Seasoned ground beef is layered with tortilla chips and cheese before they get toasty and melty. Then it's topped with all of your favorite nacho fixin's for an easy, delicious appetizer or meal.

1/2 pound ground beef
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
Dash of cayenne pepper
One bag tortilla chips
6 ounces (1 1/2 cups) shredded nacho or Mexican cheese blend
Toppings: diced tomato, sour cream, diced avocado, chopped green onion, pickled jalapeños, etc.

Steps:

  • Heat the oven to 400˚F.
  • Meanwhile put a skillet over medium-high heat until hot; add the ground beef and all of the seasonings and cook, breaking apart with a spatula, until browned and there's no more visible pink. Transfer the the ground beef to a bowl, leaving behind the rendered fat.
  • Layer the tortilla chips, cooked ground beef, and shredded cheese on a sheet pan.*** Bake in the oven until the chips are toasted and the cheese is melted, 5 to 10 minutes.
  • Finish assembling the nachos with your favorite nacho toppings. Serve!

2 teaspoons vegetable oil
1 small onion (chopped fine)
3 cloves garlic (minced)
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 teaspoon salt
1 pound 90% lean ground beef
2 tablespoons tomato paste
1 teaspoon brown sugar
1 medium canned chipotle chili (chopped, plus 1 teaspoon adobo sauce)
1/2 cup water
2 teaspoons lime juice
2 teaspoons vegetable oil
1 small onion (chopped fine)
3 cloves garlic (minced)
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 teaspoon salt

Steps:

  • Heat oven to 400 degrees F.
  • For the beans, pulse ingredients in food processor until smooth. Transfer to a small bowl and cover with plastic wrap; set aside.
  • To make the spicy beef, heat oil in large skillet over medium heat until shimmering. Add onion and cook until softened, about 4 minutes. Add garlic, chili powder, cumin, oregano, and salt and cook until fragrant, about 1 minute. Add beef, cook and break meat into small bits until no longer pink, about 5 minutes. Add tomato paste, sugar, chile, and adobo sauce and cook 1 minute. Add water, bring to simmer, and cook over medium-low until mixture is nearly dry, 5 to 7 minutes. Stir in lime juice and transfer mixture to plate lined with several layers of paper towels.
  • To assemble the nachos, spread half of chips in a 9×13-inch baking dish. Dollop half of bean mixture over chips, then spread evenly. Scatter half of beef mixture over beans, top with 2 cups cheese and half of jalapeños. Repeat with remaining chips, beans, beef, cheese, and jalapeños. Bake until cheese is melted and just beginning to brown, 12 to 14 minutes. Serve with salsa, sour cream and/or guacamole.

1/2 cup water
2 teaspoons lime juice
9 1/2 ounces tortilla chips

Steps:

  • Adjust oven rack to middle position and heat oven to 400 degrees.
  • For the beans: Pulse ingredients in food processor until smooth. Transfer to bowl and cover with plastic wrap.
  • For the beef: Heat oil in large skillet over medium heat until shimmering. Cook onion until softened, about 4 minutes. Add garlic, chili powder, cumin, oregano, and salt and cook until fragrant, about 1 minute. Add beef and cook, breaking meat into small bits with wooden spoon and scraping pan bottom to prevent scorching, until no longer pink, about 5 minutes. Add tomato paste, sugar, chile, and adobo sauce and cook until paste begins to darken, about 1 minute. Add water, bring to simmer, and cook over medium-low until mixture is nearly dry, 5 to 7 minutes. Stir in lime juice and transfer mixture to plate lined with several layers of paper towels. Use more paper towels to blot up excess grease.
  • To assemble: Spread half of chips on large serving platter or 13 by 9-inch baking dish. Dollop half of bean mixture over chips, then spread evenly. Scatter half of beef mixture over beans, top with 2 cups cheese and half of jalapeños. Repeat with remaining chips, beans, beef, cheese, and jalapeños. Bake until cheese is melted and just beginning to brown, 12 to 14 minutes. Serve with salsa and other suggested garnishes.

Beef roast is slow cooked in a sweet and spicy sauce, then shredded and piled on tortilla chips with shredded cheese and your favorite toppings for this hearty, crowd-pleasing snack.

1 (15 ounce) can red enchilada sauce
¾ cup MUSSELMAN'S® Apple Butter
1 (2 pound) beef chuck roast
1 onion, sliced
3 garlic clove (blank)s garlic cloves, minced
1 teaspoon salt
½ teaspoon crushed red pepper
1 (16 ounce) package tortilla chips
3 cups shredded Mexican-style cheese blend
1 cup salsa
1 medium ripe avocado, chopped
1 medium tomato, chopped
¼ cup black olives, sliced
¼ cup cilantro, chopped
¼ cup green onions, chopped
½ cup sour cream

Steps:

  • Pour the enchilada sauce and apple butter in a Crock-Pot. Place the beef roast in it, followed by sliced onions, garlic, salt and red pepper. Cover and turn the Crock-Pot on high for 4 to 5 hours, until the beef is falling apart.
  • Using two forks, shred the beef roast into the sauce, and leave on warm until ready to serve.
  • For the Beef Nachos: Preheat the oven to 350 degrees F. Arrange the tortilla chips on a large rimmed baking sheet. Sprinkle half the cheese over the top and bake for 3 to 5 minutes to melt the cheese.
  • Scoop the chili con carne over the chips, and sprinkle the remaining cheese over the hot beef. Top with any additional toppings and serve immediately.
