest has an individual serving to dip and eat.
  • Refrigerate until needed. Circulate with your guests! Enjoy!

1 orange
1/2 lb black mission fig, chopped
1 teaspoon sugar
1/2 cup red wine
3 sprigs thyme, wrapped in
cheesecloth
1 cup water

Steps:

  • peel the orange and cut into sections over a bowl.
  • squeeze the sections to release the juice, add figs and sugar.
  • let it stand for 10 minutes in a medium saucepan, add the fruit and remaining ingredients.
  • bring to a boil, reduce heat to simmer and cook for 15 minutes until most of the liquid has evaporated, stirring occasionally.
  • discard the thyme and cool.

Not to spicy for those little ones. Freezes Great! Super easy to prepare, and everyone loves them.

1 lb cooked pork or 1 lb cooked chicken
16 ounces mild salsa
16 ounces refried beans (fat-free will work)
128 inches flour tortillas
1 lb four-cheese Mexican blend cheese

Steps:

  • Assembly and Baking Directions: Shred chicken (or crumble ground beef). You should have about 3 cups. In bowl combine chicken, salsa, beans, and cheese.
  • Place bag of tortillas in Microwave until warmed through.
  • Spread out tortillas individually on a clean dry surface.
  • Fill individual tortillas with 1/2 cup filling mixture.
  • Fold up bottom.
  • Fold in one side and squish it around the filling, and roll it up.
  • Freezing and Cooking Directions: Spread out chimi's on cookie sheet and flash freeze for about two hours.
  • Gather up frozen chimi's and place in gallon size freezer bag together.
  • Great for individual lunches.
  • Bake at 350 degrees for about 30-40 minute OR heat them in 1/4 inches deep oil in skillet for approximately 18 minute over med-LOW heat.
  • Turn them once and watch them carefully.
  • Serve with sour cream.

1/2 cup sugar
6 tablespoons water
2 tablespoons orange juice
1 teaspoon grated orange zest
8 fresh figs, peeled and halved
3 tablespoons Curacao (not the blue kind)

Steps:

  • In a saucepan over medium heat, add the sugar, water, orange juice, and orance zest; stir to combine.
  • Simmer for 5 minutes.
  • Add in the figs and cook for about 2 minutes or until soft, turn once.
  • Add curacao and stir to mix.
  • Cool and serve in sherbert dishes.
