Found on vegweb.com. These cookies are a vegan adaptation of a recipe by the author's grandmother. Posted for ZWT6 so that the vegans in the tour have some recipe options :) The preparation time includes the chilling time.

1 cup vegan margarine, room temperature (recipe's author uses Earth Balance)
1/2 cup confectioners' sugar
1 tablespoon water
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup pecans, chopped

Steps:

  • Cream earth balance vegan margarine with 1/4 cup powdered sugar, add water and vanilla and mix.
  • Add flour and mix well.
  • Finally mix in pecans. (The batter will appear dry!).
  • Form into 1-inch diameter balls, place on an ungreased cookie sheet and chill for one hour.
  • Bake in a slow oven (roughly 300 degrees Fahrenheit) for 20 minutes or until lightly browned.
  • While still hot, roll in remaining confectioners' sugar.
  • Store in an airtight container.

1 cup heavy cream
1 cup sour cream
1 1/3 cups sugar
2 Tbsp shortening
1 large egg yolk
1 tsp vanilla extract
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3 cups all-purpose flour ((plus more for rolling & shaping))

Steps:

  • Start the night before by mixing together the heavy cream and sour cream in a small bowl. Whisk until smooth, then cover with cling film and refrigerate.
  • When ready to start, set the cream mixture out to room temperature. Next, preheat your oven to 475°F (246°C) and line your baking sheets with parchment paper or silicone baking mats.
  • In a large bowl cream together the sugar, shortening, and egg yolk.
  • Stir in the vanilla extract, baking powder, baking soda, and salt into the cream mixture then transfer the wet ingredients into the creamed sugar. Mix until well combined. Add the flour until completely incorporated into the dough, which should be sticky when done. *You can chill the dough for an hour before handling it to make the next step easier if desired.
  • Since the dough is sticky, use a well-floured surface to roll the dough out onto. Pull off roughly 1 1/2-inch ball-shaped portions of the dough and roll them in the flour to coat all sides. Then move them to the side of your working surface where there is less flour and roll them out to a rope shape (approximately 8-9 inches long). Shape the rope into an '8' or 'infinity sign' or fold over like a pretzel shape, or you can also shape them into round coils - but these take longer to bake.
  • Place each shaped dough piece onto your prepared baking sheets then bake for 5-6 minutes, or until the bottom just begins to turn a light golden color. *Depending on the thickness of the 'ropes', the cooking time can be longer.
  • Remove from the oven when done and allow to cool on the baking sheet for about 5 minutes before transferring to a wire cooling rack to cool completely.

1 cup butter, softened
1 cup sugar
2 teaspoons maple syrup
2 cups all-purpose flour
1 teaspoon baking soda
Confectioners' sugar

Steps:

  • Preheat oven to 300°. In a large bowl, cream butter and sugar until light and fluffy. Add syrup. Combine flour and baking soda; gradually add to creamed mixture and mix well. , Divide dough into eight portions. Roll each portion into a 9-in. log. Place 3 in. apart on ungreased baking sheets. Bake 25 minutes or until lightly browned. Cut into 1-in. slices. Remove to wire racks. Dust with confectioners' sugar.

¼ cup margarine
⅔ cup white sugar
1 egg, beaten
1 (8 ounce) package dates, pitted and finely chopped
1 teaspoon vanilla extract
2 cups crispy rice cereal
¾ cup walnuts, finely chopped
1 cup sweetened flaked coconut

Steps:

  • Combine the margarine, sugar, egg, and dates in a saucepan. Cook over medium heat until thick, about 7 to 10 minutes. Remove from heat; stir in vanilla.
  • Combine the crispy rice cereal and the walnuts in a large bowl. Stir in the date mixture; mix well.
  • Working quickly, form the cereal and date mixture into 1 inch balls. Roll balls in coconut. Store in an airtight container in a cool place. Do not refrigerate.

1/2 teaspoon Vanilla
1 3/4 cups Flour sifted
1/2 cup Walnuts chopped
1/2 cup Powdered sugar

Steps:

  • Pre-heat oven to 350 deg. F. 1. Cream butter and sugar until light and fluffy 2. Blend in vanilla and nuts 3. Add flour until thoroughly mixed Chill for about 1 hour. Shape into balls one-half inch and roll in powdered sugar. Place ball on lightly oiled cookie sheet and bake until bottom edge begins to turn a golden brown. (about 10 minutes). Remove from oven, sprinkle with powdered sugar and let cool on sheet 10 minutes. Remove to cooling rack.
