1 1/4 ounces Lipton Onion Soup Mix

Steps:

  • Heat oven to 350 degrees. Arrange the chicken in an oblong baking dish.
  • Mix together the Russian dressing, apricot preserves and onion soup mix. Pour over the chicken.
  • Cover with foil and bake covered at 350 degrees for one hour. Uncover and bake for another 30 minutes.

6 skinless, boneless chicken breast halves
1 cup apricot jam
1 cup Italian-style salad dressing (such as Wishbone®)

1 (15 ounce) can diced pineapple, drained
1 yellow onion, chopped
1 red bell pepper, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium-high heat. Brown chicken breasts on both sides, about 2 minutes per side.
  • Combine apricot jam, Italian-style salad dressing, and dried onions together in a bowl. Place browned chicken in a baking dish and pour jam mixture over the chicken; bake for 15 minutes. This is a really easy, sweet, savory dish. When I first made it I was surprised by the flavor of the sauce. I served it over rice with veggies on the side. I can definately see making a lot of the sauce and using it in a stir fry. Next time I make this, I might try a different flavor jam, just to see what happens. :) I originally found the recipe on WebMD, and they sourced it from The Art Institute of New York City.

1 1/2 lbs boneless skinless chicken breasts
0.5 (15 ounce) jar apricot jam
1/4 cup soy sauce (I used a gluten free soy sauce)
salt and pepper
2 tablespoons toasted sesame seeds (can use black, white, or both)
2 scallions, cleaned and sliced for garnish

Steps:

  • Preheat the oven to 350°F Lightly grease a baking dish.
  • Salt and pepper the chicken. Put them in the baking dish and bake for 20-25 minutes or until cooked through.
  • In a saucepan, mix the apricot jam and soy sauce. Bring the mix to a boil and then lower the heat. Simmer for 5 minutes. If you want a thicker sauce, let it simmer for longer.
  • Pour the mix over the cooked chicken. Sprinkle with sesame seeds and garnish with sliced scallions.

I got this recipe off of Regis and Kathy Lee back in 1996. I have not yet tried it because no one in my family likes this kind of stuff, but it sounds so good to me. Please somebody try it and let me know how it is.

1 (8 ounce) jar Russian salad dressing
1 (8 ounce) jar apricot preserves
1 (1 ounce) envelope onion soup mix
1/4 cup water (pour in dressing jar and shake) (optional)

pineapple (for garnish)

Steps:

  • Place chicken in glass baking dish (9x13-inch).
  • In bowl, stir together dressing, preserves, soup mix, and water.
  • Pour mixture on top of chicken; spread evenly.

This was a food recipe challenge that was a nice surprise recipe. This recipe makes an excellent glaze for Sweet and Sour Chicken like you get in a Chinese-style restaurant. I've made it with meatballs as well.

1 habanero pepper
3 cups fresh apricots, pitted and chopped
1 cup shallots, sliced into thin slivers
½ cup green bell pepper, chopped
½ cup red bell pepper, chopped
½ cup fresh pineapple, chopped
¼ cup cherry tomatoes, chopped
2 cloves garlic, minced
1 teaspoon minced fresh cilantro
½ teaspoon ground cumin
¼ cup freshly squeezed lime juice
1 (1.75 ounce) package powdered fruit pectin
6 cups white sugar
1 cup brown sugar, packed
½ teaspoon butter
9 sterilized half-pint canning jars with lids and rings

Steps:

  • Wearing rubber gloves and avoiding touching your eyes or face, seed and mince the habanero pepper. Place the habanero pepper, apricots, shallots, green and red bell pepper, pineapple, cherry tomatoes, garlic, cilantro, cumin, and lime juice into a large pot over medium heat, and stir in the pectin until dissolved. Bring the mixture to a boil, and mix in the white and brown sugars, stirring until completely dissolved. Return the jam to a full rolling boil, add the butter to reduce foaming, and boil hard for 2 to 3 minutes, stirring constantly.
  • Turn off heat, and skim and discard any foam that forms on the jam. Pack the jam into the sterilized jars, and top each with a sterilized lid and ring.
  • Simmer the filled jars in a boiling water bath for 10 minutes, then remove the jars and store upside-down on a cloth towel for about 5 minutes. Turn right side up, and allow the lids to seal (listen for the popping sound). Let jars cool completely.
