CHICKEN OLE FOIL SUPPER

These Mexi-style chicken packets can be assembled ahead and frozen if you like. Just thaw them overnight in the fridge, then grill as directed. I like to serve them with warm tortillas and fresh fruit on the side. -Mary Peck, Salina, Kansas

Ingredients

1 can (15 ounces) black beans, rinsed and drained
2 cups fresh or frozen corn (about 10 ounces), thawed
1 cup salsa
4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon salt
1 cup shredded cheddar cheese
2 green onions, chopped

Steps:

Mix beans, corn and salsa; divide among four 18x12-in. pieces of heavy-duty foil. Top with chicken. Mix seasonings; sprinkle over chicken. Fold foil over chicken, sealing tightly., Grill packets, covered, over medium heat until a thermometer inserted in chicken reads 165°, 15-20 minutes. Open foil carefully to allow steam to escape. Sprinkle with cheese and green onions.

Ingredients

1 1/2 lbs chuck steaks, 1/2 inch thick,trimmed of fat
2 tablespoons water
1 (10 1/2 ounce) can cream of mushroom soup
1 envelope onion soup mix
3 medium carrots, quartered
2 stalks celery, cut into 2 inch pieces
1 large jalapeno pepper, chopped
3 medium potatoes, peeled and quartered

Steps:

Place aluminum foil in baking pan.
Place meat on foil.
Stir together soups and water, spread on meat.
Top with veggies.
Fold foil over and seal securely.
Cook 1 1/2 hours in a 350f degree oven.

1 1/2 lbs chuck or 1 1/2 lbs round steaks, 1 inch thick
1 (10 1/2 ounce) cream of chicken soup
1 (1 1/2 ounce) envelope onion soup mix
3 medium carrots, peeled and quartered
2 celery ribs, cut in 2 inch pieces
4 -5 medium potatoes, peeled and quartered
2 tablespoons water

Steps:

Preheat oven to 450°F.
Place a 24x18 piece of heavy duty foil in a shallow baking pan.
Place meat on foil.
Stir together the chicken soup and the dry onion soup mix.
Spread on meat.
Top meat with vegetables and sprinkle water over all.
Fold foil over and seal securely.
Bake 1 1/2 hours or until tender.
