A store-bought sweet-and-sour sauce makes this three-ingredient stir-fry a perfect weeknight dinner.

2 tablespoons vegetable oil
1 pound cut-up beef for stir-fry
3 cups cut-up cabbage or coleslaw mix
1/2 cup sweet-and-sour sauce
Hot cooked couscous, rice or noodles, if desired

Steps:

  • Heat 12-inch skillet or wok over high heat. Add 1 tablespoon of the oil; rotate skillet to coat side.
  • Add beef; stir-fry 2 minutes or until brown. Remove from skillet.
  • Add remaining 1 tablespoon oil; rotate skillet to coat side. Add cabbage; stir-fry about 3 minutes or until crisp-tender. Add beef and sweet-and-sour sauce; cook and stir about 2 minutes or until hot. Serve with couscous.

This wholesome sweet-and-sour soup combines beef, caraway seeds, sweet paprika and cabbage--ingredients that star in a number of German dishes. It is particularly nice served with crusty rye bread. 1 tablespoon canola oil
1 pound lean (90% or leaner) ground beef
1 ½ teaspoons caraway seeds
1 teaspoon dried thyme
2 1/2 cups frozen bell pepper and onion mix, thawed, chopped
1 medium Golden Delicious or other sweet-tart cooking apple, unpeeled, diced
6 cups reduced-sodium beef broth
1 15-ounce can crushed or diced tomatoes
1 ½ tablespoons honey
1 tablespoon paprika, preferably Hungarian sweet
3 cups coarsely chopped Savoy, or green cabbage
1-2 tablespoons cider vinegar
¼ teaspoon salt
Freshly ground pepper to taste

Steps:

  • Heat oil in a Dutch oven over medium heat. Add beef, caraway seeds and thyme and cook, stirring and breaking up the beef with a spoon, until it is mostly browned, about 4 minutes. Stir in pepper-onion mix and apple; cook, stirring, for 2 to 3 minutes more.
  • Stir in broth, tomatoes, honey and paprika and adjust the heat so the mixture boils gently. Cook for 8 to 10 minutes to blend the flavors. Stir in cabbage and cook just until barely tender, 3 to 4 minutes more. Season with vinegar to taste, salt and pepper.

I found this on one of those recipe cards at the grocery store. It's a little different than most of the cabbage casserole recipes I've seen posted, so I thought I'd share it. *Note: Be sure to core the cabbage well or it will be tough.

1 1/2 lbs ground beef
1/2 cup chopped onion
1/2 cup sliced celery
1/2 cup chopped green pepper
2 tablespoons quick-cooking oats
2 tablespoons snipped parsley
3/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 head cabbage
1 (15 ounce) can tomato sauce
1/4 cup cider vinegar
3 tablespoons brown sugar
1/2 teaspoon salt
1 dash pepper

Steps:

  • In a large skillet cook ground beef, onion, celery, and green pepper till meat is browned; drain off fat.
  • Sprinkle meat mixture with rolled oats, parsley, the 3/4 teaspoon salt, garlic powder, and the 1/8 teaspoon pepper.
  • Core cabbage; cut into six wedges.
  • Place atop meat.
  • In bowl combine tomato sauce, vinegar, brown sugar, the 1/2 teaspoon salt, and the dash of pepper; mix well.
  • Pour over cabbage and meat.
  • Cover and simmer for 20 to 30 minutes or till cabbage is tender.
  • Serve at once.

1 Tbsp canola oil
1 lb ground beef
1 1/2 tsp caraway seeds
1 tsp thyme, dried
2 1/2 c chopped bell pepper and onions
1 medium apple, diced with skins on
6 c beef broth
1 can(s) crushed tomatoes
1 1/2 Tbsp sugar
1 Tbsp paprika
3 c cabbage, chopped
1 Tbsp cider vinegar
1/4 tsp salt
pepper, to taste

Steps:

  • 1. Heat oil on Med-High in a lg stock pot.
  • 2. Brown ground beef with caraway seeds and thyme.
  • 3. Stir in bell peppers, onions and apples cooking for 2-3 min.
  • 4. Add broth, tomatoes, sugar and paprika. Simmer for 10 min.
  • 5. Add cabbage and cook for 3-4 min.
  • 6. Turn off the heat and add the vinegar. Add salt and pepper to taste.
  • 7. Serve with a good crusty bread.

