Nachos With the Works image

This recipe for nachos is easy and quick to prepare, and includes all the fixings. Kids will love making it too!

1/2 cup instant rice
Gefen Canola Oil Cooking Spray
1 (9 ounce) bag yellow or blue corn torilla chips
1 small red pepper, seeds and ribs removed, coarsley chopped
1/2 medium onion, coarsley chopped
1 (15 ounce) can black beans, rinsed and drained
2 cups shredded Les Petites Fermieres Colby Jack, divided
1 jalapeño pepper, halved, seeded, and thinkly sliced
3 ripe avocados
Freshly squeezed juice of 1 lime
1 teaspoon chopped fresh cilantro
1 tablespoon finely chopped onion
1/4 cup finely chopped tomatoes
1/2 teaspoon kosher salt
1 (12 ounce) jar prepared salsa, for serving
1 (8 ounce) container sour cream, for serving

Steps:

  • 1. Prepare the rice according to package instructions and set aside. 2. Preheat oven to 350°F. Lightly spray a 17x11 inch baking sheet or large ovenproof serving platter with cooking sray. Spread chips on the prepared baking sheet. It's okay if the chips overlap. 3. In a bowl, combine peppers, onions, black beans, and rice. Spoon evenly over chips. Top with cheese and jalapeños. Bake for 10 minutes, rotating pan halfway through. 4. Cut avocaods in half, remove pits, and scoop flesh out into a bowl. Mash avocado and mix in lime juice, cilantro, onions, tomatoes, and salt. Set aside. 5. Serve nachos hot with guacamole, salsa, and sour cream on the side along with Pumpkin Black Bean Soup. This makes a huge meal-sized tray of nachos with lots of good stuff! You can adjust ingredient quantities to suit your preference. Serve with extra chips if required. Great for game day.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
¾ cup water
1 (18 ounce) package restaurant-style tortilla chips
1 cup shredded sharp Cheddar cheese, or more to taste
1 (15.5 ounce) can refried beans
1 cup salsa
1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced
1 (4 ounce) can sliced jalapeno peppers, drained

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  • Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
  • Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.

1 (16 ounce) bag tortilla chips (rounds work best)
1 (10 3/4 ounce) can Campbell's cheddar cheese soup
1 (10 3/4 ounce) can Campbell's nacho cheese soup
1 (8 ounce) can medium black olives
1 medium tomatoes, chopped
1/2 small onion, chopped
1 lb cubed stew meat (chicken also works)
1 (1 1/4 ounce) package taco seasoning
1 (8 ounce) can refried beans

Steps:

  • Preheat oven to 325°F.
  • Place bag of chips spread out on a large cookie sheet.
  • Cook stew meat or chicken in a pot until cooked through. When meat is ready shred the meat and mix with taco seasoning.
  • Mix cheese soup and nacho cheese soup with a 1/2 can milk to make it creamy. Set aside.
  • Spoon refried beans over chips and then sprinkle meat on top of beans. The beans hold things on a little.
  • Drizzle cheese mixture over meat and beans covering all areas of the pan.
  • Sprinkle olives, tomatoes, and onion on top of the cheese.
  • Place in oven for 5-7 minutes and let it heat through.
  • Serve with your favorite Mexican side dish or serve as is.
  • ENJOY!

1 ripe avocado, peeled
1 teaspoon lemon juice
1/2 cup finely chopped onion
1/2 cup chopped tomato
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (15 ounces) pinto beans, rinsed and drained
2/3 cup water, divided
2 tablespoons canola oil
1/2 pound ground beef
1 tablespoon chili powder
7 ounces tortilla chips
2 cups shredded cheddar cheese
1 cup sour cream

Steps:

  • In a small bowl, mash the avocado with lemon juice. Stir in the onion, tomato, salt and pepper; set aside. Mash beans with 1/3 cup of water; place in skillet and cook over medium heat until hot. Stir in oil; remove from the heat and set aside. , In another skillet, cook the ground beef over medium heat until no longer pink; drain. Stir in chili powder and remaining water; cook until liquid evaporates. , Line a baking sheet with foil. Arrange chips in a single layer. Top with teaspoonfuls of bean and meat mixtures. Sprinkle with cheese. Bake at 400° until cheese is melted, about 4 minutes. Serve with avocado mixture and sour cream. Serve immediately.

These are super yummy, my kids absolutely love them on movie nights. Have fun with this recipe. you can any variation of veggies and any amount you wish of any ingredient according to taste.

1 (11 ounce) bag nacho cheese flavored tortilla chips
1/2 cup cheese spread (reccommend cheez whiz)
1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 cup black olives
canned jalapeno slices (optional)
1 cup diced tomato
1 cup corn
1/2 cup black beans
1 1/2 cups shredded cheddar cheese
lettuce
sour cream

Steps:

  • Brown ground beef, add taco seasoning according to pacage directions.
  • Spread chips evenly on a cookie sheet.
  • Dot with cheese spread or you can melt in microwave and pour on chips.
  • Evenly spread out meat mixture over top of chips.
  • Sprinkle veggies evenly over meat mix.
  • At this point you can add more cheese spread if you wish.
  • Top with shredded cheese.
  • Bake 350 degrees for 20-25 minutes or until cheese is melted and bubbly.

Lightened-Up Super Nachos image

Half a 13-ounce bag baked tortilla chips (about 5 cups)
One 15-ounce can black beans, rinsed and drained
1 tomato, chopped
4 scallions, white and light green parts only, sliced
1/2 cup salsa
1 cup chopped romaine lettuce
1/4 cup low-fat sour cream, in a squeeze bottle
1/4 cup store-bought or homemade guacamole (See Cook's Note)
3 tablespoons all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 cups skim milk
2 tablespoons low-fat cream cheese
1 1/2 cups shredded low-fat Cheddar
1 tablespoon olive oil
One 10-ounce packet frozen ripe jackfruit, thawed
1 teaspoon chili powder
1 teaspoon garlic salt
2 tablespoons salsa

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the tortilla chips on a rimmed baking sheet. Top with the black beans, tomato and scallions. Bake until warmed through, 10 minutes.
  • Meanwhile, make the cheese sauce and prepare the jackfruit.
  • For the low-fat cheese sauce: Combine the flour, salt, onion powder and pepper in a medium saucepan over medium heat and cook, stirring constantly, until the flour toasts, about 2 minutes. Slowly whisk in the milk. Add the cream cheese and whisk vigorously until the mixture is smooth and even. Bring the mixture to a low boil, then reduce the heat to low and simmer, stirring constantly, until it is thick enough to coat the back of a spoon, about 4 minutes. Remove the saucepan from the heat and stir in the cheese until it melts.
  • For the jackfruit: Put the olive oil and jackfruit in a medium skillet over medium heat. Stir in the chili powder and garlic salt and cook for 2 minutes. Stir in the salsa and cook until warmed through, 2 to 3 minutes.
  • To serve: Stir the salsa into the cheese sauce. Top the nachos with the jackfruit. Pour the salsa-and-cheese-sauce mixture over the nachos. Top the nachos with the lettuce and guacamole. Dollop on the sour cream or put it in a squeeze bottle and squeeze it in a zig-zag pattern all over the nachos.
