Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles image

The Thai sweet chili sauce gives this dish a sweet and spicy flavor that my kids love. You can adjust the heat level by adding more or less of the sauce or adding additional red pepper flakes, if you like it really hot.

12 ounces dry Chinese noodles
3 tablespoons soy sauce
¾ cup sweet chili sauce
½ teaspoon garlic powder
¼ teaspoon ground ginger
3 tablespoons sesame oil
½ cup soy sauce

1 (1 pound) pork loin, cut into 2-inch strips
2 tablespoons cooking oil
2 onions, cut into bite-size pieces
⅛ teaspoon crushed red pepper flakes
3 tablespoons sweet chili sauce
3 cups chopped napa cabbage
¾ cup sliced celery
1 cup sliced carrots
3 red bell peppers, chopped
2 teaspoons cornstarch
¼ cup cold water

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the Chinese noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Whisk together the 3 tablespoons soy sauce, 3/4 cup sweet chili sauce, 1/2 teaspoon garlic powder, the ground ginger, and the sesame oil in a large bowl; add the drained Chinese noodles and toss to coat; set aside
  • Whisk together the 1/2 cup soy sauce and 1/2 teaspoon garlic powder in a large bowl; add the pork and stir to coat. Allow to marinate 5 minutes.
  • Heat the cooking oil in a wok or a large, deep skillet over medium-high heat. Add the pork, onions, and red pepper flakes to the oil; cook until the pork is browned completely. Stir in 3 tablespoons sweet chili sauce, the napa cabbage, celery, carrots, and bell peppers; cook and stir until vegetables are completely heated, about 5 minutes. Whisk together the cornstarch and water and add to the stir fry, stirring until the mixture thickens. Serve the stir-fry over the noodles.

Steps:

  • For the pork marinade, place the diced pork into an ovenproof dish. Finely chop the coriander, spring onions, red chillies, garlic and ginger and add to the pork. Pour over the honey, soy sauce and oil, add the chinese 5 spice and give it a good mix, so the pork is fully coated. Cover with foil and put in the fridge for 4-6 hours.
  • When the pork has finished marinating, preheat the oven to 220C/200C fan assisted.
  • When the oven has reached the right temperature, put the foil covered pork on a middle shelf. The pork should take 30 mins to cook, stir it halfway through and remove the foil for the last 10 mins.
  • Meanwhile, slice the vegetables and boil the noodles according to the pack instructions. Once the noodles have cooked and are being strained, heat the oil in a wok. It is important that the noodles dry out as much as possible. When the oil is hot add the vegetables, you do not want them to fry to quickly so put them on a low heat. Test the vegetables after 7 mins, they should still slightly crunchy.
  • Next, add the soy sauce, the noodles and the pork with the juice from the oven dish, carry on frying that for 1 min, garnish with the chopped coriander and it is ready to serve!

Mining historical Cantonese sweet-and-sour dish recipes for inspiration, Brandon Jew, a founder of the restaurant, and Noah Kopito, the head chef, created a sauce that incorporates pineapple, honey and dried hawthorn berries, which impart an earthy depth of flavor. The chefs use house-fermented Fresno chiles for a hint of heat, but a dab of commercially available sambal oelek will do. This dish can be made with chicken or cauliflower instead of pork; just skip the marinade if using cauliflower.

3 tablespoons Shaoxing rice wine
1 teaspoon soy sauce
1/2 teaspoon salt
1/2 teaspoon cornstarch
1/4 teaspoon ground white pepper
2 tablespoons neutral oil, such as rice bran or canola
2 teaspoons minced ginger
1 teaspoon minced garlic
1 1/2 tablespoons tomato paste
1 1/4 cups rice vinegar
1 cup pineapple juice
3/4 cup honey
1 tablespoon dried hawthorn berries (can be purchased in Asian groceries or online)
2 teaspoons sambal oelek
1/4 teaspoon five-spice powder
1/2 teaspoon salt, plus more to taste
1 tablespoon cornstarch
1 quart neutral oil, such as rice bran, for deep-frying
1 bell pepper (any color), cut into 1-inch pieces
1/2 medium yellow onion, cut into 1-inch pieces
8 ounces fresh pineapple, cut into 1-inch pieces (about 1 cup)

