SWEET-AND-SPICY BLT CLUB
The bacon in this lunchtime classic is baked with brown sugar and cayenne pepper.

- Preheat oven to 400 degrees, with racks in upper and middle thirds. On a rimmed baking sheet, arrange bacon in a single layer and sprinkle with brown sugar and 1/2 teaspoon cayenne. On another rimmed baking sheet, toss tomatoes with oil and season with salt and pepper. Roast bacon on upper rack until crisp and tomatoes on middle rack until softened, about 15 minutes. Drain bacon on paper towels. Combine mayonnaise, jalapeno, and remaining 1/4 teaspoon cayenne and spread on bread. Assemble sandwiches with bread, bacon, tomatoes, and lettuce.

- Put oven rack in middle position and preheat oven to 350°F.
- Stir together brown sugar, cayenne, and black pepper in a small bowl.
- Arrange bacon slices in 1 layer (not overlapping) on rack of a large broiler pan. Bake 20 minutes. Turn slices over and sprinkle evenly with spiced sugar. Continue baking until bacon is crisp and deep golden, 20 to 35 minutes more (check bacon every 5 minutes). Transfer to paper towels to drain.
SWEET AND SPICY BLT
Turkey bacon is spiced with a seasoning mix, then fried and served on whole wheat bread with lettuce, tomato and Ranch dressing.

- Place ingredients for seasoning mix in a small bowl. Mix well.
- Place bacon on a microwaveable plate. Top each slice with 1/2 tsp. seasoning mix. Microwave bacon following label instructions.
- Toast bread. Spread ranch dressing on toast. Assemble sandwiches with cooked bacon, lettuce and tomato.

This is something I used to make at my cafe, The Flying Apron. What with all of the recipes I make here on Food I had kind of forgotten about it. DH ask me last night if I could remember how it was made, and I said "sure that was an easy one"

Steps:
- Toast the bread to your liking.
- Build sandwich by adding mayo and layers of bacon and lettuce to one slice of toasted bread.
- Top with another slice of bread with mayo and layer with half the avocado and tomato slices'.
- Season with salt and pepper, and cover with the last slice of toasted bread.
- Tip: prep the tomato, avocado and lettuce leaves while the bread is toasting and the bacon is cooking.

- Slice the bread ½” thick and spread with butter on both sides. Heat skillet over med-high heat and add bread. Toast both sides until golden brown.
