I found this recipe in Dr. Atkins' New Diet Revolution. I have not tried this recipe, but I'm posting it for safe keeping.

Ingredients

4 ounces cream cheese, room temperature
2 eggs, separated
3 teaspoons equivalents sugar substitute

Steps:

Preheat oven to 350.
Cream the cheese with egg yolks until smooth. Add sugar substitute.
Beat egg whites until stiff, but not dry. Fold cheese mixture into stiff whites. Be careful not to break down egg whites.
Grease cookie sheet with butter or ghee. Drop mixture by teaspoonfuls onto cookie sheet and bake in 350 for 10 minutes.

This sandwich recipe has been passed down in my family for years and I even sold my husband on it and it's now his favorite. It's your average grilled cheese but with brown sugar added.

2 slices white bread
2 slices American cheese
2 teaspoons brown sugar
2 teaspoons softened butter

Steps:

Heat a skillet over medium heat. Spread butter onto one side of a piece of bread and place butter side down in the skillet. Place one piece of cheese on top of the bread, then sprinkle with brown sugar. Top with the other slice of cheese. Butter the other slice of bread and place on top with the butter side up. Fry on each side until golden brown, 3 to 5 minutes per side.

1/4 cup butter, melted
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
2 cups shredded cheddar cheese

Steps:

Place popcorn in two 13x9-in. baking pans. Drizzle with melted butter. Combine garlic salt and onion salt; sprinkle over popcorn. Top with cheese. Bake at 300° for 5-10 minutes. Serve immediately.