1/3 cup sweet rice flour (preferably Mochiko brand)
1/3 cup cornstarch
1/4 teaspoon baking powder

Steps:

  • Prepare the pork: Combine the pork with all the marinade ingredients, mixing well. Cover and chill for at least 2 hours, or overnight.
  • Make the sweet and sour sauce: Heat the oil, ginger and garlic in a medium saucepan over low heat until fragrant, about 2 minutes. Stir in the tomato paste and cook for another minute, stirring. Add the rice vinegar, pineapple juice, honey, hawthorn berries, sambal oelek and five-spice powder; stir to combine while bringing to a boil over medium-high heat. Reduce heat to low and simmer, uncovered, for 15 minutes. Strain the sauce through a fine-mesh sieve and discard the solids; return to the saucepan.
  • Reduce the sauce to about 1 ¾ cups over medium-high heat, uncovered, about 5 minutes. Season with ½ teaspoon salt, adding more as desired.
  • In a small bowl, combine cornstarch with 2 tablespoons water. Bring the sauce up to a boil again, then stir in the cornstarch slurry. Stir as it thickens and bubbles, about 1 minute, then remove from heat. (Note: This sauce recipe may produce more than needed for your pork stir-fry; use as much as you desire and the rest can be saved for another use, such as a dipping sauce for crab rangoon.)
  • Prepare to deep-fry: In a large wok (or deep skillet), heat the quart of oil to 350 degrees.
  • In a large bowl, combine all the ingredients for the batter; add ½ cup water and whisk to combine. Drain any excess liquid from the marinated pork and discard. Working quickly in two batches, carefully dip each piece of pork into the batter one at a time, shaking off any excess, and drop into the oil. Fry the first batch of pork until golden brown, about 6 to 7 minutes. Using a spider or slotted spoon, transfer the fried pork to a wire rack-lined baking sheet to drain. Repeat with the remaining pork, mixing the batter thoroughly before coating the meat. After frying, carefully discard the oil, reserving 1 tablespoon.
  • Return the reserved 1 tablespoon of oil to the wok or pan and heat over high. Once the oil is popping, about 1 minute, add the bell pepper, onion, pineapple and a pinch of salt. Stir-fry for 1 to 2 minutes, until the vegetables are lightly charred in spots.
  • Scrape the vegetables into a large bowl and toss with the fried pork and enough sweet and sour sauce to coat (about 1 to 1 ½ cups). Arrange on a serving dish and serve with steamed rice.

We owe enormous thanks to our slow cooker for making it possible to turn our absolute favorite weekend treat, barbecued pork, into a four-ingredient recipe we can throw together for a weeknight. We love to make sandwiches with the soft, flavorful shredded pork on hamburger buns, and serve them with some Lemony Coleslaw with Raisins (page 116), on top or alongside.

One 3- to 4-pound bone-in Boston pork butt
One 1-ounce envelope Lipton onion soup and dip mix
1 medium onion, quartered
One 12-ounce bottle barbecue sauce or 1 1/2 cups Easy BBQ Sauce (page 91)

Steps:

  • Score the pork butt in several areas, making cuts 1 inch deep. Rub the soup mix into the meat.
  • Scatter the quartered onion in the bottom of the crockpot and place the meat on top.
  • Cover and cook on high for 4 hours or low for 8 hours.
  • Carefully transfer the meat to a plate and allow it to cool slightly. Strain the liquid remaining in the crockpot through a colander or sieve. Save the meat pieces and onion bits, and discard the liquid and any excess fat. When the pork butt has cooled, remove any excess fat and discard the bone. Using a fork, break up the meat.
  • Place the meat, along with the bits and pieces from the strained liquid, back in the crockpot. Pour the barbecue sauce over the meat and stir to coat well. Heat on the warm setting until ready to serve.

