AGAVE-SWEETENED ORANGE-ORANGE PEKOE TEA

- • In a stockpot, combine the water and cinnamon sticks and bring to a boil. Remove from heat and immediately add the tea bags, orange juice, lemon juice, and agave nectar. Cover and let stand for 30 minutes.
- • Remove the lid, allow the tea to cool, and remove the tea bags with a slotted spoon.
- • To serve, ladle into pint-size canning jars filled with ice and garnish with orange wedges.

- In a saucepan, combine 6 cups cold water and bring to a boil. Remove from heat and immediately add the tea bags, orange juice, lemon juice and agave nectar. Cover and let stand for 30 minutes.
- Remove the lid, allow the tea to cool and remove the tea bags with a slotted spoon. Do not squeeze bags; it makes tea bitter. Pour into a 1 gallon container, topping with the additional 6 cups cold water; stir.
- To serve, ladle into tall glasses filled with ice and garnish with orange wedges or mint springs.

GREEN TEA AND ORANGE COOLER

- Add 4 cups water to a saucepan and bring to a boil. Remove from the heat, add the tea bags and let steep for 7 minutes. Remove the tea bags and stir in the agave nectar. Let the tea cool before adding it to a large pitcher along with 2 cups ice and 2 more cups water. Add the orange slices before serving.

- Special equipment: a 60-ounce (7 1/2 cups) pitcher
- For the syrup: In a small saucepan, bring the orange juice and sugar to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove from the heat and cool for 20 minutes.
- For the tea: In a small saucepan, bring the water to a boil. Add the tea bags and remove the pan from the heat. Allow the tea to steep and cool to room temperature, about 20 minutes. Remove the tea bags and discard. Pour the tea and syrup into a pitcher and refrigerate until ready to serve.
- To serve: Pour the sparkling water into the pitcher and add the orange slices. Pour the tea into 4 ice-filled glasses. Garnish with fresh mint, or basil, and serve.

- Whisk water, 3/4 cup agave nectar, cornstarch, flour, zest and juice from 2 1/2 lemons, and salt together in a saucepan; bring to a boil just until lemon mixture coats a spoon, 3 to 5 minutes. Stir butter into lemon mixture until melted; remove saucepan from heat.
- Whisk 1/2 cup lemon mixture with the egg yolks in a bowl to temper the yolks. Return saucepan to medium-low heat and slowly whisk tempered egg yolks into remaining lemon mixture until thickened, 3 to 5 minutes. Spoon lemon mixture into pie crust.
- Preheat oven to 350 degrees F (175 degrees C).
- Beat egg whites and 1/2 teaspoon lemon juice in a clean bowl using an electric mixer until soft peaks form; add 2 tablespoons agave nectar and continue beating until stiff peaks form. Spoon egg white mixture on top of lemon mixture, making sure to completely cover the lemon mixture.
- Bake in the preheated oven until meringue is golden brown, about 10 minutes.
