GLENN'S SWEET & SPICY SLOW COOKER CHILI



Glenn's Sweet & Spicy Slow Cooker Chili image

1 tablespoon butter
4 tablespoons extra virgin olive oil, divided
1 large orange bell pepper, diced
2 cups sweet onions such as Vidalia, diced
2 tablespoons garlic, minced
1 pound Italian hot sausage, removed from casing
1 pound 80/20 ground beef
1 pound ground bison (pre-packaged and available in most supermarkets)
2 6-ounce cans tomato paste
1 15-ounce can tomato sauce (Glenn recommended Contadina so we used that brand)
1 16-ounce can dark red kidney beans, rinsed and drained
1 22-ounce can Bush's Grillin' Beans (Bourbon and Brown Sugar)
1 cup brown sugar
2 tablespoons red pepper flakes (or less for less heat)
1 tablespoon garlic powder
1 ½ tablespoons paprika
1 tablespoon chili powder
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1 teaspoon cayenne pepper (or less for less heat)
Juice from one lime
Shredded cheddar cheese, for garnish
Saltine Crackers to serve with chili (Glenn says this is a must)

Steps:

  • In a large sauté pan, melt butter in two tablespoons of oil over medium heat.
  • Add bell pepper, onions and garlic and sauté for 8-10 minutes to caramelize the vegetables.
  • Pour this into a large slow cooker.
  • Heat the pan to medium high and add the remaining oil.
  • Add sausage meat, ground beef and ground bison meat and cook until meat has browned.
  • Scrape all of this into the slow cooker with the vegetables.
  • Then add all other ingredients to the slow cooker except the lime, cheddar and crackers.
  • Stir, cover and set slow cooker to low and cook for five hours.
  • Stir after five hours and add lime juice into the cooked chili.
  • To serve, dish out into bowls, top with cheddar cheese and serve with the saltine crackers.

This chili is incredibly easy to make (just brown some ground beef and chop a few vegetables before simmering the chili in your slow cooker) and full of sweet, smoky, and slightly spicy flavor. 1 pound ground beef
1 yellow onion, diced
½ red bell pepper, diced
½ green bell pepper, diced
½ large green chile pepper, diced
4 cloves garlic, minced
1 28-ounce can whole peeled tomatoes, with sauce
1 15-ounce can tomato sauce
⅛ teaspoon cinnamon
⅛ teaspoon smoked paprika
⅛ teaspoon ground chipotle
⅛ teaspoon cayenne
2 teaspoon ground cumin
1 tablespoon ground chili powder
1 15-ounce can small red kidney beans
salt, to taste
sour cream, for serving
shredded cheddar cheese, for serving

Steps:

  • Place the ground beef in a large pan and start to brown it, chopping it into small pieces. When it is almost cooked through, add the diced onion, bell peppers, and chile. Cover and allow the beef to finish cooking and the vegetables to soften slightly. When the beef is fully cooked, remove the pan from the heat and place the mixture into your slow cooker.
  • Add all the other ingredients to your slow cooker except the beans. Chop the whole tomatoes up slightly with a wooden spoon and stir the chili together. Cover the slow cooker and let the chili simmer for up to 4 hours on a low heat setting.
  • A half an hour before you're ready to serve the chili, add the beans (drain and rinse them well). Continue heating the chili until the beans are warm.
  • Serve the chili with sour cream and shredded Cheddar cheese if desired.

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

3/4 pound beef sirloin tip steak, cubed
2 tablespoons canola oil
1 pound ground beef
2 medium onions, chopped
3 garlic cloves, minced
4 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (14-1/2 ounces each) diced tomatoes with mild green chilies, undrained
2 cans (6 ounces each) tomato paste
1 can (12 ounces) root beer
1 cup strong brewed coffee
1 cup beef broth
2 jalapeno peppers, seeded and chopped
1/4 cup packed brown sugar
3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon baking cocoa
1 teaspoon garlic salt
1 teaspoon cayenne pepper
1 teaspoon Creole seasoning
1 teaspoon dried oregano

Steps:

  • In a Dutch oven, brown steak in oil. Remove and set aside. Add the ground beef, onions and garlic to the pan; cook and stir over medium heat until meat is no longer pink. Drain., Return steak to the pan; stir in the remaining ingredients. Bring to a boil. Reduce heat to low. Simmer, uncovered, for 2 hours or until beef is tender.

1 teaspoon garlic powder

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Transfer to a 5-qt. slow cooker. Remove seeds from the chili peppers if desired; chop peppers. Add to the slow cooker.
