3 tablespoons butter
1 lb fresh mushrooms, thinly sliced
1/2 teaspoon salt
1/4 teaspoon white pepper
1/3 cup all-purpose flour
8 cups beef or 8 cups chicken broth
1 cup whipping cream
1 teaspoon lemon juice
1/4 cup dry sherry

Steps:

  • Melt butter in a 3 to 4 quart heavy saucepan over low heat.
  • Add mushrooms; saute over low heat until mushroom juices begin to flow.
  • Pour mushroom juice into a 2 cup measuring cup; set aside.
  • Stir salt, white pepper, and flour into drained mushrooms.
  • Add enough broth to mushroom juice to make 2 cups. Stir into mushroom mixture.
  • Stir in 6 cups of remaining broth. Over high heat, cook, and stir until soup is thickened, about 5 minutes.
  • Stir in cream and lemon juice. Add salt and white pepper to taste. Stire in sherry.
  • Serve hot.

3/4 lb fresh whole mushroom
2 tablespoons butter
2 tablespoons chopped onions
2 tablespoons flour
1 dash pepper (to taste)
1 teaspoon salt (to taste)
1/2 teaspoon Worcestershire sauce
1 (10 1/2 ounce) can beef consomme
1 1/4 cups milk
1 cup heavy cream
chopped fresh parsley, if desired (to garnish)

Steps:

  • Wipe mushrooms clean with damp paper towel, or rinse under cold water. (Drain).
  • Put butter into saucepan, and add onion and mushrooms, cover, and simmer 5 minutes over med-low heat. You just want to simmer them, not brown them, so stir once or twice and lower heat if necessary.
  • Remove mushrooms and place into blender or food processor.
  • Add flour, seasonings and 1/2 cup consomme.
  • Puree. You will need to scrape down a couple of times.
  • Pour puree back into pan.
  • Add remaining liquids and simmer over low heat stirring til smooth.
  • Serve with warm crusty bread for dipping.
  • Can garnish with chopped fresh parsley if desired.

1 lb mushroom, washed and quartered
1 large yellow sweet onion, chopped
3 carrots, washed and sliced
2 large celery ribs, sliced
1 tablespoon thyme
6 cups beef stock (or 6 cups water with 6 beef bouillon cubes)
1 slice butter
2 tablespoons cooking sherry

Steps:

  • Put butter and onion in large sauce pan. Cook onions until they start to appear clear or mildly caramelized 3-5 minutes on high heat. Add mushrooms, carrots, and celery, cook for 5 more minutes. Add the Thyme and beef stock. Simmer for the next 45 minutes- hour. Ten-Fifteen minutes prior to serving add sherry for taste and simmer until served.

2 tablespoons butter
1 tablespoon chopped fresh thyme
1 lb shallot, coarsely chopped
6 (14 1/2 ounce) cans chicken broth
2 ounces dried porcini mushrooms
2 cups thinly sliced shiitake mushroom caps (about 4 ounces mushrooms)
3/4 cup dry sherry
3 tablespoons chopped fresh chives

Steps:

  • To prepare broth, melt butter in a Dutch oven over medium heat.
  • Add thyme and shallots; cook 10 minutes or until shallots are golden brown.
  • Stir in broth and porcini mushrooms; bring to a boil.
  • Reduce heat; simmer, uncovered, 1 hour.
  • Stain broth mixture through a sieve into a bowl; discard solids.
  • Return broth mixture to pan.
  • Stir in shiitake mushrooms and sherry; cook 10 minutes over low heat.
  • Stir in chives.
  • Serve immediately.

10 ounces frozen chopped spinach, defrosted
2 tablespoons flour
1 onion, chopped
1 quart water
2 teaspoons bouillon (beef, chicken or vegetable)
1/2 cup milk
1/4 teaspoon grated nutmeg
2 eggs, hard boiled and peeled
1 tablespoon butter
salt
pepper

Steps:

  • Drain and dry the defrosted spinach.
  • Melt the butter in a skillet over medium heat and add the onion and spinach. Fry until the onions are soft.
  • Dust the flour over the spinach mixture and add the water and bouillon. Let simmer for 10 minutes.
  • Add the milk and season with salt, pepper and nutmeg.
  • Slice the hard boiled eggs.
  • Divide the soup in 4 bowls, and top each with approximately 1/4 of the egg slices. Serve with bread for a complete light meal.
