SWEET POTATO SOUP (EASY RECIPE!)
This Roasted Sweet Potato Soup is velvety smooth and hearty, yet healthy and light. Garnished with funky gorgonzola, fresh thyme and crunchy walnuts, this warming soup packs tons of flavor!Recipe can be scaled up or down by using the slider if you hover your mouse over the number of Servings.

Steps:
- Preheat oven to 375 degrees F. Line 2 large rimmed baking sheets with non-stick aluminum foil for easy clean up. (SEE NOTES)
- Roast the potatoes: Spread the sweet potatoes evenly, in a single layer on baking sheets. Drizzle with 1/4 cup of the oil and honey. Season generously with salt and toss to coat. Roast, rotating pans from front to back and top to bottom half way through, for 25-35 minutes or until tender and lightly browned.
- Saute Onions + Aromatics: In a large pot, heat the remaining 2 tablespoons of oil over medium-high heat until shimmering. Add in the onion, garlic and a generous pinch of salt and pepper. Cook until just tender, about 3-4 minutes. Add in the ginger and thyme, and cook until fragrant, about 30 seconds.
- Add Potatoes + Stock: Add in the roasted sweet potatoes and stock. Increase the heat to high and bring to a boil. Immediately reduce to a simmer and cook for 10 minutes, or until the vegetables are cooked completely and very tender. Add in the orange juice and stir to combine.
- Puree: Using an immersion blender, or standing blender, blend the soup until smooth. Stir in the crème fraîche (if freezing skip this step - SEE NOTES). Taste and adjust for seasoning with salt.
- Serve: Ladle soup into serving bowls. Garnish with a dollop of crème fraiche and sprinkle with walnuts and gorgonzola. Enjoy!

SIMPLE SWEET POTATO SOUP
This delicious soup has only 6 ingredients. It was given to me by my boyfriend's mom who adapted it from another recipe. It can be as thick or thin as you like, and I like it quite thick. To dress it up when serving, drizzle some cream on top and float a lime twist or slice of lime on top. Delicious hot or cold.

Steps:
- Place potatoes and ginger in large saucepan. Pour in chicken stock and water, and bring to a boil over high heat. Reduce heat to medium low, cover, and simmer until the potatoes have softened, about 30 minutes.
- Puree potatoes and lime juice in a food processor, or with a hand blender until smooth. Return soup to saucepan and stir in milk or cream as desired; heat until warmed through.

SUPER EASY SWEET POTATO OR YAM SOUP
Steps:
- Microwave yam/sweet potato in saran wrap 6-8 minutes each OR bake 350° to 400° (176° to 204°) until soft, about 35-40 min
- Add all ingredients including potato to blender jar (see note)
- For Blendtec: (90oz Wildside Jar) Press the SOUP button
- For Vitamix and other variable speed blenders: (64oz jar) Start on variable Speed 1, turn the machine on and slowly increase to Speed 10/High. Blend for approximately 1.5 minutes.
- Pour into bowls and sprinkle sliced almonds and coriander.

- Put sweet potatoes into a large pot. Pour chicken broth over the sweet potatoes; bring to a boil, stir orange liqueur into the boiling broth, and cook until the potatoes are tender, about 25 minutes.
- Puree the sweet potatoes with the broth using an immersion blender until smooth.
- Stir half-and-half, nutmeg, ginger, cinnamon, and cayenne pepper into the pureed sweet potatoes; season with salt and pepper.

A family favorite that might of come from another family member???Seasonings can be adjusted to suit your taste. I like to let it set for a day before re-heating and serving.Cooling time not included...if you're in a rush and have a hand blender you don't have to cool. This can look special with a swirl of cream on top for those unexpected guests.

- Peel and cut sweet potatoes into 1'' cubes, set aside.
- In large saucepan, heat oil over medium heat.
- Add onion, garlic, ginger and curry paste.
- Cook, stirring occasionally for 3 minutes or until softened.
- Add sweet potatoes, stir for 1 min or until coated.
- Add broth and bring to boil.
- Reduce heat, cover and simmer 10 min or until potatoes are tender.

- Place a large soup pot on the stove over medium high heat. Add in olive oil and onion and saute until tender, about 7 minutes. Add in garlic and ginger and saute 1 minute more.