1/2 pound pork tenderloin, cut into 2-inch strips
2 teaspoons canola oil
1/2 cup green pepper strips
1/2 cup sweet red pepper strips
Hot cooked rice, optional

Steps:

  • Drain pineapple, reserving juice in a 1-cup measuring cup; set pineapple aside. Add enough water to pineapple juice to measure 1/2 cup. In a small bowl; combine the cornstarch, soy sauce, brown sugar, pepper flakes and reserved juice mixture until smooth. Set aside., In a nonstick skillet or wok, stir-fry pork in hot oil until meat is no longer pink. Remove and keep warm. In the same skillet, stir-fry peppers for 3-4 minutes or until just crisp-tender. , Return meat to skillet; add reserved pineapple. Stir pineapple juice mixture; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice if desired.

This pork comes out tender and delicious, and the sauce has a great combo of sweet and spicy flavors. This is great with fried rice or just plain white rice. (I used a 5 quart crock pot for this recipe) Enjoy!

3 lbs pork tenderloin, cut in bite sized chunks
12 ounces fresh button mushrooms, quartered
1 cup leek, thinly sliced (washed well first, as they can be sandy)
2 cups carrots, cut into rounds (I like to cut them on the bias to look pretty & you don't need to peel them)
2 (8 ounce) cans water chestnuts, sliced
1 tablespoon garlic, minced
1/2 cup orange marmalade
1/2 cup chili sauce
1/8 cup hoisin sauce
1/4 cup dry sherry
1/4 cup soy sauce
1 teaspoon crushed red pepper flakes
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Heat 2 tablespoons oil in a large skillet over med/high heat.
  • Saute the tenderloin chunks quickly for about 5 minutes(watching them closely to not burn the outsides of the meat) to get some color on them. This will get rid of a little fat and liquid from the meat as well.
  • With a slotted spoon, scoop out the meat and place in your slow cooker, discard any fat or liquid from the meat cooking.
  • Add the mushrooms, leeks, carrots, water chestnuts, and garlic to your slow cooker also.
  • In a medium sized bowl, whisk together the orange marmalade, chili sauce, hoisin sauce, dry sherry, soy sauce, and crushed red pepper.
  • Pour sauce mixture over the ingredients in the slow cooker, and stir to coat everything well.
  • Cover with lid, put your slow cooker on High and cook for 2 1/2 hours.
  • After 2 1/2 hours, mix the cornstarch and water in a small cup until smooth, and add it to the mixture in your slow cooker.
  • Stir for a couple minutes, until you see the sauce thicken slightly, then close lid again and let cook on High for another 30 minutes.

1 stalk celery, sliced
sliced mushrooms (optional)
2 garlic cloves, minced
3 tablespoons brown sugar
1/2 cup tamari or 1/2 cup low sodium soy sauce
1/4 cup hoisin sauce
2 tablespoons apple cider vinegar
3 tablespoons mirin
1 teaspoon grated fresh ginger
2 tablespoons hot red chili peppers, sauce (or more depends on your preference)
cooked soba noodles or rice
sliced green onion (to garnish)

Steps:

  • In jar with lid, combine all the sauce ingredients; shake to blend and refrigerate at least 2 hours.
  • Cook rice or noodles, drain and set aside,covered.
  • Heat oil in wok or large skillet over Med-Hi heat.
  • Add pork and cook for about 3 minutes; add onion, celery, and green pepper (and mushrooms, if using).
  • Saute all for another 2-3 minutes. (The pork will brown nicely.).
  • Add sauce and lower heat to medium.
  • Cook until sauce thickens slightly; stirring to coat veggies and meat with sauce. Do not overcook the veggies; need to be crispy.
  • Place rice or noodles in bowls or on plates and pour on the pork mixture.
  • Sprinkle with green onions to serve.

I also had no idea what to call this, as it's not really a cake, but it's also not a pie, or a pudding, or a custard, so I ended up with "cake" since it's inspired by sweet Mexican corn cake. No matter what you call this, it's phenomenal! Garnish with fresh fruit and top with crème fraiche, sour cream, Mexican crema, or whipped cream and freshly grated lime zest.

1 habanero pepper, seeded and diced
2 large eggs
⅓ cup water
⅓ cup honey

  • Preheat the oven to 350 degrees F (175 degrees C). Generously butter a 9-inch pie dish.
