SWEET CHERRY VINAIGRETTE | CHERRY BALSAMIC VINAIGRETTE
This bright, healthy, sweet cherry vinaigrette will make your salads pop with color and taste and it only takes a few minutes to make! It tastes amazing on top of all your favorite greens from arugula to kale to romaine, especially when paired with sliced fruit. This amazing homemade vinaigrette is naturally vegan, plant based, no added sugars, gluten free, dairy free, nut free, and an all around healthy salad dressing.

Steps:
- Let the sweet cherries defrost on the counter until softened a bit. It doesn't have to be fully defrosted but it shouldn't be rock hard either. If you want to speed up the process just pop it in the microwave until softened.
- Blend all the ingredients until smooth.

- In a medium saucepan on medium high heat add vinegar, sugar and garlic till boiling then simmer till reduced by half. Add preserves and cook 1 minute. Remove from heat and cool to room temperature. Whisk in red wine vinegar and then canola oil. Season with salt & pepper.

- If using fresh cherries, remove the stems and pits. If using frozen, they should already be free of stems and pits. Place pitted cherries in small sauce pan and heat over medium until cherries are almost to a boil and bursting; this takes about 5-8 minutes, depending on fresh or frozen (frozen actually takes less time!). Remove from heat and let cool for 5 minutes.
- Place the slightly cooled cherries and remaining ingredients, except water, inside a mini food processor*, and blend until smooth. Add 1 Tbsp of water and blend for another 15-20 seconds.
- Serve with your favorite salad or use as a dip for veggies! Store in an airtight container for up to one week in the fridge.
