SWEET AND SOUR MARINATED VEGETABLES

Sweet and Sour Marinated Vegetables image

Sometimes I peel eggplants completely, sometimes not at all. Leaving the peel on adds a slightly bitter taste-which I like-but also helps the eggplant hold its shape after you cut it into cubes or slices. If you want the best of both worlds, remove thick stripes of peel from the eggplant, leaving half the peel intact. Caponata can last several days in the refrigerator and is even better after marinating for a day. It is best eaten at room temperature, so remove it from the refrigerator about 2 hours before serving. Caponata is usually served as part of an antipasto assortment, although it makes a wonderful summer contorno, or side dish, to grilled meats or fish.

Yield Makes 6 servings

Number Of Ingredients 16

1 medium red bell pepper, cored, seeded, and cut into 1-inch squares
1/2 cup vegetable oil
1 medium eggplant, stem removed, cut into 1-inch cubes
1/4 cup olive oil
1 cup cubed (1/2-inch) zucchini
1 medium white onion, cut into large cubes (about 1 1/2 cups)
1/2 cup diced celery
1/2 cup golden raisins
1/4 cup pitted green olives
1 tablespoon pine nuts
1 tablespoon tiny capers, drained and rinsed
Salt and pepper to taste
2 fresh tomatoes, peeled, seeded, and diced (page 9)
1/4 cup white vinegar
2 tablespoons sugar
1 tablespoon chopped fresh mint leaves

Steps:

  • Bring a medium saucepan of salted water to a boil. Stir in the red pepper and cook 1 minute. Drain thoroughly.
  • Heat the vegetable oil in a large skillet over medium heat until a cube of eggplant dipped in the oil gives off a lively sizzle. Add the eggplant cubes and fry, stirring and turning them so they cook evenly, until the eggplant is golden brown on all sides. Remove the eggplant with a slotted spoon and drain on a paper towel.
  • Heat the olive oil in a separate large skillet. Add the zucchini and cook, stirring occasionally, until golden, about 5 minutes. Remove with a slotted spoon and set aside. Add the onion to the oil remaining in pan and cook, stirring, 1 minute. Stir in the celery and cook until the vegetables are wilted, about 5 minutes. Stir in the raisins, green olives, pine nuts, capers, and blanched pepper. Season with salt and pepper to taste and continue cooking, stirring, until the vegetables are soft but not mushy, about 10 minutes. Add the diced tomatoes and cook until they are softened, about 5 minutes.
  • While the vegetables are cooking, make the sugar-mint syrup. Bring the vinegar to a boil in a small saucepan. Add the sugar and the mint, reduce the heat to low, and simmer until thick and syrupy, about 5 minutes.
  • Pour the syrup into the skillet of vegetables and cook until the vegetables are very soft and juicy but not broken up-you should be able to see the shape of each vegetable-3 to 4 minutes. Finally, stir in the eggplant and zucchini and cook 1 to 2 minutes. Cool completely before refrigerating.

SWEET AND TANGY MARINADE

Sweet and Tangy Marinade image

This marinade makes enough for up to 6 lbs of ribs, or a whole small chicken. There is no oil in it to add to the fat from the meat. You could also marinate fish or vegetables in it, the acid would probably 'cook' the fish a little. (Be sure to follow safe handling rules and never consume raw marinade that has had uncooked meat or fish in it.) I used this to flavour some pork ribs that I then braised in the oven in a cast iron Dutch oven, sprinkled with a little more 'Brownulated' sugar to make a crunchy crust.

Time 5m

Yield 1 Bag

Number Of Ingredients 8

1 cup soy sauce

crushed red pepper flakes (not more than 1 tablespoon)

Steps:

  • In a large mixing bowl, crush the orange and put all of the pulp with the juice.
  • Mix all of the other ingredients with the orange; blend well.
  • Place meat or items to be marinated into a 1 gallon freezer bag.

GRANDMA'S SWEET AND TANGY BEAN SALAD

Grandma's Sweet and Tangy Bean Salad image

I've never been a huge bean salad fan, due to the textures primarily. However, this bean salad my grandmother and mother passed along is great because it adds a good crunchiness with cucumbers, green peppers, onion, and celery!

SWEET-AND-SPICY GRILLED VEGETABLES WITH BURRATA

Sweet-and-Spicy Grilled Vegetables With Burrata image

A colorful platter of soft, grilled vegetables in a sweet and spicy sauce can be the centerpiece of a light summery meal; just add some creamy cheese for richness and crusty bread to round things out. This recipe is extremely adaptable. You mix and match the vegetables, increasing the amounts of your favorites (or the ones you can get your hands on), and skipping anything you don't have. And if your grill is large enough, you can make several different kinds of vegetables at the same time. Just don't crowd them so they cook evenly.

