Super Green Smoothie Bowl with Matcha and Ginger image

Packed with healthy superfoods and a little caffeine kick from matcha powder, this creamy green smoothie bowl makes a satisfying breakfast. Chia seeds and oats add density and fiber, while mango and fresh ginger add sweetness and spice.

Number Of Ingredients 10

1/2 cup old-fashioned oats
2 teaspoons chia seeds
1 cup coconut-milk beverage or almond milk
1/2 ripe avocado
1 (1-inch) piece fresh ginger, peeled, roughly chopped
1 cup frozen mango cubes
1 cup loosely packed baby spinach
1 tablespoon unsweetened almond butter
1/2 teaspoon matcha (green tea powder)
Unsweetened coconut flakes, granola, and/or raspberries (for serving)

Steps:

  • Soak oats and chia seeds in coconut milk in a small bowl at least 10 minutes and up to overnight. Transfer to a blender and add avocado, ginger, mango, spinach, almond butter, and matcha. Puree until smooth, then divide among 2 bowls. Top with coconut, granola, and/or raspberries and serve.

  • Add frozen banana slices, pineapple (optional), lesser amount of coconut milk (3/4 cup or 180 ml as original recipe is written // adjust if altering batch size), matcha powder, and spinach to a blender and blend on high until creamy and smooth.
  • Add only as much coconut milk as you need to help it blend. In my opinion, you want this smoothie somewhere between scoopable and drinkable.
  • Taste and adjust flavor as needed, adding more banana (or a touch of maple syrup or stevia) for sweetness, matcha for more intense green tea flavor, or coconut milk for creaminess (though adding more matcha powder adds more caffeine, so use your best discretion). Pineapple will add a little tart/tang, so add more if desired.
  • Divide between two serving bowls (amount as original recipe is written // adjust if altering batch size) and top with desired toppings (optional). I went with fresh raspberries, chia seeds, and coconut flake. Bananas would make a delicious garnish as well.
