1 (10.75 ounce) can fiesta cheese soup
1 (10.75 ounce) can cream of chicken soup
1 cup sour cream
½ cup butter or margarine, melted
2 (20 ounce) packages Simply Potatoes® Southwest Style Shredded Hash Browns
2 cups cubed fully cooked ham
1 ½ cups crushed round buttery crackers*

Steps:

  • Heat oven to 350 degrees F. Spray 13x9 glass baking dish with nonstick cooking spray. In very large bowl stir together fiesta cheese soup, cream of chicken soup, sour cream and 1/4 cup melted butter; mix well. Stir in Simply Potatoes and ham. Spread into baking dish.
  • In small bowl stir together remaining 1/4 cup melted butter and crushed crackers. Sprinkle crackers evenly over top of Simply Potatoes.
  • Bake, uncovered, 50 to 55 minutes or until edges are bubbly and center is heated through.

Add:
Cook a large pot of potatoes (10 - 12) I like red for this
3/4 cup sour cream
4 oz. cream cheese
1-1/2 tsp onion salt or finely grated onion
1/2 tsp salt and pepper
2 tbsp. butter

Steps:

  • When potatoes are done, whip with the above ingredient until light and fluffy. Put in a well greased casserole dish. Cover with crumb topping: 3/4 cup fine bread crumbs (I use Italian for extra flavor) and 2 tbsp. melted butter. Bake uncovered at 350F for 45 minutes. If you are making the day before allow to cool and place in refrigerator, and cook when needed.

  • Heat oven to 325°F. Grease rectangular baking dish, 13x9x2 inches.
  • Cut potatoes crosswise into 1/8-inch slices, cutting only three-fourths of the way through to bottom. Place cut sides up in dish. Brush with butter. Sprinkle with salt and pepper.
  • Bake uncovered 1 hour, brushing with butter once or twice. Mix cheese and bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake 20 to 30 minutes longer or until tender.

2 cups sour cream
1/2 cup water
1/2 teaspoon pepper
2 packages (28 ounces each) frozen O'Brien potatoes
1 package (16 ounces) process cheese (Velveeta), cubed
2-1/2 cups cubed fully cooked ham

Steps:

  • Preheat oven to 375°. In a large bowl, mix soup, sour cream, water and pepper until blended. Stir in potatoes, cheese and ham., Transfer to 2 greased 2-qt. baking dishes. 5 large potatoes (about 4 pounds), peeled and cut into 3/4-inch pieces
1/4 cup butter, cubed
1 medium onion, chopped
1 garlic clove, minced
1/3 cup all-purpose flour
2 cups 2% milk
1-1/3 cups roasted red pepper Alfredo sauce
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon dill weed
1/4 teaspoon pepper
2 cups cubed fully cooked ham
2 cups shredded Swiss cheese
1/4 cup seasoned bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375°. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 8-10 minutes or until crisp-tender. Meanwhile, in a large skillet, heat butter over medium-high heat. Add onion; cook and stir 6-8 minutes or until tender. Add garlic; cook and stir 1 minute. 1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

4 slices ham
dry dill weed
3 large potatoes or 8 small potatoes, cooked, peeled, sliced potatoes
2 cups milk
1 cup half-and-half or 1 cup light cream
4 eggs
1/3 cup grated parmesan cheese
pepper
1 -2 dash nutmeg
2 -3 dashes Worcestershire sauce

Steps:

  • In a 2-quart baking dish (or a rectangular if using 6 ham slices), arrange a single layer of ham (you may have to cut up the slices to fit them). Sprinkle with dill weed. Top with a layer of potatoes, then another layer of ham, sprinkling each with dill weed.
  • Combine milk, half-and-half, eggs, cheese, pepper, nutmeg and Worcestershire sauce and mix well. Pour over the ham and potatoes.
  • Bake at 375°F for 1 hour 15 minutes or until firm. Cool at least 30 minutes, or long enough that the mixture holds together when sliced. Cut into slices and serve.