Provided by Melissa Clark

Categories     vegetables, main course, side dish

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 18

1/4 cup chopped raisins, preferably golden, or dried apricots
2/3 cup white wine vinegar or cider vinegar (or a combination)
2 tablespoons honey, plus more to taste
1 tablespoon fish sauce or colatura (optional)
1/4 teaspoon red-pepper flakes
Pinch of fine sea salt
Extra-virgin olive oil
2 to 3 bell peppers, quartered, stems and seeds removed
1 to 2 zucchini or summer squash, sliced diagonally 1/2-inch thick
1 small eggplant, sliced diagonally 1/2-inch thick
2 to 4 ears yellow corn, shucked
8 ounces mushrooms, trimmed and halved or quartered
1 bunch thick asparagus, ends snapped
8 ounces cherry tomatoes, preferably still on the vine
2 small burrata or fresh mozzarella balls, or 2 cups fresh ricotta
Flaky sea salt and freshly ground black pepper
Basil or mint leaves, for serving
Crusty bread slices

Steps:

  • Make the sauce: Put raisins or apricots in a small heatproof bowl. In a small saucepan, combine vinegar, honey, fish sauce or colatura (if using), red-pepper flakes and salt. Bring to a boil, then let simmer until the mixture reduces slightly, about 3 minutes. Immediately pour over the raisins and let cool. Taste and stir in a little more honey if the sauce is too harsh. (Sauce can be made up to 1 week ahead and stored in the refrigerator.)
  • Prepare the vegetables: Oil the grill grate and light the grill. Have a serving platter at the ready.
  • Grill the peppers, zucchini, eggplant and corn directly on the grate, in batches if necessary, and turning them as needed. Move them around the grate so they cook evenly. Cook until they are lightly charred, watching them carefully, 5 to 12 minutes, depending on the vegetable.
  • To grill the mushrooms and asparagus, place them in a grilling basket if you have one, or put directly on the grill. (Arrange the asparagus perpendicular to the grates so they don't fall through.) Grill, turning as needed, until charred all over, 6 to 10 minutes. Grill the cherry tomatoes, using the vine as a handle if possible, for 1 to 2 minutes, until they start to burst and char slightly. Transfer all the vegetables as they cook directly to the serving platter.
  • Add the cheese to the platter next to the vegetables. Immediately drizzle everything with some of the sauce, stirring it up to get the raisins, and with olive oil. Sprinkle with flaky sea salt and pepper and scatter the herbs generously on top. Serve the extra sauce and the bread alongside for making crostini with some of the vegetables and more of the tangy sauce.

SLAYER'S SWEET, TANGY, AND SPICY KABOBS

Slayer's Sweet, Tangy, and Spicy Kabobs image

I acquired both my nickname and the idea for this recipe while working at an awful franchised restaurant in my college years. These are great for Summertime cookouts at tailgate partys or just for get-togethers. The sauce is fairly versatile and can be used for an array of different meats and applications (I originally used the sauce for chicken wings). For people such as myself who have acid reflux I have indicated some ingredients that can be left out in order to help curb the heartburn.

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 1h50m

Yield 8

Number Of Ingredients 21

2 tablespoons brown sugar
2 tablespoons honey
1 tablespoon lime juice
1 tablespoon lemon juice
3 tablespoons maraschino cherry juice
1 teaspoon garlic powder
½ teaspoon ground ginger
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ cup pineapple juice
¼ cup dry white wine
¼ cup hot pepper sauce (such as Crystal®)
¾ cup reduced-sodium soy sauce
1 (8 ounce) package fresh mushrooms, stems removed
1 small red onion, cut into chunks
1 red bell pepper, cut into 1 inch pieces
½ pint cherry tomatoes
4 skinless, boneless chicken breast halves - cut into 1 inch pieces
16 wooden skewers, soaked in water
16 fresh pineapple chunks
16 maraschino cherries, stemmed

Steps:

  • Make the marinade by whisking the brown sugar, honey, lime juice, lemon juice, maraschino cherry juice, garlic powder, ginger, black pepper, cayenne pepper, pineapple juice, wine, hot pepper sauce, and soy sauce together in a large, non-metallic bowl. Toss the mushrooms, onion, bell pepper, tomatoes, and chicken in the marinade; cover and refrigerate at least 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • On each skewer, thread a piece of chicken, then three of the veggies followed by another piece of chicken then a pineapple slice and one maraschino cherry at the end. Mix and match the vegetables as you assemble the skewers. Cook on the preheated grill until the chicken is no longer pink in the center and the vegetables are tender, about 10 minutes.
