BROWNIE MONSTER COOKIES
Monster cookies meet brownies in this mash-up of the classics. Perfect for after school or anytime you need a chocolaty, crunchy treat.

Steps:
- Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
- In large bowl, stir together brownie mix and oats. Add melted butter, water and egg; stir until well blended. Stir in candies and chips.
- Shape dough into 2-inch balls. Place on cookie sheet 3 inches apart. Press each ball slightly to flatten.
- Bake 12 to 14 minutes or until tops of cookies are no longer wet looking. Cool 5 minutes; remove from cookie sheets to cooking racks.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
- Cream butter and peanut butter together. Add the sugars and stir until well mixed.
- Add eggs one at a time, then add vanilla.
- Mix oatmeal and baking soda separately, then stir into batter.
- Add chocolate chips last.
- Drop by heaping teaspoons onto cookie sheets. Bake for 12-15 minutes.

- Heat oven to 350°F. Line large cookie sheet with parchment paper. In large bowl, stir together cookie mix, butter, vanilla and egg until well mixed. Stir in chocolate chips.
- For each cookie, press 1/4 cup dough around 1 peanut butter cup candy (make sure dough is sealed completely around candy); place on cookie sheet. Press chocolate candies all over top of each.
- Bake 12 to 14 minutes or until set in center. Cool on cookie sheet 1 to 2 minutes; remove from cookie sheet to cooling rack. Cool completely.

- Preheat oven to 350°. In a large saucepan, melt chocolate chips and butter over low heat, stirring until smooth. Remove from the heat; cool until mixture is warm., In a small bowl, whisk the eggs, sugar, vanilla and, if desired, espresso powder until blended. Whisk into chocolate mixture. In another bowl, mix the flour, baking powder and salt; add to chocolate mixture, mixing well. - In a large bowl, cream peanut butter, butter and sugars. Add eggs, 1 at a time, beating well after each addition. Add baking soda and vanilla. Add oats, M&M's, butterscotch chips and peanuts; let stand for 10 minutes. Stir in flour (the dough will be crumbly)., Shape by 1/4 cupfuls into balls. MONSTER BROWNIES

- Make the brownies: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on all sides; coat with cooking spray. Stir together the flour, cocoa powder, baking powder and salt in a medium bowl. Put the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth; let cool slightly.
- Combine the butter, granulated sugar, brown sugar and water in a medium saucepan over low heat. Cook, stirring, until the butter is melted. Off the heat, whisk in the melted chocolate, then the eggs, one at a time, then the vanilla. Whisk in the flour mixture until just combined. Spread the batter evenly in the prepared pan.
- Bake until a toothpick inserted into the center of the brownies comes out clean, about 25 minutes. Transfer to a rack and let cool 10 minutes in the pan. Carefully remove from the pan using the foil overhang; transfer the brownies to the rack to cool completely.
- Meanwhile, make the frosting: Beat the butter in a large bowl with a mixer on high speed until light, about 1 minute. Add the confectioners' sugar, cocoa powder, milk, vanilla and salt. Reduce the speed to low and beat until combined. Increase the speed to high and beat until light and fluffy, about 5 minutes, thinning with 1 to 2 tablespoons more milk if needed. Spread the frosting on the brownies. Cut into pieces, then decorate with candy eyeballs and sprinkles.
MONSTER BREAKFAST COOKIES
These are a perfect treat when on the go, or first thing in the morning before a run/walk, or in the middle of the night while nursing a hungry infant! Walnuts are a great add (try 1/2 cup raisins and 1/2 cup walnuts), but they do make the cookies a bite drier. You can use white flour or a mixture of white and whole-wheat.

- Line a large cookie sheet with parchment paper. Scoop and roll dough into 24-26 balls; place 2 inches apart on cookie sheet. Flatten each ball slightly (dough won’t spread that much so this helps them bake into a classic cookie shape). Gently press a few more M&Ms into tops of cookies, if desired. Bake 10-12 minutes. Let cookies cool 5 minutes on cookie sheet before transferring to cooling rack to cool completely.