3 lbs boneless beef chuck roast
2 medium onions, sliced
1/2 cup red wine vinegar
3 teaspoons salt
4 teaspoons light brown sugar
1 teaspoon caraway seed
1/2 teaspoon fresh ground black pepper
water
1 medium red cabbage
2 tablespoons flour

Steps:

  • In an 8-qt. Dutch oven over medium-high heat, in hot oil, cook the roast until it's well browned on all sides.
  • Stir in the onions, vinegar, salt, sugar, caraway seeds, pepper and 1/4 cup water; heat to boiling.
  • Reduce heat to low; cover and simmer 2 1/2 hours or until the meat is fork tender, turning meat occasionally.
  • Meanwhile, coarsely shred cabbage, discarding any tough ribs, and set it aside.
  • When meat is done, remove it to a large platter and keep it warm.
  • Skim off fat from liquid in Dutch oven.
  • Add the cabbage to the liquid and over medium-high heat, heat it to boiling.
  • Reduce heat to low, cover and simmer 30 minutes or until cabbage is tender, stirring often.
  • Mix the flour and 1/4 cup water until blended.
  • Gradually stir flour mixture into cabbage in Dutch oven.
  • Cook over medium heat, stirring gently, until mixture is thickened.
  • Spoon the cabbage around the meat on platter and serve.

1 tablespoon cornstarch
2 tablespoons cold water
1 pound beef top sirloin steak, cut into 1/2-inch cubes
1 teaspoon salt
1/2 teaspoon pepper
3 teaspoons canola oil, divided
1 large green pepper, cut into 1/2-inch pieces
1 large sweet red pepper, cut into 1/2-inch pieces
2 medium tart apples, chopped
1/2 cup plus 2 tablespoons thinly sliced green onions, divided
2/3 cup packed brown sugar
1/2 cup cider vinegar
Hot cooked rice, optional

Steps:

  • In a small bowl, mix cornstarch and water until smooth. Sprinkle beef with salt and pepper. In a large nonstick skillet or wok coated with cooking spray, heat 2 teaspoons oil over medium-high heat. Add beef; stir-fry 2-3 minutes or until no longer pink. Remove from pan. , In same skillet, stir-fry peppers and apples in remaining oil for 2 minutes. Add 1/2 cup green onions; stir-fry 1-3 minutes longer or until peppers are crisp-tender. Remove from pan., Add brown sugar and vinegar to skillet; bring to a boil, stirring to dissolve sugar. Stir cornstarch mixture and add to pan. Return to a boil; cook and stir 1-2 minutes or until thickened. Return beef and pepper mixture to pan; heat through. If desired, serve with rice. Sprinkle with remaining green onion.

1 medium onion, finely chopped
1 (16 ounce) can tomato sauce
1/2 cup unsweetened applesauce
1/4 cup water
3 tablespoons cider vinegar
2 tablespoons packed dark brown sugar
1/8 teaspoon ground black pepper
4 cups finely chopped green cabbage (about 1 pound)
1 cup cooked rice (Since the recipe calls for a small amount of cooked rice, instant rice may be used)

Steps:

  • In a 12-inch-wide, deep skillet or a Dutch oven, cook the ground beef and onion over medium heat, breaking up the meat with a spoon. When the meat has browned and the onion is tender, spoon off and discard any fat in the skillet.
  • Add the tomato sauce, applesauce, water, vinegar, brown sugar, and pepper. Bring the mixture to a boil, stirring constantly. Stir in the cabbage, which will wilt as it cooks and become more compact.
  • Lower the heat and simmer, covered, stirring occasionally, for 25 to 30 minutes, or until cabbage is tender. Stir in the cooked rice and heat a few minutes longer, until it is cooked through. This is most easily served in bowls.
